To study the optimum packing conditions of shredded vegetables, we investigated the changes of gas contents and nutritional components of the PK film packed shredded pimentoes (Capsicum annum L.). 1. The contents of CO_2 in LDPE 0.04 ㎜ was more higher than any other treatments. In the relationship of the contents of CO_2 and the storaging days, we obtained the following regression model equation of predicting the CO_2 contents. The aim of this paper is to form and to operate EQM, to say education quality management. In order to achieve the above stated purpose, the paper hypothesizes that there are similarities between enterprises and colleges in quality management. The basic method of the paper is systematic approach, modifies TQM, which is total quality management. The result is that EQM program must form and operate the feedback system for teaching and learning effect, the PSMT(project, self-study, media, team unit style teaching and learning) as a new teaching and learning method, and the digital system as an advanced mechanism, in education quality management.
온도; pH, 염분 내성 및 충격이 개불, Urechis unicinctus 유생에 미치는 영향

The effect of different temperature, salinity and pH on survival rate of Urechis unicinctus's swimming embryo was examined to develop the method for the efficient seed production. In addition to, this study was designed to investigate the possibility of pollutant marker diagnosis of marine pollutions by the change in different temperature, salinity and pH. Treatment was carried out whit different temperature (5˚C, 10˚C, 17˚C, 20˚C, 25˚C,), salinity(0‰, 10‰, 20‰, 30‰, 34‰, 40‰) and pH(4, 6, 7.2, 8.2, 9.2, 10). All the swimming embryo of the temperature experiment was survived within all experiment section, but the others experiment were not. At the temperature-shock and tolerance experiment ranging from 5˚C to 25˚C the survival rate was occurred: 75%, 95%, 100%, 100%, 50%, at the ph-Shock experiment ranging from 4 to 10, the survival rate was occurred: 0%, 50%, 85%, 100%, 60%, 0%, at the pH-tolerance experiment ranging 4 to 10 the survival rate was occurred : 0%, 75% 90%, 100%, 80%, 0%, and at the salinity-shock experiment ranging from 0% to 40% the survival rate was occurred : 0% 10% 90% 95% 100% 0% , at the salinity-tolerance experiment ranging from 0% to 40% , the survival rate was occurred : 0% 0% 90% 100% 100% 0%. These results suggest, that the survival rate of larvae of Urechis unicinctus was the highest at 17˚C, 34%. pH8.2 and this Urechis unicinctus could be live at the zone of euryceious and zone of euryhalines
감의 脫澁處理中 Pectin 含量과 Texture의 變化

This experiment was made to investigate the changes of the contents of acetaldehyde, alcohol, tannin, and to study the texture changes of persimmon in relation to the contents of pection during the removal of astringency by CO_2. 1. During the removal of astringency of persimmon fruits, the contents of soluble tannin showed the rapid decrease in high concentration of CO_2, but the contents of ethanol and acetaldehyde showed the rapid increase in all treatments. 2. The contents of W.S.P. increased, but H.S.P. decreased in all treatments. 3. All texture paramenters of persimmon fruits except springness and adhesiveness were decreased druing the removal of astringency. 4. The contents of W.S.P. were good correlated with the changes of hardness in all treatments.

This study was performed to examine the drying characteristics of the potato at various drying conditions. The eqilibrium moisture content was in the range of 0.058-0.207 g/g. The critical moisture content and diffusion coefficient were in the range of 3.151-4.210 g/g, 0.622 × 10 exp (-5)㎝/sec respectively. Comparing with other food stuffs, the activation energy (6.0 ㎉/㏖) of the potato appeared low. The drying curve equation and the drying rate equation were obtained as follows: Y=4.34×e^-0.553t dy/dt= -2.40×e^-0.553t When the initial moisture content of the potato is known, this equation can be used to predict the drying rate of the potato.

