        녹차부산물을 이용한 기능성 축산물 증명에 대한 분자생물학적 접근

        Green tea was known which regulated adipocyte differentiation metabolism. The mecha nism on the lipid decreased contents of TAG in the plasma. In addition, green tea increased the expression leptin mRNA, PPAR δ mRNA and TGF β. The tea tested was korean powdered green tea. In this experiment, Sprague-Dawley(SD) rats were fed 3 % green tea(powdered) for 3 weeks on the basal diet and obese diet and green tea grouts-fed pork meats, duck meats. The expression of leptin mRNA and PPAR δ mRNA were up-regulated in the green tea-fed groups compared with those of the not green tea-fed groups. There were no significantly difference on the expression of leptin mRNA and PPAR δ mRNA in green tea grouts-fed pork meats, duck meats as compared with the not fed green tea grouts meats. TGF β mRNA, TNF α mRNA and adipsin mRNA were not expressed in the pork meats, duck meats. The expression of TGF β mRNA, TNF α mRNA and adipsin mRNA were observed in the experimental rats but no significantly difference on the contents. Physiologic regulated genes were not expressed in the green tea grout-fed pork meats and duck meats.

        축산물 가격변동의 물가 파급영향에 대한 소비자 인식 분석

        This study analyzes the consumer`s recognition for the impact of fresh meats on general price level, which becomes an important issue to consumers who have frequently experienced animal diseases and price fluctuation of fresh meats in these days. 550 urban housewives were surveyed for the items with the number of purchase, the type of purchase, and the amount of expenditure in fresh meats in comparison with public service fees including demographical characteristics. Bardley-Terry model and logistic regression model were adopted to analyze the impacts and factors that price changes in fresh meats have on general price level. Results show that public service fees have more impacts on general price level than fresh meats. This implies that a relative compariosn of the impacts of price change in fresh meats and public service fees may lower the misunderstanding that fresh meats are main source of price fluctuation of general price.

        경남지역 거세한우의 고급육 생산을 위한 도체 근육부위별 분포도 차이에 대한 연구

        A grading system is implemented to evaluate the meat quality of Hanwoo. In the grading system, grade 1++A is the highest grade. Livestock farms breed Hanwoo with good quality feed in order to obtain the highest grade. In this process, the content ratios of muscles in individual regions can be changed. To find out the muscle distribution ratios of Hanwoo steers, grade 1A, 1+A, and 1++A Hanwoo steers were compared with grade 1+A Hanwoo female. Grade 1A Hanwoo steers had higher ratios of shank (SK), brisket and flank (BF), neck chain (NC), and inside skirt (IS) meats and a lower ratio of striploin (SL) meat compared to grade 1+A Hanwoo feamle. Grade 1++A Hanwoo steers had higher ratios of neck (NK) and loin (LN) meats and lower ratios of inside skirt (IS), tenderloin (TL), top round (TR), eye round (ER), bottom round (BR), bottom sirloin triangle (BST), and knuckle (K) meats compared to grade 1+A Hanwoo steers. In comparison between grade 1A and 1++A Hanwoo steers, the ratio of shank (SK) was significantly lower in higher quality meats. If the changes are continuously studied to improve the process so that the ratios of partial meats of the regions highly preferred by consumers can increase, it will contribute to increases in the incomes of livestock farms and enable Hanwoo to grow into a global brand.

