Lactuca (L.) indica is an edible wild vegetable that has been used in Asia as a folk medicine and hasanti-inflammatory and antibacterial properties. This study was conducted to compare and analyze polyphenolic contents,antioxidant, and anti-inflammatory activities of wild and cultivated L. indica. Wild L. indica (WL) was found tocontain higher levels of polyphenols and flavonoids than the cultivated L. indica (CL). Various phenolic compoundswere detected in the leaves and roots of the WL, whereas only gallic acid was found in the roots of the CL. Inaddition, the WL leaf extract had greater DPPH and ABTS radical scavenging abilities and reducing power than theCL leaf extract. Analysis of anti-inflammatory activities showed that the WL leaf extract had a higher activity thanthe CL leaf extract, although the CL root extract inhibited nitric oxide (NO) production to a greater extent than theWL root extract. The results of this study indicate the WL has more potent nutraceutical effects than the CL, andthat the WL could be used as a source for creating novel breeds of cultivated plants with enhanced nutraceuticalproperties.

To investigate how the shouting types influence the capacity of anaerobic exercise, and lactic acid in this study, I carried out the wingate test with 17 male students who have weight training experiences. The shouting includes four types; shouting of measuring person, measuring person+subject, subject and no shouting. The results of this test are as followed. 1. The changes of the capacity of anaerobic exercise In the results of analysis of the muscle power by shouting types, A and B group have significantly higher maximum power, amount of total work and average power than D group. 2. The changes of the lactic acid When examining the results of lactic acid analysis according to shouting types, the results after the exercise are significantly higher than before the exercise. And also, the results of the recovery of 5, 10 and 15minutes are significantly higher than after the exercise. Therefore, when measuring the anaerobic exercise capacity, we could think that the environmental factors for the maximum muscular power are important, because the shouting types affect muscular power. And, we can consider that the methods dsof reducing the errors are to compose the measuring conditions through the mechanical voice, or to compose the shouting patterns as identically as possible. And also, it is considered that because the shouting and individual's performance are closely linked, the shouting is helpful to improve the ability of athletic performance, shouting could help enhance the performance during exercise.

Six types of mixed cereals powder were prepared using different mixing ratios of barley, proso millet, sorghum, and adlay, and their nutritional components and functionalities were analyzed. The mixed cereals powders contained high levels of crude protein. The free amino acid and mineral contents of Sample E were the highest among all the samples. Fructose, glucose, sucrose, and maltose were detected as the four major free sugars in all the mixed cereals powders, and Sample D had the highest amount of reducing sugar among all the samples. The total polyphenol and total flavonoid contents of Sample F were significantly higher than those of the other samples. Sample C showed the highest level of DPPH radical scavenging activity and reducing power. As for the ABTS radical scavenging activity, the IC50 of Sample D was the lowest among all the samples, but did not significantly differ from that of Sample C. Therefore, we suggest 2:2:1:1 (in Sample D) as the best mixing ratio of barley, proso millet, sorghum, and adlay to produce a mixed cereals powder with excellent nutritional value and antioxidant activities.

In this study, we aimed to determine the potentialfunctional properties and biological activities of thehydrolysates of perilla seed meal (PSM), which is a byproductof perilla seed oil extraction. PSM protein washydrolyzed independently by using five proteases, and theirfunctional and biological properties were analyzed. PSMprotein hydrolysate exhibited high solubility at most of thetested pH values, and the trypsin-treated hydrolysateexhibited the highest water and oil absorption capacity. The neutrase-treated hydrolysate was most effective inscavenging the 1,1-diphenyl-2-picrylhydrazine radicals,whereas the pepsin-treated hydrolysate showed the highestangiotensin I-converting enzyme inhibitory effect, andanti-inflammatory activity. Trypsin-treated hydrolysateexhibited the highest scavenging activity against of 2,20-azinobis-(3-ethylbenzothiazoline-6-sulfonic acid radicalswith the IC50 of 109.72 lg/mL. The results of the presentstudy suggest that the type of protease used for the treatmentsignificantly influences the functional properties andbiological activities of the resulting PSM proteinhydrolysates.
대추 추출물이 첨가된 흑도라지 사과주스의 품질 특성 및 항산화 활성

본 연구에서는 기능성이 우수한 도라지를 이용하여 흑도라지를 제조하였으며, 흑도라지 추출물, 사과즙, 대추추출물의 혼합비율을 달리하여 흑도라지 사과주스를 제조하고 각각의 품질특성과 기능성을 분석하였다. 흑도라지 사과주스의 pH는 3.90∼4.15이었으며, 산도는 1.2에서 1.5 사이를 나타내었다. 당도를 측정한 결과 흑도라지 사과주스 E가 가장 높은 값(9.33 °Brix)을 나타내었으며, 환원당 함량의 경우 흑도라지 사과주스 E가 85.05 mg/mL로 가장 높은 함량을 나타내었고, 흑도라지 사과주스 B가 41.23 mg/mL로 가장 낮은 함량을 보였다. 당산비 수치의 경우 당도와 환원당 함량이 가장 높은 흑도라지 사과주스 E가 6.98%로 가장 높은 수치를 보였다. 색도는 명도와 황색도는 흑도라지 사과주스 E가 가장 높았으며 적색도는 흑도라지 사과주스 C가 가장 높았다. 관능적 특성을 측정한 결과 향미를 제외한 모든 항목에서 흑도라지 사과주스 C가 가장 우수하게 나타났다. 총 폴리페놀 함량은 흑도라지 사과주스 D가 가장 높은 폴리페놀 함량(706 ㎍/mL)과 항산화 활성을 보였으나 흑도라지 사과주스 C와 항산화 활성에 유의적인 차이는 없었다. 따라서 흑도라지 사과주스 C가 관능적 특성 및 항산화 활성이 우수하여, 흑도라지 사과주스 제조를 위해 흑도라지 추출물, 사과주스, 대추추출물을 2:4:1의 비율로 혼합하는 것이 가장 바람직 할 것으로 판단된다.
