        오디용 뽕나무 시설재배 수형별 뽕잎생산량과 누에 사육량 분석

        This study was considered chances of additional income, if farmers raised silkworms in unused mulberry leaves, after harvesting mulberry, investigated yields of mulberry leaves in vinyl-house and optimal amount in raised silkworms, First, the results was investigated productions of mulberry leaves in the mulberry tree-shape of vinyl-house, T-shape harvested 7.07 kg, Y-shape was 6.55 kg, in comparison with convention of it was harvested 4.75 kg mulberry leaves/1 mulberry tree, was harvested 49%, 38% more each. Also, yields of mulberry leaves was used 302 kg when was raised 1box of silkworms in the mulberry tree-shape of vinyl-house. In other hand, yields of raising silkworms was analysed in the mulberry tree-shapes of vinyl-house, mulberry leaves of 1,000 ㎡ vinyl-house mulberry tree was raised average of 3.74 boxs silkworms, in the concrete conventional-shape was 3.24 boxs, T-shape did 4.17 boxs and Y-shape was 3.83 boxs, Consequently, if the farmers of 1,000 ㎡ vinyl-house mulberry tree raised silkworms with unused mulberry leaves, could get 1~1.2 million won additionally.

        연구논문 : 뽕잎 항산화능 및 뽕잎가루 머핀의 품질특성

        The function of mulberry leaves and the quality of muffins including mulberry leaves were examined. The electron donating ability of both a water and ethanol extract was 40% for both at 100 ppm, 62 and 72% at 500 ppm, and 77 and 83% at 1,000 ppm respectively. These experiments showed good oxidized substance activity. The SOD-like ability of the water and ethanol extracts at 1,000, 500, and 300 ppm was 49% and 55%, 33% and 39%, and 28% and 33% respectively. These results show that the ethanol extract had higher SOD-like ability than that of the water extract. The nitrite scavenging abilities of 1,000 ppm of the mulberry leaf water extract and ethanol extract at pHs of 1.2 and 3.0 were 40.5 and 47%, and 20 and 22% respectively. The Hunter lightness value tended to be lower as the amount of added mulberry leaves increased compared to the contrast set, so the lightness level with a 7% addition was the lowest. The contrast set was the highest for redness and added mulberry leaves tended to decrease redness at 3% but tended to increase it again with additions >3%. The b-value (yellowness) showed a similar tendency as redness. Adding Mulberry leaves tended to decrease the contrast set to the lowest level, then values increased slowly to a peak at 5% added mulberry leaf and then decreased thereafter. Strength and hardness were less after increasing added mulberry leaf. Cohesiveness, springiness, gumminess and brittleness, decreased at up to 5% added mulberry leaves but the 7% addition showed the same level as the contrast set. The mulberry leaves muffins were less preferred to the contrast set in appearance and color. However, the mulberry leaf muffins were preferred to the contrast set in taste and flavor but the result was not significant. Overall the quality of the muffins with 3% added mulberry leaves was preferred over the 1% added mulberry leaf muffins.

      • 산뽕잎 및 은행잎 차의 항산화 활성과 플라보노이드 함량

        산뽕잎, 은행잎 및 혼합차의 침출시간에 따른 항산화 활성을 DPPH 라디칼 소거 활성과 FRAP 방법으로 조사하였으며, 총 페놀 화합물의 함량은 Folin-Ciocalteu법, 플라보노이드 함량은 HPLC로 분석하였다. 침출시간에 따라서 DPPH 라디칼 소거활성과 FRAP 활성은 은행잎차, 혼합차, 산뽕잎차 순으로 높게 나타났다. 총 페놀 성분 함량은 은행잎차, 혼합차, 산뽕잎차 순으로 높았으며 산뽕잎에 은행잎을 2:1로 혼합하였을 때 항산화 활성이 증가하였다. 침출시간 3분 정도에서 산뽕잎차 및 혼합차는 비교적 항산화 활성이 높았으며 은행잎차는 6분 까지 활성이 증가하였다. HPLC로 분석한 플라보노이드 성분 함량은 quercetin이 모든 차에서 가장 함량이 높았으며, 은행잎차, 혼합차, 산뽕잎차 순으로 플라보노이드의 총 함량이 높게 나타났다. 제조한 침출차 들의 항산화 성분 함량과 항산화 활성의 상관계수는 0.87 이상으로 상관성이 상당히 높았다. The antioxidant activities and flavonoid contents of the mulberry leaves and the ginko leaves teas were investigated. The antioxidant activities were examined by FRAP and DPPH radical scavenging assays, and total phenolic content and the flavonoid contents by HPLC were also determined. The ginko leaves tea showed the highest antioxidant activities and antioxidant contents, while the wild mulberry leaves tea showed the lowest. The antioxidant activities of the mixture tea of wild mulberry leaves and ginko leaves were increased more than the wild mulberry leaves tea. The flavonoid contents of the leaves(ginko, wild mulberry and mixture) powders were higher than those of infusion teas. Compared with wild mulberry tea, the mixture tea showed a little increase of flavonoid contents. The total phenolic contents and the flavonoid contents of the teas showed good correlations with their antioxidant activities, such as FRAP and DPPH radical scavenging activities(). The antioxidant capacities of wild mulberry leaves tea could be enhanced by the addition of the ginko leaves.