        개똥쑥의 첨가가 계육의 품질 특성에 미치는 영향

        The effects of dietary supplementation of Gaeddongssuk (Artemisia annua L.) powder wereevaluated in terms of performance and physicochemical properties of the chicken (Woorimatdag). The chickens were divided into five treatments: group feed basal diet (Control), group added0.25% antibiotics in the drink water (Antibiotics), and groups supplemented Gaeddongssukpowder with 5%(TA-1), 6%(TA-2) and 7%(TA-3) in the diet. Body weight was significantlyhigher in TA-1 and TA-2 compared to the control(p<0.05). Feed conversion rate in the TA-1and TA-2 groups were significantly lower compared to the control(p<0.05), but TA-3 wassimilar to the control. Content of crude protein was significantly higher in the TA-1 and TA-2to the control(p<0.05). The pH of breast meat was significantly higher in the TA-2(p<0.05), and legs meat was highest in the TA-3, but it was not significant to the control. Heating loss in theTA-3 was significantly decreased compared to the control and antibiotics(p<0.05). ΔE wassignificantly higher in the groups supplemented Gaeddongssuk to the control(p<0.05). Thehardness was higher in the beast meat than legs meat. The hardness of breast meat wassignificantly higher in the Gaeddongssuk groups to the control(p<0.05), legs meat was notsignificant in the TA-2 and TA-3 to the control(p <0.05). Overall acceptabilities of the chickenmeats were evaluated the highest in the TA-2. Antioxidant activity in the breast meat wassignificantly increased in the all groups supplemented Gaeddongssuk(p<0.05), legs meat wassignificantly higher in the only TA-2(p<0.05). The lipid peroxide content was significantlydecreased by the supplementation of Gaeddongssuk was increased(p<0.05). These results suggestthat dietary supplementation of Gaeddongssuk with 6% could be applicable as the possibility fora functional feed to improve the quality and performance of the chickens. 개똥쑥 분말을 첨가 급이한 육계(우리맛닭)의 생산성 및 계육의 품질 특성을 분석하였다. 실험군은 대조군, 항생제 첨가군 및 개똥쑥 5%(TA-1), 6%(TA-2), 7%(TA-3) 급이군으로 구분하였다. 증체량은 대조군에 비하여 TA-1과 TA-2군에서 유의적으로 증가하였고(p<0.05), 사료 요구율은 TA-1, TA-2군이대조군에 비해 유의적으로 낮았으나(p<0.05), TA-3군은 대조군과 유사하였다. 개똥쑥 5~6%가 급이된계육의 조단백질 함량은 대조군에 비해 유의적으로 높았다(p<0.05). pH는 가슴육에서 TA-2군이 가장높았고(p<0.05), 다리육은 TA-3군이 높았으나 이는 대조군과 유의차가 없었다. 계육의 가열감량은 다리육에 비해 가슴육에서 적었으며, 대조군과 항생제 첨가군에 비해 TA-3군에서 유의적으로 낮았다(p<0.05). 색차(ΔE)는 개똥쑥을 급이한 계육이 대조군에 비해 유의적으로 높았다(p<0.05). 계육의 경도는 가슴육이 다리육에 비해 월등히 높았다. 가슴육의 경도는 개똥쑥 급이군이 대조군에 비해 유의적으로증가하였으며(p<0.05), 다리육은 TA-2와 TA-3군에서 대조군과 유의차가 없었다(p<0.05). 계육의 전반적인 기호도는 TA-2군이 가장 높은 것으로 평가되었다. 항산화 활성은 대조군에 비해 가슴육은 개똥쑥급이군, 다리육은 TA-2군이 유의적으로 높았다(p<0.05). 지질과산화물의 함량은 개똥쑥의 첨가량이 증가됨에 따라 유의적으로 감소되었다(p<0.05). 따라서 육계의 사료에 개똥쑥 분말 6%의 첨가 급이는 육계의 생산성 향상, 계육의 보수성 증대 및 지질 산화 억제 등의 효과로 기능성 사료로써 사용 가능성이 있을 것으로 기대된다.

        계획된 행동이론(TPB)을 이용한 소비자의 대체육 구매의도에 관한 연구

        Based on the theory of planned behavior, this study aims to examine the structural equation model among consumers' concerns and purchase intentions for alternative meats. Data were collected from 300 adults living in Kyeonggi Province. Results show that animal welfare, environmental concern, and health concern all have a direct and significant effect on purchase intention of alternative meat, and the mediation effect is also significant, indicating a partial mediation effect. The image of a company as caring about animal welfare and contributing to public causes can help sell alternative meats. Media publicity focusing on animal welfare for alternative meats can improve the attitudes of domestic consumers as well as their intention to purchase alternative meat products.

