        Quality Characteristics of Fermented Sausage Prepared with Soy Sauce

        The contributions of soy sauce to the quality characteristics of fermented sausages were investigated. The number of lactic acid bacteria in sausages prepared with soy sauce increased from the first day of fermentation, and the population reached approximately log 7 CFU/g by the 5th day of fermentation. The pH decreased sharply to 5.0-5.1 by the 5th day of fermentation, in accordance with the dramatic increase of titratable acidity. After 36 days of fermentation, the levels of total organic acids and amino acids in soy sauce sausages increased to 3,026.3-3,116.4 mg/100 g and 1,132.2- 1,172.8 mg/100 g respectively, and this level was even higher than those of the sausage fermented with a starter culture. 2% soy sauce sausage also showed higher values of hardness, chewiness, and smoke odor than the control. These results suggest that soy sauce has great potential as an alternative starter culture and additive for the quality improvement of fermented sausages.

        남북한 문화예술교육방법의 비교: 정부간행 잡지 기사를 중심으로

        One of the important values in the inter-Korean exchange and cooperation process is mutual understanding. In the process, it can be seen in the process of German unification that culture and art can play a role in maintaining the unity of members. In addition, cultural arts, which are closely related to the daily lives of the inhabitants, can change public perception through education. The two Koreas, which have different systems, have different goals for cultural and arts education. The ultimate goal of North Korea’s cultural arts education, armed with the party’s subjective aesthetic ideology, contributes to the construction of socialism, which is very different from the goal of cultural arts education in South Korea. However, cultural arts education methods, which are considered desirable in terms of daily cultural arts education activities, may not necessarily be subject to the political orientation of the two Koreas. For example, detailed educational methods of cultural arts education, such as fostering creative artists or fostering professional skills, can be achieved without being tied to the political systems of the two Koreas. The purpose of this study is to examine and analyze the educational methods in the actual culture and arts education sites of the two Koreas, instead of the existing researches mainly made in terms of educational policy and curriculum. To this end, this study compared the daily culture and arts education methods of the two Koreas by extracting the articles introduced by covering the desirable culture and arts education sites in the North and South Korea magazines. The data used in the analysis were ‘Happy Education’ issued by the South Korean Ministry of Education and ‘Art Education’ published by the 2.16 Art Education Publishers in North Korea. A total of 99 articles were extracted and compared according to the classification criteria. As a result, South Korea found an interesting finding that North Korea placed more emphasis on professional skills than North Korea, and North Korea emphasized autonomous learning compared to South Korea. It was also found that everyday cultural and arts education in North Korea is carried out in much more ways than the items suggested by the socialist arts education method. Through this comparison, this study suggested practical education methods in the field of cultural arts education of the two Koreas, and suggests implications for the integration process.

        The Potential of Neuroscientific Approaches to Game Learning Analytics: A Methodological Review on Assessing Domain-Specific Creativity

        This methodological review explores the emerging field of domain-specific creativityassessment. It explores the potential of game-based learning analytics from a neuroscienceperspective and examines the ability of real-time data collection to provide detailedinsights into the cognitive and creative processes of domain-specific creativity. The reviewemphasizes the pedagogical implications of innovative methodologies and presents theadvancement of individualized, adaptive learning systems of game-based environmentsto assess domain-specific creativity. To illustrate, the exemplary study uses a multimodalapproach that integrates functional near-infrared spectroscopy (fNIRS) neuroimaginganalysis, game log data, and screen recordings for creativity assessment. The studyelucidates the theoretical frameworks linking neuroscience metrics to constructs suchas creativity, learning styles, and achievement goal orientations. The conclusion outlinesavenues for future research while acknowledging current limitations in the field, includingthe complexity of data analysis, financial constraints, and ethical considerations.

        사이버폭력피해경험이 청소년 자살생각에 미치는 영향에서 우울의 매개효과

The study analyzed the data of 6,257 middle and high school students from 2019 Survey on the Human Rights of Children and Adolescents. It was performed regression analysis and mediation analysis using SPSS 22.0. The main contents of this study were summarized as follows: First, it was found that cyberbullying victimization experience has a significant positive effect on adolescent suicidal ideation. Second, cyberbullying victimization experience had significance positive effect on depression. Third, The partial mediating effect of depression was confirmed in the impacts of cyberbullying victimization experience on adolescent suicidal ideation. Based on the result, a practical plan to intervene in suicidal ideation of adolescents who experience depression as a result of cyberbullying victimization experience was presented, and the need for follow-up studies was suggested.         서울 일부지역 안경원 방문자의 연령에 따른 굴절상태 변화