        뽕잎 분말 첨가 쌀 파스타 제조의 최적화에 관한 연구

        The purpose of this study is to develop fresh pasta added with mulberry leaf powder as functional fresh pasta. Through previous research, the mixture of 40% of flour and 60% of rice powder was optimum for making noodles with mulberry leaf powder. Making fresh pasta with 40% of wheat flour, 60% of rice powder (optimum ratio for making noodles) and mulberry leaf powder(0.5%, 1.0%, 1.5%, 2.0%) was done, followed by the mechanical test(moisture content, color value, texture, tension) and the sensory analysis(quantitative descriptive analysis, preference test). Moisture contents of raw pasta and cooked pasta were the highest in control; scores for moisture contents of cooked pasta were higher than those of raw pasta. The result indicated that the more mulberry leaf powder was, the lower L-value and a-value were in raw pasta and cooked pasta. While the b-vale(yellowness) of raw pasta was the highest in control(9.81), 1.0% of mulberry powder addition sample was the highest in cooked pasta. For hardness, the 2.0% of mulberry leaf powder addition sample has high scores, and adhesiveness and chewiness were no significant difference. The 0.5% of mulberry leaf powder addition sample was the longest in tension distance, which was resulted from the lack of water contents in mulberry leaf powder. In cooked pasta, tension distance had no significant difference between the samples, and force showed the highest score in control. The quantitative descriptive analysis showed that color intensity, savory taste, bitterness were the highest in the 2.0% of mulberry leaf powder addition sample. Gloss and chewiness were no significant difference between the samples. Grassy flavor, savory flavor, bitterness and grainess were intense as mulberry leaf powder was added. The preference test showed that MRP 1.5 containing 1.5% of mulberry leaf powder was the most preferable for color, texture and overall quality. In conclusion, 40% of wheat flour, 60% of rice powder and 1.5% of mulberry leaf powder made the best formula of fresh pasta with mulberry leaves.

      • 한국산 품종별 뽕나무 잎(桑葉)의 화학적 성분 특성

        This study was conducted to investigate the possible use of Mulberry leaf as a functional supplement for Mulberry leaves. Chemical characteristics of mulberry leaf were investigated in eleven mulberry varieties, including Suwon, Chongil, Gumseol, Sugae, Yongchun, Hongol, Daeryk, Kaerang, Donae, Chungol and Kuksang20 varieties. The chemical compositions of minerals, amino acids, rutin as flavonol glucoside were analyzed by AOAC methods, HPLC method, amino acid analyzer, respectively. The results are as follows: In case of KukSang Mulberry leaf with spring harvest, the content of general components was crude protein 16.28%, carbohydrate 69.12%, crude fiber 9.15%, crude ash 8.44% and crude fat 2.57% respectively. It is noteworthy that ferrious content of KukSang mulberry leaves contains twice as great as that in other variety of mulberry leaves. The content of alanine was the highest among amino acids in all variety mulberry leaf. Spring leaf contain more utin content than fall leaf, among the variety, spring HongAll leaf rutin contain 260mg/100g as higher than that of fall ChungAll leaf 70mg/100g).

        뽕잎의 유산발효에 의한 Piperidine Alkaloid 함량 증진

        This study was carried out to investigate solid-state fermentation method using cellulolytic lactic acid bacteria Lactobacillus plantarum TO-2100 in order to increase piperidine alkaloid contents in mulberry leaves. Piperidine alkaloid, one type of which include 1-deoxynojirimycin (1-DNJ), is known to inhibit α-glycosidase activities. Using this strain, the optimal solid-state fermentation conditions on mulberry leaves powder were found as the following: initial moisture content, temperature and relative humidity were 20%, 30~35℃ and 60 ~ 70%, respectively, and the fermentation time was 72 hrs. The piperidine alkaloid contents in the fermented mulberry leaves were 2.86% on dry powder, which is 7-fold increase from that of non-fermented mulberry leaves. The 1-deoxynojirimycin contents after applying preparative thin layer chromatography were 2.02% on dry powder, which is 8 times higher than that of non-fermented mulberry leaves. α-Glycosidase activities was inhibited by 65.7 ~ 84.7% with 3 ~ 5% treatments of hot-water extracts of the fermented mulberry leaves, compared to 16.2 ~ 40.2% with 3 ~ 5% treatments of hot-water extracts of non-fermented mulberry leaves. Therefore, the results suggest that solid-state fermentation method does indeed increase of piperidine alkaloid contents on mulberry leaves.

