This research is the development of lateral flow immunoassay (LFIA) strip based on colloidal gold for the rapid detection of histamine. Histamine is one of the important organic compound, but it is well known factor to cause an allergy and inflammation-like food poisoning. It has produced in fish or fish products in the result of the bacterial decarboxylation of histidine that exists in oily fish species like tuna, mackerel, etc. General histamine analysis methods are Liquid chromatography mass spectrometry (LS/MS), Gas chromatography/mass spectrometry (GC/MS), Raman analysis. Even though these methods have high selectivity and sensitivity, these require high cost and complicated sample treatment procedure. LFIA technique gives many advantages such as the cost-effectiveness, rapid naked-eye detection and ease of use. As a result, LFIA strip of this research is expected as an rapid analysis method for early detection of histamine due to the simplicity and speed of the detection process.
Furan, phenolic, and heptelidic acid derivatives produced by Aspergillus oryzae

Eleven compounds, including a new sesquiterpene, were isolated from the culture medium of Aspergillus oryzae incubated with capsaicin. The structure of the new compound was determined to be 1,3,5a,6,7,8,9,9a-octahydro-9-hydroxy-9-(hydroxymethyl)-6-isopropyl-1-oxobenzo[c]oxepine-4- carboxylic acid, a heptelidic acid derivative. In addition, 10 known compounds were identified, namely 5-(hydroxymethyl)-3-furancarboxylic acid (flufuran), 3-hydroxypropanoic acid, 5-(hydroxymethyl)-2- furancarboxylic acid, 2-(4-hydroxyphenyl)-ethanol, 4-hydroxybenzoic acid, vanillic acid, 3,4- dihydroxybenzoic acid, 2-furanol, hydroheptelidic acid, and trichoderonic acid A, using spectroscopic data from nuclear magnetic resonance and electrospray ionization–mass spectroscopy.

중심합성계획에 의한 반응표면분석법을 이용하여 매실추출액 첨가 고추장의 이화학적 특성 및 관능적 품질의 최적배합조건을 설정하고자 매실추출액 및 고춧가루 첨가량에 따른 품질특성의 변화를 살펴보았다. 첨가 매실추출액이 증가할수록 pH는 감소하였고, 적정산도의 경우는 매실추출액과 고춧가루의 증가에 따라 증가하였으며 특히 매실추출액 증가에 따른 산도의 증가가 뚜렷했다. 고춧가루의 첨가량이 증가할수록 아미노태질소 값이 감소하는 경향을 나타내었고 매실추출액이 증가할수록 수분활성도는 증가하였으며, 수분함량의 경우 매실추출액이 증가할수록 완만히 증가하다 약간 감소하는 경향을 나타내었다. 색도의 경우 매실추출액이 증가할수록 모든 색특성(L*, a*, b*-value)이 감소하는 경향을 나타내었다. 향의 경우 매실추출액 및 고춧가루의 배합비율이 각각 2.20%, 8.62%일 때, 맛의 경우 6.63%, 9.50%, 색의 경우 7.80%, 8.62%일 때 최고의 관능평점을 얻었다. 모든 품질특성에서 고춧가루의 함량보다는 매실추출액 첨가량에 따른 영향이 크게 나타났다. 최적화 결과, 이화학적 품질특성 부분에서는 매실추출물이 3.60%, 고춧가루 첨가량이 10%일 때 최적의 공정조건을 나타내었으며 관능적 품질특성 부분에서는 매실추출물이 4.08%, 고춧가루 첨가량이 9.96%인 경우 최적인 것으로 나타났다. Response surface methodology (RSM) was used for the analysis and optimization of the production process of Kochujang added with Maesil extract. The process variables were the amount of Maesil extract ($0{\sim}8%$) and red pepper powder ($6{\sim}10%$). pH and all color characteristics (L*-, a*-, and b*-value) decreased but titratable acidity and water activity increased with the addition of Maesil extract. Amino nitrogen content appeared to decrease with the addition of red pepper powder. The highest sensory flavor score was obtained when 2.20% Maesil extract and 8.62% red pepper powder were blended, the highest sensory taste score with 6.63% Maesil extract and 9.50% red pepper powder, and the highest sensory color score with 7.80% Maesil extract and 8.62% red pepper powder respectively. The point chosen as representative of the optimal area corresponds to $X_1=3.60%,\;X_2=10%\;and\;X_1=4.08%,\;X_2=9.96%$ for physicochemical and sensory quality, respectively.
대구.경북지역 병원영양사의 직무특성, 업무수행도 및 조직몰입도가 직무만족도에 미치는 영향

The purpose of this study was to identify the effect of job characteristics, job performance and organizational commitment on job satisfaction of hospital dietitians. The first survey was carried out on 74 hospital dietitians to determine their demographic characteristics, job characteristics, organizational commitment, and job satisfaction. The second survey was carried out on 47 hospital foodservice dietitians to determine their job performance. Thirty-two percent of the subjects were aged between 26 and 30, and 62.2% had Bachelor's degrees. The dietitians felt most satisfied by their co-workers, followed by the work-itself, supervision, pay, and promotion possibilities. Dietitians who had a higher education were satisfied with pay and supervision. The longer the length of employment, the more the satisfaction with the work-itself and pay, plus the higher the monthly wage the more the satisfaction with the work-itself, pay, supervision, and co-workers. lob satisfaction was high in the group that scored high on autonomy, feedback, task identity, and friendship of in the job characteristic inventory. The job performances of nutrition counseling(r= 0.469, p < 0.01), nutrition education(r= 0.446, p < 0.01) and management of therapeutic diet(r= 0.394, p < 0.01) were positively correlated with job satisfaction. The $R^2$for the multiple regression model was 0.677, indicating that 67.7% of the variance in job satisfaction could be accounted for by feedback, organizational commitment, nutrition counseling performance, and nutrition education performance. In conclusion, the level of job satisfaction for hospital dietitians would appear to improve with increased feedback, organizational commitment, and opportunity for nutrition counseling and nutrition education.
