This study was carried out to develop a new product using Cheonggukjang (fermented soybean product) and sub-ingredients(lactic acid bacillus powder, chlorella, lactose, green tea). Fresh Cheonggukjang was dried by a infrared drying (50℃, 36hr) and powdered by a roll mill. The powder was mixed with sub- ingredients and then moulded as tablet type by a press moulder. The pH of tablet was low with the addition of lactobacillus and total sugar content was high with the addition of lactose. Disintegration, absorption capacity and textural properties of tablet were not affected by the addition of any sub-ingredient. Color of non-added tablet was yellow to red, but changed to green when chlorella was added. Sensory properties(color, taste, flavor, chewiness, hardness, acceptability) were not affected by the addition of sub-ingredients. The results indicate that functional healthy tablet could be made from Cheonggukjang powder and various sub-ingredients.

동충하초를 음료로 개발하기 위한 전단계로 열수추출공정을 반응표면분석법으로 최적화하였다. 추출시간에 따라서는 큰 변화가 없어 추출온도와 농도를 요인변수로 하여 실험을 수행하였다. 열수추출액의 당도(brix)와 고형분 함량은 농도에 따라서 큰 영향을 받는 것으로 나타났다. 추출액의 탁도와 총당, 환원당 및 단백질 함량은 낮은 농도에서 추출수율이 좋은 것으로 나타났다. 각 반응변수 모두 농도에 대하여는 유의성이 있는 것으로 나타났으며 수립된 이차 희귀식에 대한 적합성 결여분석 결과 수립된 반응표면 모형이 통계적으로 유의하였다. 동충하초 열수추출에 있어 고형분함량은 2.0∼2.4 %, brix 1.5∼1.8, 총당 114∼120 ㎍/g, 환원당 10.5∼11.0 ㎍/g 그리고 단백질함량 110∼115 ㎍/g인 영역을 만족하는 조건은 추출온도 95∼100℃, 농도 4.0∼4.1%로 결정할 수 있었다. This study was conducted to optimize hot water extraction process of cordyceps militaris for development beverage. Optimal condition for hot water extraction was investigated with changes in extraction concentration and temperature by response surface methodology. The content of soluble solid was effected with concentration. The efficiency of extraction for turbidity, total sugar, reducing sugar and protein increased with low concentration. The response variables had significant with concentration and the established polynomial model was suitable (p>0.05) model by lack-of-fit analysis. Optimal extraction conditions as the limited conditions of 2.0∼2.4% extractable solids, 1.5∼2.0% brix, 114∼120 ㎍/g total sugar, 10.5∼11.0 ㎍/g reducing sugar and 110∼115 ㎍/g protein were 95∼100℃ and 4.0∼4.1% of concentration.
상피성 종양에서의 Cyclooxygenase-2 발현에 대한 면역조직화학적 관찰

To evaluate cyclooxygenase-2 (COX-2) expression in various epithelial neoplasms, immunohistochemical study was done to 65 cases of various carcinomas and tubular adenomas. This study included 10 cases of colonic adenocarcinom, 10 cases of gastric adenocarcinoma, 10 cases of pulmonary carcinoma, 10 cases of mammary carcinoma, 5 cases of hepatic adenocarcinoma, 5 cases of urinary bladder carcinoma and 5 cases of prostatic carcinoma. 10 cases of tubular adenoma in colon and stomach. The frequency of immunohistochemical COX-2 expression of varying degree in various carcinomas was observed, and the immuno-histochemical intensity showed increasing tendency by degree of differentiation. The immunohistochemical expression of COX-2 was observed in tubular adenoma of stomach and colon, and strongly expressed in metastatic colonic adenocarcinoma than primary carcinomas of various sites. Therefore, the above results suggest that COX-2 expression in various carcinomas may be related to the early and late stage of tumor progression.

Purpose: To statistically evaluate the contributing role of the 3 radiographic factors (Obliquity, Asymmetry, Joint deviation) of the hallux valgus interphalangeus with comparison to the normal control group. Materials and Methods: The study is based on the standing foot AP radiographs of the 77 feet (56 patients) of the hallux valgus interphalangeus out of 119 feet of randomly sampled patients of the age range 20 to 60. Fractures or other foot disorders have been excluded. Obliquity, asymmetry and joint deviation factors formed by proximal and distal phalanges of hallux are measured by one observer and evaluated the statistical significance of the contribution of the 3 factors to the hallux interphalangeal angle (HIA). Results: The average age of the patients were 36.0 years old and average HIA was $14.5^{\circ}{\pm}2.8^{\circ}$. Obliquity was measured $4.8^{\circ}{\pm}2.90^{\circ}$, asymmetry $8.2^{\circ}{\pm}3.28^{\circ}$ and joint deviation $2.0^{\circ}{\pm}1.85^{\circ}$. All 3 factors showed the statistical significance as the contributing factors to the HIA and among them, the asymmetry played the biggest role (p<0.05). Conclusion: Hallux interphalangeal angle is formed by 3 radiographic factors (Obliquity, Asymmetry, Joint deviation), and among them the asymmetry factor plays the biggest role.

Bitter melon has many nutrients and is excellent for many physiological functions. Here, bitter melon was dried by various methods (sun drying, hot air drying, freeze drying, and infrared drying), and the quality characteristics and antioxidant activity of the dried bitter melon were determined to improve the utilization of bitter melon as a food. The freeze-dried bitter melon had the highest soluble solid content (1.27 °Brix), and reducing sugar content of dried bitter melon was 220.33-247.13 mg/100 g. The pH and acidity of the dried bitter melons were 4.38-4.79 and 0.60-0.69%, respectively. The total amino acid content of the freeze-dried bitter melon was the highest, and the content of arginine, which has a bitter taste, was the highest in all the samples. Hot air-dried bitter melon had the highest polyphenol content, while the flavonoid content was the highest in infrared-dried bitter melon. However, there was no significant difference between the different drying methods. Antioxidant activity was significantly higher in hot air drying and infrared drying than in the other drying methods. Thus, freeze-dried bitter melon had superior physicochemical characteristics while infrared-dried and hot air-dried bitter melon had high antioxidant activity. Therefore, a proper drying method can be selected according to the requirement either as food materials or for processing of bitter melon.