        Purpose: To characterize refractive changes in ametropic eyes with age, all records from clinical patients at an KE optician's clinic in the year of 2007~2013 were used for the study. Methods: Refractive errors were decomposed into spherical-equivalent refractive error (SE), (myopia, SE≤-0.75D; hyperopia, SE≥+0.75D). Astigmatic groups were categorized by the cyl≥-1.00D and were classified by the with-the-rule (WTR), against-the-rule (ATR), and oblique astigmatism. Subjects were divided into six age group by decade(10s, 20s, 30s, 40s, 50s, and 60s). Statistical analysis were performed with the SPSS/win programs (version 18.0; SPSS, Inc.) and Origin 8.0. P-value of less than 0.05 was considered to be statistically significant. Results: Among the subjects, 84.4.% had myopia, 5.7% had hyperopia, and 46.1% had astigmatism. Average of SE was -3.55±2.83D and the mean of SE of the six age group by decade were 10s, -3.77±2.06D; 20s, -4.44±2.61D; 30s, -3.85±2.61D; 40s, -3.48±2.70D; 50s, -1.92±2.65D; 60s, -0.56±2.58D that progressively shift from myopia to hyperopia as age progresses. The prevalence of WTR astigmatism is 54.8% and oblique astigmatism is 30.4% and ATR astigmatism is 14.9%. And WTR astigmatism was highly dominant in teen age group, while 45.3% of the 60s were ATR astigmatism. Conclusions: In adolescence, a prevalence rates of both myopia and WTR astigmatism is increased during the first decades. Majority of the elderly (over 60s) had hyperopia and ATR astigmatism. Age-related refractive changes in eyes showed myopic shift in adolescence, however showed an age-related hyperopic shift after 40s in both myopic and emmetropic eyes. In myopic eyes myopic and hyperopic shift are larger than emmetropic eyes. 목 적: 안경원 방문자를 대상으로 연령군에 따른 굴절이상의 분포와 굴절상태의 변화를 분석하고자 하였다. 방 법: 2007년부터 2013년까지 서울 서초동 소재 안경원에 내원한 922명(1,844안)을 대상으로 연령군에 따라 10대군(10∼19세), 20대군(20∼29세), 30대군(30∼39세), 40대군(40∼49세), 50대군(50∼59세), 60대 이상군(≥60세)으로 분류하고 타각적 굴절검사와 자각적 굴절검사를 시행하였다. 굴절이상은 등가구면굴절력을 이용하여, 근시군(SE≥-0.75D), 원시군(SE≥+0.75D) 및 난시군(Cyl≥-1.00D)으로 나누고, 난시는 (-) 원주축 방향에 따라 직난시(180°±15°), 도난시(90°±15°), 사난시(16°∼74° 또는 106°∼164°)로 구분하였다. 통계분석은 SPSS version 18 (SPSS INC., Chicago, IL, USA)을 이용하여 각 요인을 독립표본검정(independent T-test), 선형회귀분석(linear regression analysis), 일원배치분산분석(one way anova)을 통해 조사하였으며, 유의 수준은 p<0.05로 하였다. 결 과: 전체 대상안의 굴절이상 분포는 근시 84.4%, 원시 5.7%, 정시 9.9%그리고 난시는 46.1%로 나타났다. 평균 등가구면굴절력은 10대 -3.77±2.06D, 20대 -4.44±2.61D, 30대 -3.85±2.61D, 40대 -3.48± 2.70D, 50대 -1.92±2.65D, 60대 -0.56±2.58D로 연령이 증가함에 따라 근시에서 원시로 유의하게 변하였다(p<0.05). 난시는 직난시 54.8%, 사난시 30.4%, 도난시 14.9% 로 나타났고 10대에서는 직난시가 월등히 높았으며, 도난시는 60대에서 45.3%로 가장 높았다. 결 론: 청소년기에는 근시와 직난시의 유병률이 높지만, 연령이 증가하면서 굴절상태는 변하여 노년층에서는 원시와 도난시의 유병률이 높았다. 굴절상태는 연령에 따라 청소년기에 근시화가 진행되고, 근시안과 정시안의 경우에는 40대 이후에 원시화가 나타나며, 근시화와 원시화 정도는 근시안이 정시안보다 더 많은 것으로 사료된다.

        이성분 휘발성유기화합물(Toluene-MEK)의 활성탄 흡착 및 탈착 특성

        본 연구는 상용활성탄을 사용하여 산업공정에서 많이 사용되는 휘발성 유기화합물 중 톨루엔, 메틸에틸케톤(MEK), 이성분계(톨루엔-MEK)를 대상으로 흡착 및 탈착특성을 고찰하였다. 최적탈착온도를 설정하기 위해 온도별 탈착특성을 고찰하였고, 활성탄의 특성을 파악하기 위해 BET분석을 하였다. 상온에서 흡착실험을 진행하였고, 120 ℃까지 승온하여 탈착실험을진행하였다. 이 실험을 10회 반복해서 진행하였다. 이를 통해 단일성분에서는 반복횟수가 많아질수록 흡착 및 탈착능이 줄어들며 활성탄과 상대적으로 친화력이 적은 MEK의 경우 톨루엔보다 낮은 흡착 및 탈착능을 보였다. 이성분계의 흡착 및 탈착 반복시험에서 친화력이 낮은 MEK가 먼저 파과되고 결과적으로 주입 농도보다 높은 농도로 탈착되었다. In this study, we have investigated the characteristics of adsorption and desorption of toluene, methyl ethyl ketone (MEK) and their binary component using activated carbon. The BET analysis was performed to identify the characteristics of the activated carbon, and the desorption characteristics with temperature were examined to find out an optimum desorption temperature. Ten cyclic experiments of adsorption-desorption were performed, where each adsorption temperature was maintained at room temperature and desorption temperature at upto 120 ℃. In case of single component cyclic test, the efficiencies of adsorption and desorption decreased as the cycle increased. MEK which has lower affinity with activated carbon than toluene showed lower efficiencies of adsorption and desorption. In case of binary component cyclic test, a typical roll-up phenomenon was observed during adsorption process, where MEK reaches at breakpoint first and then was swept out by toluene.