        산란후기에 뽕잎의 첨가급여가 산란계의 생산성과 계란품질 및 혈액성상에 미치는 영향

        본 연구는 산란후기 사료에 뽕잎의 수준별 첨가 급여가 산란계의 생산성, 계란품질 및 혈액성상에 미치는 영향을 구명하고자 시행하였다. 74주령 하이라인 브라운 산란계 360수를 4개처리 5반복 반복당 18수씩 배치하여 12주간 사양실험을 실시하였다. 처리구는 ME 2750kcal/kg, CP 15%인 기초사료에 뽕 잎분말을 0, 0.2, 0.4 및 0.8% 수준으로 첨가 급여하였다. 산란율과 난중은 매일, 사료섭취량과 계란품 질은 4주 단위로 조사하였고, 혈액성상과 난황지방산은 사양실험종료 후 채취하여 측정하였다. 전체 사양실험기간에서 산란율과 1일 산란량은 뽕잎 첨가구에서 증가하는 경향을 보였지만 처리구간에 통계적 차이는 없었고, 난중, 사료섭취량 및 1일산란량도 유의적 차이는 없었다. 사료요구율은 실험 전기간 뽕 잎첨가구에서 개선되는 경향이 있었으며, 특히 82~85주령에서는 통계적 차이를 확인하였다(p<0.05). 난백높이, 호유닛, 난각강도 및 두께는 처리구간 차이가 없었다. 불포화지방산은 뽕잎의 첨가수준에 따 라 현저하게 증가하였지만(p<0.05), 포화지방산은 감소되었다(p<0.05). 혈청 HDL 콜레스테롤은 0.4% 첨가수준에서 현저하게 증가하였고(p<0.05), 중성지방은 뽕잎 급여수준에 따라 매우 감소하는 경향을 보였다. 그러므로 본 연구결과는 뽕잎의 첨가급여가 산란후기 산란계의 생산성, 계란품질 및 강건성을 개선하는데 효과적인 것을 시사한다. This study was conducted to investigate the effects of feeding Mulberry leaves on the performance, egg quality and blood composition of laying hens during the finishing stage. Three hundred sixty Hyline Brown laying hens were replaced into four treatments with 5 replicates of 18 birds in each from 74 to 85 weeks of age. Basal diets contained ME 2750, CP 16% and added the 0, 0.2, 0.4 and 0.8% mulberry leaves. Egg production, feed intake, feed conversion and egg quality were measured in every four weeks. Blood and yolk were taken at the end of the experiment. Egg production, and daily eggmass fed mulberry leaves tended to increase compared to that of the control, but was not significantly different. Feed conversion seemed to improve in mulberry leaf addition treatment. Albumin height, haugh unit, eggshell breaking strength and eggshell thickness were not statistically different among the treatments. Unsaturated fatty acid content showed significant increase depending on the mulberry leaf addition(p<0.05), but saturated fatty acids decreased. HDL cholesterol of birds fed 0.4% mulberry leaves increased significantly, but the neutral fat decreased as mulberry leaf addition increased. The result of this study show mulberry leaf addition improved the egg production, quality, health of laying hens during the finishing stage.

        Biological characterization of mulberry leaves bioconverted with Viscozyme L

        Background Mulberry ( Morus alba L.) leaves is a Korean medicinal herb that shows bioactive compounds such as quercetin, anthocyanins and polysaccharides. Bioconversion with Viscozyme L process could be producing enriched physiologically active compounds of mulberry leaves. Objective Thus, this study focused on the purifi cation of the bioconverted compounds responsible for ethyl acetate extraction and column chromatography using normal-phase silica gel and Sephadex LH-20. Results In this study, we obtained the purifi ed compounds, MAV 1, MAV 2 and MAV 3, which were identifi ed as caff eic acid, quercetin, and kaempferol, by analysis of nuclear magnetic resonance spectroscopy. Also, we optimized the yield of the most active compound, quercetin in 20% substrate, 5% enzyme, at 37 °C and pH 4 for 24 h, 2.34 ± 0.03 mg of quercetin was produced from 1 g of dried mulberry leaves. Furthermore, we showed that bioconverted compounds have biological activities such as α-glucosidase, acetylcholinesterase inhibitory, cytotoxicity activity, tyrosinase, xanthine oxidase (XO) and pancreatic lipase inhibition. Conclusion These results indicate that the enhanced activities of α-glucosidase, tyrosinase, xanthine oxidase inhibitory activities, and the anti-oxidant properties bioconverted from mulberry leaves with Viscozyme L. One of them, the quercetin which is a potent α-glucosidase inhibitor bioconverted from mulberry leaves with Viscozyme L has an anti-diabetic eff ect. And it can be used for the development of health foods and pharmaceutical products.

