양파(Allium cepa L.) 첨가 청국장의 제조 및 항산화능 평가

양파를 첨가한 청국장 제조 가능성을 평가하고, 제조된 시료들을 대상으로 항산화능을 비교하였다. 먼저 양파의 적정 첨가량을 판단하기 위해 노랑콩과 검정콩 각각의 중량을 기준으로 0, 5, 10, 20, 30%가 되도록 양파를 첨가하여 청국장을 제조한 후 관능평가를 실시하였다. 그 결과, 노랑콩과 검정콩 청국장 모두 20% 양파 첨가 청국장이 높은 기호도를 나타냈다. 그래서 20%의 양파를 첨가하여 제조한 청국장을 대상으로 특정성분의 함량 및 항산화능을 비교ㆍ평가하였다. 그 결과, 양파를 첨가하여 제조한 청국장이 첨가하지 않은 청국장보다 유의하게 더 높은 총 페놀성 및 flavonoid 함량을 나타냈다. 그리고 DPPH radical- scavenging 활성평가에 있어서도 양파를 첨가하여 제조한 청국장이 첨가하지 않고 제조한 청국장보다 더 높은 radical-scavenging 활성을 나타냈다. 또 쥐 혈장 산화에 따른 CE-OOH 생성 억제능 평가에 있어서도 양파 첨가 청국장 추출물을 투여한 쥐혈장이 양파를 첨가하지 않은 청국장 추출물을 투여한 쥐 혈장에 비해 더 높은 산화 억제능을 나타냈다. 이상의 결과들은 양파에 다량 함유된 quercetin을 포함한 flavonoid들과 발효과정 중 생성되는 다양한 페놀성 화합물들에 의한 효과라 판단된다. 본 연구결과가 국산 양파의 가공시장확대 및 청국장 소비의 저변확대를 위한 기초자료로 활용되길 기대한다.
적조생물의 성장단계에 따른 세포 내·외 Reactive Oxygen Species (ROS) 변화

Reactive oxygen species (ROS) generated by harmful algal blooms (HABs) exert detrimental effects on aquaculture systems. Fish gill cells deteriorate upon exposure to HABs, suggesting that internally generated ROS in HABs influences the external environment. Therefore, we investigated the internal and external changes in ROS concentrations during growth using fluorescence staining of four representative HABs: Alexandrium affine, Chattonella marina, Karenia mikimotoi, and Margalefidinium polykrikoides. The concentrations of H2O2 and O2 - produced by A. affine were low; H2O2 from M. polykrikoides was primarily detected internally throughout the experiments, and O2 - was not detected. High H2O2 and O2 - concentrations were observed in K. mikimotoi during the death phase, with weak external O2 - concentrations. Regarding C. marina, which produces large amounts of ROS, H2O2 was observed internally during the exponential phase, whereas weak O2 - concentrations were measured externally in the stationary phases. Collectively, our results highlight that ROS concentrations and internal/external distributions are functions of HABs and growth stage. These differences indicate the potential allelopathic mechanisms of proliferating HABs and suggest a possible impact of ROS on aquaculture organisms.

The purpose of this study was to analyze staff satisfaction with staff foodservice in hospitals. The study compared the hospital staff's expectations and perceptions of foodservice. The quality satisfaction values were indicated as the differences between their expectations and perceptions. The subjects were 643 hospital staff in 11 Daegu ' Kyungpook hospitals. Written questionnaires were used to collect the data. The completion rate was 76.9%. There were 17 attributes for foodservice quality, which were divided by factor analysis into four main quality factors; sensory, nutrition, sanitation and service. The high expectation and low perception items on the expectation and perception grid were: seasoning of the meals, taste of the meals, variety of the menu, nutritional considerations, cleanliness of the dishes, and prompt handling of meal complaints. On all the attributes measured, expectations were higher than perceptions. The quality satisfaction values were all negative. There were highly significant(p<0.001) correlations between quality satisfaction and variety of the menu(r=0.783), nutritional considerations(r=0.770), prompt dealing with meal complaints(r=0.762), cleanliness of meals(r=0.689), and courtesy of employees (r=0.653). There is a need to improve taste, menu variety, nutrition, sanitation, speed of handling meal complaints, and courtesy.

