        호텔조리사의 직무환경이 위생관리 수행에 미치는 영향에 관한 연구 -조리사의 성격유형을 조절변수로-

        This study focused on the relationship on job environment and hygienic management performance for effective enhancement within cooking employee. In addition, the study analyzed cooking employees' characteristic types as a moderating variable for improving the strategies to maintain employees as well as enhance hygienic management performance. The sample was collected from five star hotels' cooking employees who work in Seoul and capital area. The survey was from 1 to 15 August in 2015. It selected total 410 data for analysing. Collected questionnaires applied SPSS18.0 for descriptive statistic analysis, analysis of frequency, exploratory factor analysis and reliability analysis and it used AMOS 20.0 for statistical hypothesis testing. The result shows that the hotel kitchens' human resource, facilities and kitchen environment were influenced by personal hygienic management and work hygienic management. The characteristics types' regulation effect was influenced by neurosis, extroversion and congeniality factors.

        부산지역 특급호텔 조리종사자의 주방 위생관리에 대한 중요도 인식 및 수행도 평가

        Purpose: This study examined the current status of importance perception and performance for the hygiene quality of chefs in six deluxe hotel restaurants in Busan. Methods: This research was performed using questionnaires conducted on 289 chefs in Busan area. Results: The chefs assessed the importance and performance of kitchen hygiene as 4.33 and 4.23 on a scale of 5.00, respectively. The mean scores of the importance of kitchen hygiene were 4.43 for inspection hygiene, 4.34 for cooking hygiene, 4.31 for storage hygiene, 4.30 for personal hygiene, and 4.33 for environmental facility hygiene. The mean scores of the performance of kitchen hygiene were 4.29 for inspection hygiene, 4.22 for cooking hygiene, 4.20 for storage hygiene, 4.20 for personal hygiene, and 4.24 for environmental facility hygiene. The chefs obtained higher scores in the total score of performance (p<0.05), inspection hygiene (p<0.01), and environmental facility hygiene (p<0.05). The performance scores were significantly higher when internal and external instructors performed hygiene education in parallel, particularly personal hygiene (p<0.01) and environmental facility hygiene (p<0.05). Online educated employees showed significantly higher personal hygiene (p<0.001) than the non-online educated employees. The IPA grid, ‘keeping ice-machine to prevent bacterial multiplication’ fell into quadrant 1 (focus here), ‘inspect after arranging with 30 minutes’ ‘bowl and spoon only for test’ ‘using cleaner and paper towel when washing hands’, ‘wearing sanitary mask and gloves’ etc. belonged to quadrant 3 (low priority). Conclusion: To enhance the effectiveness hygiene education, a range of education instructors and media are needed, and hygiene education programs should be developed according to the job level and career of the hotel kitchen.

        호텔조리사의 직무환경이 자기효능감과 위생관리 수행에 미치는 영향에 관한 연구

        According to this study the outcomes of self-efficiency and hygiene management performance can be different by hotel chef``s work environment. As well as the study aims that the different levels of self-efficiency could impact on hygiene management performance. The survey was from 1 April to 15 April in 2015 and a total number of 205 data used for the analysis. It is adapted SPSS 18.0 for frequency analysis, factor analysis, reliability analysis and regression analysis. The hotel chef``s work environment and hygienic management performance were influenced by self-efficiency. In addition the chefs should have a confidence and effective work performance for the visible achievement. The effective hygiene management performance would deliver positive images within competitive advantage.

        치과위생사의 손위생 향상 관련 행동 인지도가 치과감염관리 수행도에 미치는 영향

        Objectives: The purpose of this study is to understand the effect of perception of behavior related to hand hygiene improvement on dental infection management performance among dental hygienists. Methods: A survey was conducted among 230 dental hygienists working in Busan, Ulsan, and Gyeongnam. The collected data were analyzed through descriptive statistics, correlation analysis and multiple regression analysis using the IBM SPSS 26.0 statistical program. Results: The findings indicated that dental hygienist s hand hygiene education showed the most significant value to the regular hand hygiene feedback(r=.736). The factors that positively influence the perception of hand hygiene-related behavior on dental infection management performance were hand hygiene education (p<.001), regular feedback on hand hygiene(p<.01), and patient’ hand hygiene requirements before contact(p<.05) appeared in order. Conclusions: The importance of hand hygiene by dental hygienists should be recognized, and basic data on the development and operation of infection control programs should be provided.