        뽕잎 및 꾸지뽕잎 첨가식이가 Streptozotocin 유발 당뇨쥐의 혈당관련 바이오마커에 미치는 영향

        뽕잎 및 꾸지뽕잎이 당뇨쥐의 혈당관련 바이오마커(biomarkers)에 미치는 영향을 조사하고자 SD계 수컷 흰쥐에게 STZ 투여(47.5 ㎎/㎏ bw) 후 7일 뒤 혈당치가 350 ㎎/㎗ 내외되는 쥐를 선별하여 실험군당 8마리씩 배치하고, AIN-93G를 기본식이로 하여 뽕잎 10% 첨가군(A), 뽕잎 10%와 꾸지뽕잎 10%(B) 및 30%(C) 혼합 첨가군, 꾸지뽕잎 10% 첨가군(D), 당뇨대조군(E)으로 나누어 각 실험식이를 6주간 급여한 결과는 다음과 같다. 실험기간 동안 B군과 C군의 혈당치는 실험식이 급여 전 기준혈당치와 비슷한 수준을 유지하였고 실험 6주째의 경우 E군 및 A, D군에 비해 유의하게 낮았다(p<0.05). 기준혈당 대비 6주 후 혈당상승률은 B군과 C군이 각각 6.7, 7.6%로 E군(29.2%)에 비해 상대적으로 낮았으며, 6주간 혈당치의 곡선하면적(AUC)도 B, C군이 D, E군보다 유의하게 낮았다(p<0.05). 실험종료 후 공복혈당 역시 B, C군이 D, E군에 비해 통계적으로 유의하게 낮았고(p<0.05), C-peptide 함량은 C군이 다른 군에 비해 평균 50 p㏖/ℓ 가량 높았으나 유의적인 차이는 없었으며, 당화 혈색소(HbA1c) 함량은 A군과 B군이 E군보다 유의하게 낮았다(p<0.05). 혈청 총콜레스테롤(TC) 농도는 E군에 비해 실험시료 급여군이 평균 14% 감소하였고, HDL-콜레스테롤 농도는 시료 처리군이 E군보다 평균 27% 증가하였으나 실험군 간에 유의적인 차이는 없었으며, 중성지방(TG) 농도는 E군에 비해 A, B, D군에서 유의적으로 감소하였다(p<0.05). 간기능치 중 AST 및 ALT 활성은 E군보다 A, B, D군에서 통계적으로 유의하게 감소하였다(p<0.05). 이상의 결과에서 뽕잎 및 꾸지뽕잎 첨가식이 중 이들을 1:1로 혼합하여 STZ로 유도한 당뇨쥐에게 급여하였을 때 혈당상승을 억제하고 혈당관련 지표성분, 그리고 혈청 지질농도 및 간기능치 개선에도 다소간의 효과를 확인할 수 있었다. This study investigates the effects of diets with mulberry leaf and Cudrania tricuspidata leaf supplements on blood glucose-related biomarkers in streptozotocin-induced diabetic rats. Male diabetic Sprague-Dawley rats were divided into groups and fed several diets. Group A was fed a diet with a 10% supplement of mulberry leaves. Group B was fed a diet with a 10% supplement of mulberry leaves and an additional 10% supplement of Cudrania tricuspidata leaves. Group C was fed a diet with a 10% supplement of mulberry leaves and an additional 30% supplement of Cudrania tricuspidata leaves. Group D was fed a diet with a 10% supplement of Cudrania tricuspidataleaves. Group E was the DM control. All diets were based on AIN-93G diet and they all lasted 6 weeks. The blood glucose levels of groups B and C stayed similar to initial levels (reference blood glucose) for the experimental period, which was significantly lower than levels in groups A, D, and E at the 6th week (p<0.05). And the area under the blood glucose curve (AUC) was also significantly lower in groups B and C than in groups D and E (p<0.05). The fasting blood glucose level after the experiment was significantly lower in groups B and C (p<0.05), and the C-peptide content of group C was as high as 50 pmol/L on average. The HbA1c content was also significantly lower in groups A and B than in group E (p<0.05). The serum TG, AST, and ALT levels were significantly decreased in groups A, B, and D than in group E (p<0.05). From the findings, it is shown that a diet of 1:1 mulberry and Cudrania tricuspidataleaf supplements could improve blood glucose-related biomarkers.
