In food processing, polycyclic aromatic hydrocarbons(PAHs) can be generated during heat treatment,and the PAHs in seasoned-roasted (SR) laver can bereduced by checking points during manufacturing. Benzo(a) anthracene, chrysene, benzo (b) fluoranthene, andbenzo (a) pyrene have been identified in SR laver via GC/MS. We confirmed that in practice, the PAHs in SR laverform from the mixed oil (57%) and roasting process (43%). To mitigate the formation of PAHs, we used a modelsystem to change the mixing ratio of oil, roasting temperature,and time. A significant reduction (35%) wasobserved in the PAH level as the perilla oil was removedfrom the mixed oil composition and roasting continued at350 C for 10 s. These results show that the composition ofthe mixing oil and the parameters of the heat treatment arecrucial factors that contribute to the formation of PAHs inroasted laver.
신생아의 혈장 Atrial Natriuretic Peptide치에 관한 연구

The authors studied on plasma atrial natriuretic peptide ( ANP ) concentration of umbilical arteries, umbilical veins and peripheral veins of neonates aged 2 days in 33 healthy neonates delivered in Korea University Medical Center from April 1989 to July 1989 and also studied that of peripheral veins of 11 healthy neonates aged 28 days who had visited department of pediatrics. The atrial natriuretic peptide was measured by the method of radioimmunoassay. (research and diagnostic antibodies, Berkeley, CA USA) The results obtained were as follows : 1. Mean plasma ANP values of umbilical arteries, umbilical veins and peripheral veins of neonates aged 2 days born by vaginal delivery were 139±6 3 pg /ml, 74±30 pg /ml and 213±59 pg /ml, respectively. Mean plasma ANP values of umbilical arteries, umbilical veins and peripheral veins of neonates aged 2 days born by cesarean section were 129±49 pg/ml, 80±22 pg/ml and 205±44 pg/ml, respectively. Mean plasma ANP values of neonates aged 28 days were 61k26 pg /ml. 2. Mean plasma ANP values of umbilical arterial blood was higher than that of umbilical venous blood, both in neonates born by vaginal delivery and in those delivered by cesarean section (P<0.05). 3. Mean plasma ANP values of peripheral venous blood of neonates aged 2 days was higher than that of umbilical venous blood, both in neonates born by vaginal delivery and in those delivered by cesarean section(P<0.05). 4. In comparison of mean plasma ANP values of neonates aged 2 days and that of neonates aged 28 days, higher values were observed in neonates aged 2 days(P<0.05). 5. There was no statistical difference between mean plasma ANP value of neonates born by vaginal delivery and that of neonates delivered by cesarean section.
늙은 호박(Cucurbita moschata D.) 가루 첨가량에 따른 호박편의 품질특성 및 저장성

The objective of this study was to investigate the effects of different amounts of pumpkin powder on the quality characteristics of hobakpyeon using physicochemical and sensory properties, as well as on its retrogradation rate during storage. As the amount of pumpkin powder increased, the following effects on the quality characteristics were observed: moisture and amylose contents decreased while protein content increased (p<0.05), and in vitro protein digestibility (IVPD) decreased (p<0.05). Levels of slowly digestible starch and resistant starch fractions increased, while the content of rapidly digestible starch decreased. The starch digestion index and rapidly available glucose content also decreased. Among the physical properties, the L-value decreased while the b-value increased (p<0.05). Texture profile analysis revealed that all textural properties except adhesiveness decreased, and presented significant differences in hardness and chewiness (p<0.05). Sensory properties such as color, flavor, and sweetness increased while others such as wetness and chewiness decreased (p<0.05). Effects on the physicochemical properties during refrigerated storage were also compared between the control and 9% hobakpyeon (9%HP). According to the results, moisture content gradually decreased in the 9%HP compared to the control. Amylose content significantly increased in 9%HP whereas no significant changes were observed in the control. In both types of hobakpyeon, IVSD decreased significantly, showing higher values in 9%HP, whereas mechanical hardness increased, showing lower values in 9%HP. The L-value decreased significantly in the 9%HP whereas no significant changes were observed in the control. In conclusion, the above results suggest that hobakpyeon with low IVSD may be obtained by the addition of 9% pumpkin powder, and also showed that pumpkin powder delayed the rate of retrogradation in 9%HP during storage.
Brain morphology according to age, sex, and handedness

In this article, we review the differences of the brain morphology according to age, sex, and handedness. Age is a well-known factor affecting brain morphology. With aging, progressive reduction of brain volume is driven. Sex also has great effects on brain morphology. Although there are some reports that the differences of brain morphology may originate from the differences of weight between the 2 sexes, studies have demonstrated that there are regional differences even after the correction for weight. Handedness has long been regarded as a behavioral marker of functional asymmetry. Although there have been debates about the effect of handedness on brain morphology, previous well-established studies suggest there are differences in some regions according to handedness. Even with the studies done so far, normal brain morphology is not fully understood. Therefore, studies specific for the each ethnic group and standardized methods are needed to establish a more reliable database of healthy subjects’ brain morphology.