        유통 식육 중 성장호르몬제 초산메드록시프로게스테론의 분석

        We aimed at the monitoring medroxyprogesterone acetate (MPA) residue amount in meats and confirmed the safety of its residue in meats. Optimized condition for analytical and instrumental methods was obtained by method validation. The limit of detection (LOD) and limit of quantification (LOQ) were validated at 1.5and 5.0 ug/kg, respectively. The calibration curve showed good linearity (r² = 0.9968) within the concentration range of 5.0~50.0 ug/kg. We selected progesterone-d9 for internal standard, The recoveries in fortified meat ranged from 67.5 to 109.56% at the 3 spiking levels. As the regulation of MPA analysis method used by LC-MS/MS on other products have established. We selected 3 species of farm stock products (cattle, pig, chicken) and purchased at the markets of seven major cities. The total 196 of meat including 46 of domestic beef, 43 of import beef, 60 of domestic pork, 12of import pork and 35 of domestic chicken. No residue of synthetic growth hormones were detected in cattle, pig and chicken samples tested.

        Molecular detection of bla<SUB>VIM</SUB>, bla<SUB>BIC</SUB>, bla<SUB>KPC</SUB>, and bla<SUB>SIM</SUB> genes from isolated bacteria in retail meats

        본 연구의 목적은 확장 스펙트럼 β-락타마제(ESBL) 항생제가 그람 음성 세균에 의한 감염을 치료하고 예방하는데 사용하고 있으며 임상에서 심각한 감염을 치료하는데 선택하는 마지막 옵션 역할을 한다. 미생물의 확장 스펙트럼 β-락타마제(ESBL) 및/또는 카르바페네마제(Carbapenemase) 내성에 대한 보고는 전 세계적으로 확산되는 것으로 보고되며 항생제 치료에 많은 제한을 주는 요인으로 다약재 내성과 관련이 있기 때문에 보건 서비스에 큰 관심을 가지고 있다. 본 연구는 국내 시장에서 구매하여 분리한 육류로부터 세균을 분리 동정하여 항생제 저항성 테스트인 디스크 확산법을 사용하여 내성균을 분리 실험하였고, PCR과 DNA 시퀜싱방법을 수행아였다. 결과는 PCR을 수행하여 항생제 내성유전자와 유전자를 생산하는 ESBL의 존재를 검출하고 결과를 얻었다. 총 36개의 샘플 육류로부터 181개의 각각 분리된 세균을 추출하여 실험결과을 얻었다. 결과는 PCR과 DNA 염기서열을 분석하여 항생제내성 유전자로 blaVIM, blaBIC, blaKPC, blaSIM으로 나타났다. 분리한 육류 속의 박테리아는 별도 유전자 서열분석으로 4개의 다른 박테리아가 확인되었다. 이러한 결과는 소매되는 육류에서 발견되는 박테리아에 ESBL 내성유전자인 blaVIM, blaBIC, blaKPC, blaSIM를 가진 박테리아 균주가 있을 수 있으며 이는 특수 확장 스펙트럼 β-락타마제(ESBL) 및/또는 카르바페네마제(Carbapenemase) 내성유전자가 확산될 수 있다는 것을 시사한다. The purpose of this study was to investigate the ability to treat and prevent infection by multiple Gram-negative bacterial pathogens as a last choice option in the treatment of serious infections in clinical settings . The global spread of extended-spectrum β-lactamases (ESBLs) and/or carbapenemases in microorganisms are of enormous concern to health services because they are often associated with multi-drug resistance which significantly restricts the antibiotic treatment options. In this study, the antimicrobial resistance profiles of bacteria isolated from South Korean market-derived meat samples were determined by the disc diffusion method. PCR was used to detect the presence of antibiotic resistance genes and ESBL producing genes. In total, we tested 181 isolated colonies from 36 market-derived meat samples. Single PCR and DNA sequencing results revealed that genes blaVIM, blaBIC, blaKPC, and blaSIM were present in the bacteria isolated from retail meat. The bacteria in the meat were separately sequenced and based on alignment, four different bacteria were identified. These findings suggest that bacteria found in retail meats are a reservoir for the spreading of ESBL blaVIM, blaBIC, blaKPC, and blaSIM resistance genes and bacteria strains.