Citrus platymamma (Byeonggyul) of the family Rutacease is one of the most important genetic resources of Korean Citrus. To characterize the chloroplast (cp) genetic makeup of this species, the cp genome was sequenced by both Sanger and next generation sequencing (NGS) methods. The characterized cp genome is 160,121 bp in size: the large single copy (LSC) region is 87,732 bp, the inverted repeat (IR) is 26,998 bp, and the small single copy (SSC) region is 18,393 bp. The cp genome contains 114 genes and 21 introns, including 80 protein-coding genes, four RNA genes, 30 tRNA genes, 19 group II introns, and one group I intron. Based on phylogenetic analysis with six known cp genomes from the Sapindales order, to which the Rutaceae belongs, the cp genome of C. platymamma is closest to that of Citrus sinensis. When directly comparing the cp genomes of C. platymamma and C. sinenesis, we detected size variation in the psbC and rps4 genes, four SNPs, and eight 1-bp simple sequence repeats (SSRs). Additionally, we found that the cp genomic structures of C. platymamma and C. sinensis are identical in regards to the junction sequences of LSC-IRs and SSC-IRs, and provide evidence that the junction sequences of the SSC-IRs originated from the common ancestor of C. platymamma, C. sinensis, and C. aurantifolia. Further study of other species will provide enhanced understanding of cp genome evolution in the Citrus genus.

The most researches developing pattern of compression style sportswear were targeted at the live model that has muscular body build. The purpose of this study was developing a method for classifying men’s lower body types in terms of muscular body build. The 3D human body scan data and body measurements of 30s of Size Korea were analyzed. The subjects (n=203) were men between the ages of 30 and 39 years. Men’s muscular body build was classified with two key dimensions, thigh girth and calf girth. The subjects were divided into four groups. From each group, average subjects (n=42) whose height and weight were close to the mean value (mean±1/2 S.D.) were selected. 42 subjects were divided up as four groups. Group Ⅰ (n=7) was thigh and calf developed body type. Group Ⅱ (n=9) was thigh developed body type. Group Ⅲ (n=11) was calf developed body type. Group Ⅳ (n=15) was thigh and calf undeveloped body type. Four groups had distinct different at widths (n=4), depths (n=4), and girths (n=9) dimensions. The results showed that the muscular men in their 30s could be defined by thigh and calf girths. The thigh developed muscular men had thigh girth over 60cm and the calf developed muscular men had calf girth over 38cm. From each group one representative was selected by 3D body scan figure.
The enhancement of thermal properties of phosphor ceramic plate as sintering aids

Cerium doped Lu3Al5O12 phosphor ceramic plate was fabricated by solid state reaction and electric furnace reactive sinteringmethod using commercial Lu2O3, α-Al2O3, and CeO2 powders as the starting materials, AlN or Al2O3 were used as sinteringadditives. When Al2O3 was used as sintering aid, the optimum dosage was 2 wt%. Although plate optical characteristics wasslightly reduced and the difference was very small, whereas the thermal properties exhibited appreciable increase of more than5%. The excellent feature of using compound additives is to make the intensified liquid sintering begin at a lower temperaturesin electric furnace, promoting the densification rate and resulting in uncontaminated crystalline grains.

Diabetes-related complications in human and veterinary medicine have been shown to be associated with hyperglycemia-induced inflammation. It has been recently suggested that the onset of insulin resistance may be caused by over-production of inflammatory cytokines such as tumor necrosis factor (TNF)-α from immune cells. Conjugated linoleic acid (CLA) regulates inflammatory response through modulation of TNF-α expression. The objective of this study was to examine the effect of CLA on nuclear factor kappaB (NF-κB) p65 binding activity, inhibitory kappaB (IκB)-α expression, and TNF-α production from high glucose-treated RAW 264.7 cells. CLA was added to RAW cells that had been previously cultured with low or high concentration of glucose. The levels of TNF-α protein in the culture supernatant of RAW cells exposed to high concentrations of glucose were higher than those of cells exposed to low concentrations of glucose. The treatment with the high concentration of glucose in RAW cells increased levels of NF-κB p65 binding activity and the decreased IκB-α expression when compared with those of low glucose. The treatments in combination with CLA and glucose (low and high) glucose in RAW cells increased TNF-α production when compared with that glucose alone. These treatments with CLA increased TNF-α production in high glucosetreated RAW cells than those with low glucose. These treatments of CLA also showed higher NF-κB p65 binding activity and lower IκB-α expression in high glucose than those in low glucose condition. This suggests that CLA can increase NF-κB p65 binding activity and TNF-α production from high glucose-treated RAW 264.7 cells and is likely to promote hyperglycemia-induced inflammation.
