송이(Tricholoma matsutake Sing.)는 맛과 향기가 뛰어난 고급 기호식품으로서 연간 5,000만 불 이상 수출되어온 고부가가치 작물 중의 하나이다. 본 연구는 냉동송이의 해동시에 유출되는 송이즙의 생리활성을 탐색하고자 항산화 활성, 혈전용해 활성, 항고혈압 활성 등을 측정하였다. 그 결과로 송이즙의 DPPH 라디칼 소거능은 1.0 mg/mL의 농도에서 $48.3{\pm}2.2%$였으며 농도의존적으로 그 활성이 증가하는 경향을 보였다. Fibrin-plate법을 사용하여 알아본 송이즙의 혈전용해 활성은 양성대조구인 plasmin(1 unit/mL)에 비해 약 2배가량 높은 활성을 보였다. 송이즙의 $IC_{50}$은 $1.03^{\circ}$Brix로 나타났으며 양성대조구로 사용된 captopril의 경우에는 약 45.7 nM이었다. 이러한 결과를 종합해 볼 때, 송이즙은 우수한 생리활성을 보임으로써 좋은 가공원료로 이용할 가치가 있음을 확인하였다. Pine mushroom (Tricholoma matsutake Sing.) is an expensive and highly prized delicacy in Korean and Japanese cuisines with its unique flavor and functional properties. The biological activities of pine mushroom juice (soluble solid contents $4.3^{\circ}$Brix) were evaluated using different tests; DPPH radical scavenging assay for its antioxidant activity, fibrin plate method for fibrinolysis and angiotensin I converting enzyme (ACE) inhibitory activity for anti-hypertensive effect. Free radical scavenging activity of the pine mushroom juice was $48.3{\pm}2.2%$ at the concentration of 1.0 mg/mL. The fibrinolytic activity of pine mushroom was about 2 times greater than that of plasmin used as positive control and the activity increased dose-dependently. The pine mushroom juice inhibited ACE activities dose-dependently and $IC_{50}$ value of ACE activity was $1.03^{\circ}$Brix. These results suggest that pine mushroom is a healthy delicacy.

8주령의 FIB golden Syrian 햄스터에게 동맥경화 유발식이와 함께 녹차 추출물을 각각 500 혹은 1,000 ㎎/㎏ b.w.의 양을 매일 경구투여하면서 6주간 사육하였을 때 햄스터 체내의 지질대사와 대동맥 내에서의 지방의 축적 정도에 미치는 영향을 조사하였다. 실험 결과 녹차추출물의 경구투여는 동맥경화유발식이를 섭취하는 햄스터의 혈중 중성지방과 총콜레스테롤치를 농도의존적으로 감소시켰고, 대동맥궁내애서의 지방의 축적을 예방하였다. 특히 녹차추출물 1,000 ㎎/㎏ b.w. 투여는 동맥경화유발식이를 섭취한 햄스터에서 간장내의 LDL receptor mRNA level을 증가시키는 경향을 보였다. 이러한 결과로 볼 때 녹차 추출물의 투여는 동맥경화유발식이를 섭취한 햄스터의 혈중 콜레스테롤치를 감소시키고 LDL receptor의 발현을 증가시킴으로써 동맥경화를 예방할 수 있음을 보여주었다. This study examined the effects of green tea extract supplementation (500 or 1,000 ㎎/㎏ b.w. per day) in conjunction with an atherogenic diet (10% coconut oil (w/w), 0.1% cholesterol) on plasma lipid composition, regression of pre-existing foam cells, and on the mRNA levels of hepatic HMG-CoA reductase and LDL receptor. Compared to groups fed only with the atherogenic diet, the addition of green tea extract to atherogenic diet-fed groups significantly down-regulated plasma triglyceride and total cholesterol levels, dose-dependently. Supplementation of 1,000 ㎎/㎏ b.w. of green tea extract with the atherogenic diet induced significant up-regulation of both HMG-CoA reductase and LDL receptor messenger RNA levels in liver as compared to the group receiving green tea extract supplementation at 500 ㎎/㎏ b.w. The F1B hamsters fed the atherogenic diet had greater foam cell accumulation compared to those fed a normal diet, or the atherogenic diet supplemented with green tea extract. Regression of fatty streak lesions was achieved by feeding the green tea extract supplemented the atherogenic diet. In conclusion, green tea extract supplementation prevented atherosclerosis in fat- and cholesterol-fed hamsters and this effect was associated with down-regulation of plasma cholesterol and up-regulation of hepatic LDL receptor expression.
광역 스펙트로그램과 심층신경망에 기반한 중첩된 소리의 인식과 영향 분석

Many voice recognition systems use methods such as MFCC, HMM to acknowledge human voice. This recognition method is designed to analyze only a targeted sound which normally appears between a human and a device one. However, the recognition capability is limited when there is a group sound formed with diversity in wider frequency range such as dog barking and indoor sounds. The frequency of overlapped sound resides in a wide range, up to 20KHz, which is higher than a voice. This paper proposes the new recognition method which provides wider frequency range by conjugating the Wideband Sound Spectrogram and the Keras Sequential Model based on DNN. The wideband sound spectrogram is adopted to analyze and verify diverse sounds from wide frequency range as it is designed to extract features and also classify as explained. The KSM is employed for the pattern recognition using extracted features from the WSS to improve sound recognition quality. The experiment verified that the proposed WSS and KSM excellently classified the targeted sound among noisy environment; overlapped sounds such as dog barking and indoor sounds. Furthermore, the paper shows a stage by stage analyzation and comparison of the factors’ influences on the recognition and its characteristics according to various levels of noise.

The oxidative stabilities of perilla oil increased as roasting temperature and time increased. Induction period of the perilla oil from unroasted perilla seed was 3.9 days, but that of the oil from perilla seed roasted at 210℃ for 30 min was 55 days. The electron donating ability(EDA) on DPPH by perilla oils increased as the roasting temperature and time increased. EDA of the unroasted perilla oil was 24% but that of the perilla oil roasted at 210℃ for 30 min was 64%. These results suggested that the reducing compounds were formed during the roasting process. The fluorescence intensity in perilla oil increased as the roasting temperature and time were increased. This result indicated that Maillard reaction has occurred during the roasting process and the reaction products seemed to provide stability to perilla oil.
