        쌀가루의 종류를 달리하여 제조한 머핀의 품질 특성

        The quality characteristics of muffins with different types of rice flour, such as soft flour (CON), soft rice flour (SRF), floury rice flour (FRF), and rice flour (RF) were assessed by using Image J program, which includes their particle size analysis, moisture content, pH, color, specific volume, baking loss rate, texture. (D[4, 3]) is weighted mean diameter, which is directly obtained in particle size measurements showed large values in the order of rice flour, floury rice flour, soft rice flour, and soft flour. The moisture content was high in the CON and SRF groups with small particle sizes. There was no significant difference in pH, L and b value. The a value was significantly low only in the RF group with large particle size. The smaller the particle size, the higher the specific volume and baking loss rate. Image J showed that the number of pores decreased when fewer smaller particles were the powder, but the pores were larger. Among the rice flours, the SRF group, excluding the CON group, scored high in all the acceptability elements. The results from this study can be used as basic data that can contribute to research on various rice-processed foods.

        도토리(Quercus serrata Thunb)와 상수리(Quercus acutissima Carruther) 추출물의 항산화와 항당뇨 활성 연구

        This study was conducted to analyze the antioxidant and antidiabetic activities of acorns according to the types of Quercus serrata Thunb (QST) and Q. acutissima Carruther (QAC). The total polyphenol contents of the extracts from QST and QAC were 220.59 and 320.96 mg GAE/g, respectively. The content of total polyphenol of QAC was higher than that of QAC (p<0.001). DPPH (2,2 Diphenyl 1 picrylhydrazyl) radical scavenging activity, reducing power and superoxide dismutase (SOD)-like activity were increased in a concentration-dependent manner by both acorn extracts, and QAC showed high activity in all antioxidant experiments (p<0.05). The inhibitory activities of α-glucosidase and α-amylase were also increased in a concentration-dependent manner, and QAC showed higher inhibitory activity than QST (p<0.05). Our study indicates that QST and QAC are functional food materials with high antioxidant and antidiabetic activities. In addition, QAC has a higher physiological activity than QST.

      • 청각장애 산모의 태아 초음파 심장박동 촉각 변환 시스템 개발

        아기의 심장 박동 소리를 듣지 못하는 청각 장애 부모를 위한 태아 초음파 심장박동 촉각 변환 시스템을 개발하고자 하였다. 본 시스템은 아기의 심장박동 소리를 USB 마이크를 이용하여 소릿값을 입력받아 이에 대응하는 값을 진동 모터의 진동 출력 세기와 LED 밝기의 세기로 출력시키도록 하였다. 아기의 심장박동 느낌을 진동으로 표현해 내기 위해 진동의 샘플링 주기를 구체적인 수치로 조절하였고 산모에 따라 진동의 세기와 주변잡음 제거를 할 수 있도록 조절하는 가변저항 2개를 연결하였다. 그 결과 태아 초음파 심장박동 촉각 변환 시스템을 성공적으로 개발하였으며 장치 체험자들로부터 총 평균 4.63점으로 높은 만족도를 얻었다. 개발 제품은 청각장애 산모들의 모성애를 충족시키고 아기의 심장박동을 느낌으로써 아기의 존재를 느낄 수 있을 것이며, 산부인과의 초음파 영상진단의 확장 신기술로 활용할 수 있을 것으로 기대된다.

        The purpose of this study is to develop a new environmental policy paradigm for green economy and sustainable development and to develop major policy tasks in each field based on the analysis of internal and external environmental changes and current and future environmental issues. Changes in population structure such as aging population and low fertility, personalization and localization, urbanization and depletion of resources, international power movement and New Normal, new technologies such as Big Data in accordance with the 4th Industrial Revolution are demanding fundamental change of development paradigm such as green economy for development. Along with such changes, new changes in environmental administration and governance systems are required, including integrated response systems for cross cutting across ministries such as fine dust, biocide, climate change, and environmental disaster. In addition, it is necessary to effectively reorganize the environmental finance and tax system to solve the environmental finance pressure due to the rapid increase in public demand for health, safety and environmental services. As a major policy agenda in the field of environment, it is necessary to realize the environmental rights of the people, to coordinate and restructure the environmental governance, to establish sustainable smart-city environment management, to establish a system to cope with global fine dust, improvement of environment of 4 rivers and unification of water management, and response to integrated climate change - establishment of environmental disaster response system. The following are specific policy tasks for each sector to realize this policy agenda. Major policy tasks in the atmosphere sector have been proposed such as integrated management of fine dust, enhancement of effectiveness of fine dust management in transport sector, and improvement of management system in atmospheric environment information. Second, major policy tasks in the field of water environment are improvement of sustainability in water infrastructure, improvement of water cycle, development of water industry. Third, in the field of natural resources conservation, main streaming nature conservation and wise use of natural benefits have been proposed as major policy tasks. Fourth, in the field of resource recycling, realization of landfill zeroing through resource virtuous cycle, management of cyclic resource whole cycle and improvement of resource efficiency, proper management of waste due to complex disasters and nuclear dismantlement, and waste resource management for coping with future social change are major policy tasks . The main policy tasks for environmental governance will be to consider integration between relevant sectors. Regarding the rationalization of the distribution of the central-local environmental affairs, it can be achieved through the introduction of a differential decentralization system and strengthening cooperation between central and local governments. In order to reorganize and stabilize the financial system of the environment sector, two ways have been largely derived. First, the following two improvement measures were proposed in the traffic·energy and environmental tax sectors. The first is to impose the carbon tax, energy tax and environmental tax on all energy sources without extending the sunset. The second is to extend the deadline of the traffic, energy and environmental tax law and coordinate the price, and annual expenditure ratio in relative price of oil type. Next, in the charge of the Ministry of Environment, the measures to consolidate the transportation energy environment tax after the abolition of the charge, or to transfer the local area were suggested.