        2010년 가축 및 도축장 식육에서 분리한 Salmonella의 항생제 내성

        Salmonellosis constitutes an important public health problem in both developing and developed countries, including Korea. The aims of present study were to investigate the serovar and antimicrobial resistance of Salmonella isolated from food animals and animal products in slaughterhouses and farms. A total of 323 Salmonella were isolated from food animals (n=277) and meats (n=46) during 2010. Of the isolates, 21 different serovars were identified. The predominant serovars were S. Rissen (35%) and S. Montevideo (24.3) in healthy pigs, while S. Enteritidis (25.5%) in healthy chicken. S. Typhimurium (88.8%) was predominant in disease pigs, while S. Gallinarum (29.2%) and S. Montevideo (26.9%) were in diseased chickens. Among meat samples, S. Typhimurium (57.1%) was the most common serovar in pork but S. Enteritidis (38.7%) and S. Montevideo(32.3%) were in chikcen meats. Analysis of antimicrobial resistance patterns revealed that 20.7% of the isolates were sensitive to all the 15 drugs tested. The isolates were frequently resistant to nalidixic acid (47.7%), tetracycline (38.4%), streptomycin (33.7%), and ampicillin (32.8%). The resistance to quinolone and 3rd generation cephalosporins was higher in chicken and chicken meat isolates. Of the 323 isolates, 174 (53.9%) were resistant to one or more CLSI subclass, and 117 (36.2%) showed multiple-resistance. Our findings showed that multiple resistant Salmonella organism are widespread in animals and animal products in Korea. To prevent the transmission or exposure for consumers of antimicrobial resistant Salmonella, policies and guidelines aiming at prudential use of critical antimicrobials for humans are needed.

      • Salmonella lysate 첨가 사료가 저장중 계육 항산화계(신선도)에 미치는 영향

        급여 사료와 관계없이, 가슴육과 다리 근육의 CuZnSOD 활성은 저장일수의 경과에 따라 순차적으로 낮아졌으나, MnSOD 활성과 peroxide 농도는 저장 7일에 높아졌다가 14일에 낮아졌다. 한편, 저장기간중 과산화물 분해효소 및 MnSOD 활성 변화는 급여사료에 따라 달랐다. 이와같이 저장중의 친산화계와 항산화계의 변화는 급여사료에 따라 달라지므로, 저장중인 친산화계와 항산화계를 측정하여 계육의 생물활성(신선도) 평가와 신선도를 향상시키는 사료(영양소) 조성의 연구에 항산화계 평가의 응용이 가능하다는 것을 나타낸다. 본 연구 성적은 계육 4℃ 냉장 저장은 7일까지는 신선도를 유지한다는 것을 나타내었다. Effect of dietary salmonella lysate in broiler chicks inoculated with Salmonella typhimurium on the antioxidant system(freshness) of broiler meats during 4℃ refrigeration was investigated. In Pectoral and leg muscle, regardless experimental diets, as the refrigeration day passed, CuZnSOD activity decreased gradually, while at 7d MnSOD activity and peroxide level raised and then lowered at 14d. MnSOD and peroxidase activity, however, had differed according to experimental diets. The results indicated that antioxidant system of broiler meats will be changed according to experimental diets (nutrients). As the CuZnSOD, MnSOD and peroxidase activity are responsible for proteolysis of muscle protein, it was concluded that change of antioxidant system during 4℃ storage explain the biological activity (freshness) of broiler meats.

        유통식육에서 중금속 함량조사

        This study was conducted to determine the content of heavy metals in meats available on the Korean markets. Trace metals (Pb, As and Cd) were detected in 4 kinds, 172 samples by inductively coupled plasma-mass spectrometry (ICP-MS). The values of heavy metals in meats were as follows; In beef, mean (minimum~ maximum) values of the heavy metals were Pb: 0.075 (0.020~0.190)mg/kg, As: 0.010 (0.001~ 0.050)mg/kg and Cd: 0.43(0.07~2.11)μg/kg. In pork, mean (minimum~maximum) values of the heavy metals were Pb: 0.065 (0.012~0.171)mg/kg, As: 0.004 (ND~0.021)mg/kg and Cd: 0.43(0.08~1.09)μg/kg. In chiken, mean (minimum~maximum) values of the heavy metals were Pb: 0.060(0.016~0.211)mg/kg, As: 0.008 (ND~0.042)mg/kg and Cd: 0.42 (0.02~3.80)μg/kg. In duck, mean (minimum~maximum) values of the heavy metals were Pb: 0.070 (0.011~0.157)mg/kg, As: 0.005 (0.001~0.011)mg/kg and Cd: 0.87 (0.15~3.75)μg/kg. This results will be used as a basic data for the future legislation on the regulation and control of heavy metal in meats.
