The purpose of this study is to investigate the manufacturing process for mass production of korean traditional cookies to be supplied to consumers with cheap price. Selected items for mass production is Yoomilkwa such as Yackwa, Maejackwa which prefered by consumers, and Chasookwa which was presented at royal party in Yi-Dynasity. Standard mixing ratio of food material, manufacturing process, and machinery needed in each manufacturing process were suggested by the items of korean traditional cookies. Manufactured goods which is produced in large quantities by machinery are Yackwa model I, II, Maejackwa model I, II, III, and Chasookwa model I, II.
고등학교 급식시설 운영실태 및 ATP Bioluminescence를 이용한 위생상태 조사연구

An investigation was conducted to evaluate the hygienic status of 53 high school foodservice systems in Gyeonggi province by using hygiene management guide checklist, ATP bioluminescence assay of food utensils were conducted during process. The 5 hygiene management guide checklist groups about personal hygiene, cooking facilities control, cross contamination control, cook and storage control, management control were checked by experts and had good grades but there were some inadequate behaviors on observation. Total cleaning levels were inadequate, including hand, rubber gloves, aprons, knives, food tray, machine and instruments. The possibility of cross contamination is also noted in handles for refrigerators, ovens, food dryers, hand washing. It was also noted that there were too much work on the nutritionist and cook, additional personnel need to be added. lack of space, deterioration of facilities were identified in some high school foodservice systems. ATP bioluminescence assay was conducted on surface of food facilities, ATP ranged 1,393±5,041.2 RLU on yellow gloves, 244±258.7 RLU on pink gloves, 3,780±11,418.6 RLU on apron, 49,056±62,831.4 RLU on refrigerator grip, 41,422±61,259.8 RLU in oven, 31,407±41,344.9 RLU on hand cleaning board.
아동복지시설 미취학 아동들의 신체 발육과 영양 실태 조사

아동복지시설 7곳의 미취학아동 70명을 대상으로 신체발육과 영양실태를 조사한 결과 다음과 같은 결론을 얻었다. 조사대상 아동들의 신장, 체중 및 머리둘레는 한국 소아 발육 표준치보다 다소 적었으며 가슴둘레는 거의 비슷한 경향으로 나타났다. 따라서 이들의 체격발달이 일반 한국 소아의 발육에 비해 다소 떨어짐을 알 수 있다. 또한 식이섭취조사결과 한국인 영양 권장량에 비해 모든 아동에게서 칼슘의 섭취량이, 또 일부 아동에게서 열량, 철분, 비타민 B₂의 섭취량이 다소 낮아서 이들 영양소의 섭취를 보충해야 할 것으로 판단된다. 조사대상 아동들의 생화학적 검사결과 철분 결핍 발현율은 hemoglobin으로 판정시에는 12.9%, hematocrit으로 판정시에는 18.6%이었으며 혈청 철분 정상 판정기준 미만인 아동들은 총 인원의 4.3%에 해당하였다. 혈청 총 단백은 정상인 것으로 판명되었다. 따라서 영양상태가 취약한 아동복지시설에서의 영양 관리가 효율적으로 이루어지기 위해서는 영양관리 담당 전문 인력의 확보 및 여러 사회기관에서의 급식비에 대한 보조지원으로 아동들이 충분히 영양섭취를 할 수 있는 적극적인 지원이 있어야 할 것으로 사료된다. This study was conducted to investigate nutritional status and anthropometry of preschool children in orphanage. The height, weight and head circumference of preschool in orphanage were lower than that of Korean growth standards, but not chest circumference. The average daily intakes of Ca by all subjects, the average daily intakes of Fe, riboflavin and ascorbic acid in some subjects were lower than those of the Korean RDA. The prevalence rates of iron deficiency assessed by hemoglobin, hematocrit were found to be 12.9% and 18.6%, respectively. When assessed with serum iron, the prevalence rate of iron deficiency was 4.3%. Serum total protein and serum albumin level were turned out to be normal. Considering this results of the survey, financial help from social work organization for meal service and more aggressive efforts should be made to improve nutritional status of the subjects in orphanage.