        원주의 첨가량을 달리한 증편의 품질 특성

        In this study, by replacing makgeolli in jeungpyeon manufacturing with won-ju (raw makgeolli) and standardizing the mixing ratio, it was intended to provide information that could suit consumers' tastes and utilize the added value of won-ju (R10, R20, R30, R40 means amounts of raw makgeolli). Raw makgeolli content did not significantly differ in moisture content. pH, L value, hardness and gumminess decreased with increasing addition of raw makgeolli, while the b value, adhesiveness, springiness, cohesiveness, and chewiness were increased. The specific volume was the highest following method R30, and the expansion rate was the lowest following method R40. The observation with Image J showed that as the amount of raw makgeolli increased, the pore size became larger, and the number of pores decreased. As for the sensory evaluation and results of jeungpyeon, the R30 group showed the highest score in all items(flavor, appearance, texture, taste, overall acceptability). Therefore, this study suggests that Jueng-pyun produced with the R30 mixing ratio has excellent quality and sensory characteristics. Furthermore, the results can be used as foundation data for the standardization of won-ju jeungpyeon production.

        전처리 조건에 따른 당근의 품질특성과 항산화 활성

        This study was undertaken to examine the quality characteristics of nonblanched carrots (CON) and carrots blanched indistilled water, 2% NaCl water and 2% citric acid at 100oC for 3 minutes. This moisture contents of CON was the highestat 85.91%, whereas NT had the lowest moisture at 83.92% (p<0.01). Compared to CON values the L values ofpretreatment groups were decreased whereas the b values were increased (p<0.001) A comparison of true retention (TR),revealed that NT had the highest TPC TR 101.04% and TFC TR 91.59% (p<0.001). β-Carotene contents were determinedto be higher in NT (1.98 mg/100 g) and CT (1.94 mg/100 g) than in other groups, with highest levels obtained in NT(106.64%) (p<0.001). Examination of the DPPH and ABTS+ radical scavenging activities revealed that the NT group hadmaximum scavenging activity. The total bacterial count was determined to be 3.37 log CFU/g in the CON, whereas nomicroorganisms were observed in all the pretreatment groups. Our study indicates that blanching in 2% NaCl water is themost desirable in order to increase the biochemical content and nutrient preservation rate of carrots, and to inhibit thegrowth of microorganisms.`

        Quality characteristics and antioxidant activity of meringue Jeung-pyun with different amounts of cacao bean husk

        In this study, we aimed to investigate the quality characteristics, antioxidant activity, and sensory traits of meringue Jeung-pyun with different amounts of cacao bean husk powder. Based on our analyses, high cacao bean husk content resulted in an increase in certain Jeung-pyun qualities, such as the L values, b values, hardness, gumminess, and number of pores, whereas the moisture content, pH, pore size, adhesiveness, cohesiveness, and chewiness significantly decreased. Electronic tongue analysis showed that the intensity of sourness, saltiness, and umami increased with the amount of cacao bean husk added. For the sensory characteristics, C6 demonstrated the highest ranking for all test items. Furthermore, it was found that the addition of cacao bean husks increased the antioxidant activity of the Jeung-pyun (p < 0.001). Therefore, these results suggest that Jeung-pyun produced with a mixing ratio of C6 has excellent qualities, antioxidant activities, and sensory characteristics.

