Some properties of crude protease produced by Falmmulina velutipes during its growth in a rice straw medium were investigated. The results are summarized as follows : 1. The optimum pH of crude protease was 8.0 and the stable pH ranged from6.5 to 9.0. 2. The optimum temperature of crude protease was 50℃ and the thermal stability was below 50℃. Its activity was completely inactivated in 10 minutes at 70℃. 3. The activity of crude protease was inhibited by Hg^+, Ag^+ and Cd^#, and was activated by Ba^#.

About 198 research papers and patents on kimchi(Korean fermented vegetable food) published in the years of 1991-1996 were collected and analyzed for the classification and review. This review article covers the results and discussions by the classified topics on the natures and kinds of raw materials, fermentation and related microorganisms, processing and preservation. kimchi packaging, kimchi as functional foods, biochemical changes and quality. And also general consideration on kimchi and some needs in the future were discussed. This is the second research work on the classification and review of the kimchi literatures by the continuation of the first review article published in 1991.

中山間地(標高 250m)에서 참깨 播種適期와 晩播限界期에 關한 硏究

In order to determinate the optimum plating time and its limitation, an eary harvest and high yeld sesame varety-Poong Nyun Ggae-was cultivated on the semi-mountainous area of 250 meter above sea level. The variety was cultivated with a single and double cropping system. The single cropping plots were covered with transparent polyethylene film on 1st , 11th and 21th in May and the double cropping plots were covered with PE film on 5th, 15th, 25th in June respectively and on 5th July. The results obtained are as follows; Yield of the plot planted on 1st May was 59kg/10a. In compaorisn with this, yields were increased 16% and 25% in plots planted on 11th and 21th May, respectively. The optimum planting time was considered near 20th May for the single cropping system and it should be considered before 15th June for the double cropping system in the semimountainous area.

우리나라 근해에 자생하는 해조류인 미역(Undaria pinnatifida)과 같은 파래(Enteromorpha compressa)의 지방산 조성을 계통적으로 분석코저 silicic acid column chromatography와 gas liquid chromatography에 의해 검토한 결과 미역과 파래의 총지방질 함량은 각각 1.8%와 0.7%이었으며 총지방질중 중성, 당, 인지질의 조성비는 미역은 3.5 : 74.1 : 22.4%이었고 파래는 33.1 : 48.4 : 18.5%이었다. 미역과 파래 총지방산의 조성은 각각 saturates 28.5%와 33.2%, monoenes 9.8%와 10.8%, polyenes 61.7%와 56.0%로 고도 불포화지방산의 함량이 가장 많은 비중을 차지하고 있었다. ω-3계열의 지방산은 총지방산 조성 중 각각 27.4%와 24.7%를 차지하고 있었으며 특히 당지질에서 그 함량이 가장 높은 분포를 보였다. 미역과 파래의 함유되어 있는 ω-3계열 지방산의 함량은 C_(18:4)(15.9%와 17.1%), C_(20:5)(10.6%와 6.0%) 등에서 높았다. The contents of total lipids from Korean marine benthic algae Miyeok(Undaria pinnatifida) and Pare(Enteromorpha compressa) were 1.8% and 0.7% on the dry basis, respectively. They were fractionated by silicic acid column chromatography and identified by gas liquid chromatography. The ratios of neutral lipids, glycolipids and phospholipids in total lipids were 3.5 : 74.1 : 22.4 in Miyeok and 33.1 : 48.4 : 18.5 in Pare. Total fatty acids in Miyeok and Pare were composed of 28.5 and 33.2% of saturates, 9.8 and 10.8% of monoenes, 61.7 and 56.0% of polyenes, respectively and the polyunsaturated fatty acid was the most predominent component. ω-3 polyunsaturated fatty acids were C_(18:4)(15.9 and 17.1%) and C_(20:5)(10.6 and 6.0%).