市販 ?茶를 20℃에서 相對濕度를 달리하여 저장하면서 吸濕特性을 조사하였다. ?茶의 吸濕速度는 貯藏相對濕度가 높을수록 컸으며 貯藏時間이 경과함에 따라 점차 감소하였다. ?茶의 等溫吸濕曲?은 전형적인 Sigmoid 형태를 나타내었으며 相對濕度가 일정할 때 저장시간과 흡습속도와의 관계에서 다음과 같은 式을 구할 수 있었다. ln(dw/dt)=nln(t) + ln c B.E.T. 式에 의해 구한 ?茶의 單分子層水分含量은 7.01~7.87%로 나타났다. 貯藏時間과 吸濕速度關係式에서 구한 계산치 수분함량과 실측치수분함량을 비교한 결과 거의 유사한 경향이었다. The sorption characteristics of green tea were investigated at 20℃ with various relative humidities. Particle size showed little effect on the sorption behavior of green tea. At low relative humidities below 57%, the sorption equilibrium were easily attained, but a high relative humidities above 75%, the sorption equilibrium were not reached after 10 days. From the estimation of sorption rate at arbitrary humidities an empirical equation was obtained; Ln(dw/dt)=nLn(t) + Ln c The monolayer moisture contents of green tea obtained by B.E.T. equation were found to be 7.87%(powder) and 7.01%(whole), respectively.
식용 및 약용식물 추출물과 화합물이 흰쥐의 간장조직에서 과산화지질 생성에 미치는 영향

31종의 식물추출물과 10종의 화합물들을 대상으로, 흰쥐의 간장조직 중 과산화지질 생성 효과를 시험관내에서 살펴보았다. 추출물 중 달래의 70% 아세톤 추출물은 10^(-2), 10^(-1), 1㎎/ml 농도에서 각각 3%, 17%, 33%, 동일한 농도에서 근대 아세톤 추출물은 27%, 46%, 58%, 갓의 아세톤 추출물은 38%, 49%, 62% 그리고 고추잎의 메타놀 추출물은 30%, 45%, 56% 과산화지질 억제작용을 나타내었다. 10종의 화합물에 대한 과산화지질생성에 미치는 영향으로서, quercetin, quercitrin 및 isorhamnetin은 10^(-6)㎎/ml에서 각각 21%, 4%와 14% 그리고 10^(-2)㎎/ml 농도에서는 각각 45%, 16% 및 28%의 지질과산화 억제작용이 관찰되었다. We have studied the effect of 31 extracts and 10 components from some edible and medicinal plants on the formation of lipid peroxide in the liver homogenate of rat in vitro. The 70% acetone extracts of Allium tuberosum, Beta vulgaris var. cicla and Brassica juncea var. integrifolia, and methanol extract of Capsicum annuum decreased the formation of lipid peroxide by 33%, 58%, 62% and 56% at the concentration of 1㎎/ml, respectively. And these four extracts inhibited the lipid peroxidation at the concentration of 10^(-1)㎎/ml by 17%, 46%, 49% and 45% respectively. Among the component tested, quercetin, quercitrin and isorhamnetin reduced the formation of lipid peroxide by 45%, 15% and 28% respectively at the concentration of 10^(-2)㎎/ml.
서양고추냉이 추출물과 분리한 Kaempferol 배당체들의 브로모벤젠 처리 흰쥐에서 in Vitro 지질과산화억제효과

Three flavonoid glycosides have been isolated from the aerial part of Armoracia rusticana P. (Cruciferae) in Korea and identified by means of spectral analysis as $kaempferol-3-O-{\beta}-D-xylofuranoside(l)$, $kaempferol-3-O-{\beta}-D-galactopyranoside(2)$ and $kaempferol-3-O-{\beta}-D-xylofuranosyl(1\rightarrow2)-b{\beta}-D-galactopyranoside(3)$. When 1 mg/ml of the methanol extract from the aerial part of this plant was added, lipid peroxide formation in the bromobenzene-treated rat liver decreased by 64%. Among the components isolated from title plant, compounds 2 and 3 reduced the formation of lipid peroxide by 16% and 39% respectively at the concentration of ${10}^{-1}$ mg/ml.
압흔 주위 변형 양상 분석을 통한 구조용 강의 Luders strain 평가

The continuous indentation test was used to evaluate Lu¨ders strain of various steels such as ultra-fine grained steels and AISI 1020 steels. Inhomogeneous pile-up deformation in the indentation test could be related to Lu¨ders strain in tensile test. The pile-up deformation could be characterized as a localized flow phenomena. We analyzed the pile-up area as the parameter of Lu¨ders strain, and described the pile-up amount more quantitatively by considering the relation between plastic-zone size and pile-up radius. Finally, we derived the master curve for some steels, which included the ratio of elastic modulus to hardness as plastic-zone size. For various steels in this study, the values of Lu¨ders strain obtained from the master curve are consistent with those measured from the tensile test.