        막걸리의 첨가량을 달리한 개량 증편의 품질 특성

        본 연구는 수분 재료의 양을 줄여 성형이 용이하도록 한 개량 증편의 우수한 최적의 배합비율을 확인하기 위해 막걸리의 첨가량을 달리한 증편을 제조하고 품질 특성을 확인하였다. 품질 특성은 수분 함량, pH, 색도, 비체적 및 팽창률, 단면 및 기공 관찰을 실시하였고 기호도 검사를 진행하였다. 수분 함량은 막걸리 첨가량과 관계없이 각 군간 유의적인 차이를 보이지 않았다. pH는 막걸리 첨가량이 증가할수록 낮아졌고 발효가 진행될수록 감소하였으며, 증자과정을 거친 후에는 다시 증가하는 경향을 보였다. 색도는 막걸리 첨가량이 증가할수록 L값과 a값은 감소하고 b값은 증가하였다. 팽창률과 비체적은 막걸리와 물의 비율이 1:1까지는 증가하였으나 막걸리 비율이 더 많아지는 M120에서는 다시 감소하였다. 단면 및 기공 관찰 시 막걸리 첨가량이 증가하면 기공의 크기가 커지고 기공의 수가 감소하였으며, 기공의 크기와 조밀함은 조직감에 영향을 주는 것으로 나타났다. 조직감 측정 시 막걸리 첨가량이 증가함에 따라 경도와 부착성은 감소하였으며 씹힘성은 증가하였다. 기호도 검사 결과 막걸리와 물의 첨가비율이 동일한 M90의 기호도가 가장 높았으며 막걸리의 비율이 더 많은 M120의 경우 기호도가 낮아지는 결과를 보였다. 결과적으로 막걸리와 물을 동량으로 하여 증편 제조 시 기공의 형성이 적당하여 품질 특성과 기호도 면에서 가장 우수하였으며, 향후 다양한 부재료를 첨가하여 기능성 향상을 위한 후속 연구가 필요할 것으로 보인다.

        블랜칭 처리가 비트의 품질특성과 항산화 활성에 미치는 영향

        This study investigated quality characteristics and antioxidant activity of beetroots after blanching. Beetroots wereblanched in distilled water, 2% NaCl water, and 2% citric acid water at 100°C for 3 minutes (the blanched group). Themoisture content was highest in the control (CON) at 91.30% (p<0.05), and cooking loss was lowest in the water-blanchedbeetroot (BW) at 5.39% (p<0.01). Chromaticity decreased after blanching compared to CON (p<0.001). Total polyphenolcontents (TPC) and total flavonoid contents (TFC) decreased after blanching, and as a result of comparing the True retention(TR) of the blanching treatment group, BW had the highest with TPC TR 91.22% and TFC TR 70.51%. DPPH and ABTS+radical scavenging activities were highest in the CON, and in the blanching group BW was highest scavenging activity. Thetotal number of microorganisms in the CON group was 2.97 log CFU/g, whereas no microorganisms were detected in theblanched groups. Therefore, this study, blanching in water without additives is the most appropriate method for preservingphysiologically active substances and nutrients in beetroots and inhibiting microbial growth.

        계획되지 않은 소아응급실 재방문: 환자의 임상적 특성과 응급실 과밀화와의 관련성

        Purpose: Revisit to the pediatric emergency department(ED) in the short-term period may be due to inadequateevaluation during the previous visit, which may indicate aproblem with quality in emergency care. The aims of thisstudy are to analyze the characteristics of patients whorevisited the pediatric ED within 48 hours after dischargeand to evaluate the relation between overcrowding andrevisit rates. Methods: Retrospectively, we reviewed the charts ofpatients who returned within 48 hours after visiting a PEDduring a one-year period between June 1st, 2011 andDecember 31st, 2011. We determined the rate of return visitsand review the characteristics of patients, emergency severityindex (ESI) level at visits, cause of revisit, diagnosis, andcrowding degree of the pediatric ED at the patient’s first visit. Results: A total of 16,688 patients visited the pediatric EDand 13,716 patients were discharged from the PED duringthe period. Of these discharged patients, 534 patients revisitedinevitably within 48 hours. The most common cause ofrevisit was relapse or worsened symptoms (70.0%). Therewas no significant difference in sex, severity of patient, andcrowding degree of the pediatric ED at the first visit, however,patients who revisited were younger than those who didnot (p=0.005). The ESI level at the return visit was significantlyhigher irrespective of admission after revisit(p<0.001). In diagnosis grouping, patients with gastrointestinaldiseases, respiratory diseases, and neoplastic diseasesshowed a higher rate of revisit. Conclusion: Approximately 4% of our pediatric ED visitswere for children returning within 48 hours. Patients whorevisited were younger and patients with gastrointestinal diseases,neoplastic diseases, and respiratory diseases weremore likely to revisit. Careful explanation of the possibility ofworsened symptoms is necessary for these patients.