        부산지역 초음파실 근무인원의 병원감염관리 인식 분석

        부산지역 초음파실 근무인원 146명을 대상으로 설문조사를 실시하여 병원감염에 대한 인식을 분석하였다. 그 결과, 개인 위생관리와 손씻기 관리인식도, 수행도는 학력이 높을수록 그 수치는 높았으며, 초음파 장비 위생관리에 관한 인식도에서는 감염교육 경험이 있는 집단이, 수행도에서는 대졸미만의 집단이 가장 높은 수치와 통계적으로 차이가 있는 것으로 분석 되었다. 본 연구 결과를 토대로 전체적인 인식도에 비해 수행도는 낮게 분석되었다. 이러한 결과는 수행하는 정도가 미흡하다는 것으로 해석할 수 있다. 그러므로 이를 해결하기 위해 감염교육을 통한 각자 개인위생에 대한 인식의 전환과 관심이 필요하다고 판단된다. 146 people working in the ultrasound room in Busan were surveyed, and their perception of hospital infection was analyzed. According to the results of the survey, academic background showed the highest number in terms of awareness and performance of personal hygiene management and hand washing man-agement, and the group with experience of infection education showed the highest number in terms of awareness of ultrasound equipment hygiene, and the group with less than college education showed the highest number in terms of performance of ultrasound equipment hygiene. The difference was statistically significant. Based on the results of this study, performance was lower than awareness in general. This re-sult indicates that the degree of performance is inadequate. Therefore, it can be concluded that individuals need to change their perception of personal hygiene and take interest in it through infection education.

      • 온라인 위생교육프로그램의 지속적 제공이 어린이급식소 위생관리 수행도에 미치는 영향

        The purpose of this study was to investigate the effect of developing and continuously providing on-line hygiene education programs on the improvement of hygiene conditions in children's cafeterias. As a result of the 2020 sanitation and safety checklist analysis, 6 items (personal hygiene, separate use, clean ventilation, temperature control of refrigerators, country of origin, food distribution) were derived and on-line hygiene education programs for each of 6 items were produced. ① Customized educational materials and self-inspection checklists were provided to 208 children's cafeterias. After that, educational videos were provided through Kakao Talk twice a week for 6 months, and they were made available for viewing at any time through YouTube upload, ③ Kakao Talk Through this, a quiz related to the educational video was conducted to give feedback for interaction with the cook. As a result of analyzing the total hygiene and safety checklist score of all registered facility catering centers by visit order, in 2020 it was 82.8 points/100 points, but in 2021, it was 84.2 points (1st round), 89.3 points (2nd round), 91.4 points (3 points) The score improved significantly (p<0.001) as the on-line hygiene education program continued. As a result, significant (p<0.001) changes were observed in the items of 'Knife, chopping board' and 'Sanitation clothes, sanitary hat, sanitary shoes, apron, and sanitary gloves', confirming a clear improvement effect. Therefore, it is considered that the on-line hygiene education program will play a positive role in showing a lasting effect on improving hygiene management in children's cafeterias.

        동기 · 위생 요인과 직무수행 간 관계에서 정서적 몰입의 매개효과

        본 연구는 사회복지사의 동기ㆍ위생 요인과 직무수행 간 관계에서 정서적 몰입의 매개효과를 살펴보는 연구이다. 이를 위해 부산ㆍ경남 지역의 83개 사회복지관에 근무하는 사회복지사 996명을 대상으로 우편 설문조사를 실시하였다. 그리고 회수된 760부를 중심으로 동기 요인과 위생 요인 간 판별 타당도 분석을 실시한 후, 구조방정식모형의 측정모형과 구조모형 분석을 실시하였다. 그리고나서 구조모형에서 유의하게 나타난 경로를 중심으로 효과분해를 실시하였다. 분석결과, 동기 요인과 위생 요인은 상호 구분되는 개념임이 입증되었다. 둘째, 동기요인과 위생요인은 정서적 몰입에 정적인 영향을 미침을 알 수 있었다. 셋째, 동기요인은 직무수행에 직접적 영향과 간접적 영향 모두 미치며, 위생요인은 간접적 영향만 미침을 알 수 있었다. 특히 효과분해 결과, 총효과에서 정서적 몰입에는 위생 요인의 영향력이 더 크고, 직무수행에는 동기 요인의 영향력이 더 큰 것으로 나타났다. 이상을 통해 사회복지관에 근무하는 사회복지사의 인적자원관리와 관련한 직무 내ㆍ외적 환경 개선 방안을 도출하였다. The purpose of this study is to identify the mediating effects of affective commitment on the relationship between motivationㆍhygiene factors and job performance of social workers. The author conducted a survey by mail to 996 social workers who worked for 83 community welfare centers in Busan and Gyeongnam. The collected 760 questionnaires were conducted using discriminant validity analysis between motivation and hygiene factors and then analysis of measurement model and structure model for structural equation modeling. The author then performed effect decomposition focusing on significant paths in the structure model. According to the analysis, motivation and hygiene factors were shown to be distinguished concepts for each other. Second, motivation factors and hygiene factors have positive effects on affective commitment. While motivation factors have direct and indirect effects on job performance of social workers, hygiene factors have indirect effects on job performance through affective commitment. The results of effect decomposition, in total effect, showed that affective commitment was mostly affected by hygiene factors while job performance was mostly affected by motivation factors. Based on such results, the study proposed implication for improvements in internal and external job environments related to human resource management for social workers in community welfare centers.
