        Evaluation on the Quality of Fresh, Conventionally Heated and Ohmically Heated Mulberry Fruit Juice

        The aim of this study was to establish the superiority of ohmic heating over conventional heating for the sterilization of mulberry juice. Heat treatment of fresh juice significantly reduced the concentration of soluble solids, lowered the pH, and lowered the reducing sugar content (p<0.01). Color measurements showed decreases in the L and a values and increases in the b, H and C values after heat treatment, although the total color differences were smaller after ohmic heating than after conventional heating of fresh juice. The antioxidant capacities, such as reducing power, FRAP, and DPPH, decreased in the order of fresh juice, ohmically heated juice and conventionally heated juice. Furthermore, the anthocyanin, flovonoid, and total antioxidant capacities of the juices significantly decreased in the same order. Sensory evaluations showed no difference between fresh and ohmically heated mulberry fruit juice excluding off-flavor, whereas conventionally heated juice received significantly lower evaluations. The microbial counts were zero in the juice after either heat treatment. Thus, ohmic heat treatment can be effectively used to sterilize fresh mulberry juice to obtain good shelf life with minimal physicochemical, color, antioxidant and sensory deterioration.

        국내 시판 누룽지의 물리화학적 특성 및 항산화 성질 연구

        Purpose: Nurungji is a traditional Korean food made by yellowish scorched rice. After getting gelatinization of rice, a thin crust of scorched rice will usually be left in the bottom of the traditional cooking pot. In this study, physicochemical characteristics and antioxidant properties of five commercial nurungji products (CNP1, CNP2, CNP3, CNP4, and CNP5) were evaluated. Methods: Physicochemical properties of the five commercial nurungji products were evaluated with AOAC method. The antioxidant activities were assessed using the 1,1-diphenyl-2-picryl hydrazyl (DPPH), 2,2-azinobis-(3-ethyl-benozothia zoline-6-sulfonic acid)(ABTS), ferric reducing antioxidant power (FRAP), and reducing power assays. Results: Water content was the highest in CNP3, followed by CNP1, CNP2, CNP5, and CNP4. Crude ash content of all nurungji was less than 1%. In Hunter color parameter, the significantly highest a value (redness) and b value (yellowness) were measured in the CNP4 product, meanwhile the lowest in CNP3 (p<0.05). The nurungji products of CNP4 and CNP5 had the significantly higher content in total polyphenols and total flavonoids, compared to those of other products. CNP3 and CNP2 had the lowest in total polyphenols and total flavonoids, respectively. CNP4 and CNP5 products showed the significantly higher values in antioxidant activities, whereas CNP3 had the lowest activity. Conclusion: The high value of antioxidant activities in CNP4 and CNP5 might have been affected primarily by the total polyphenols with increasing browning color during the heat treatment.

        누에(Bombyx mori) 번데기 및 한약재의 In Vitro 에스트로젠 활성

        In this study we report on the estrogen activity of silkworm pupa and herb extracts in vitro. The estrogenic activity of these resources was investigated by competition binding assays with estrogen receptor $\alpha(ER{\alpha})\;or\;ER{\beta}$, and viability of MCF-7 cells, a human breast cancer cell line. Saturation ligand-binding analysis of $ER{\alpha}\;and\;ER{\beta}$ revealed that all plant extracts competed with estrogen ligand for binding to both ER subtypes with a similar preference and degree and competed stronger with ligand for binding to $ER{\beta}\;than\;to\;ER{\alpha}$. The highest $ER{\alpha}-binding$ sample was silkworm pupa aqueous extract The highest $ER{\beta}-binding$ sample was silkworm pupa oil. These samples were further tested for bioactivity based on their ability to regulate cell growth rate in ER(+) breast cancer cell line, MCF-7 cells. Our studies showed that silkworm pupa, soritae, sesame, yam, pueraria, malt, ginseng, Polygonum multiflorum, and Curcuma longa significantly stimulated the growth of MCF-7 cells (P<0.05). In summary, these results suggested that silkworm pupa and herbs might be useful as potential phytoestrogens.

        우리나라의 생명공학기술 수준은 선진국을 100으로 볼 때 65정도로 열세이지만 분야별로 강세를 보여온 발효기술은 90정도로 선진국에 근접해 있으며 특히 아미노산 발효기술은 높게 평가를 받고 있다. 21세기 선도산업으로 꼽고 있는 생물산업의 경쟁력 우위를 점하기 위해선 더 많은 기술적ㆍ경제적인 투자가 절실하다.

The purpose of this study is to examine the domestic and foreign cases using recycled building materials and to analyze the characteristics and suggest the improvement value and future improvement direction. For this, the preceding research was conducted. second, I examined domestic regulations. third, Analyzes the characteristics of domestic and foreign cases, and revealed the values and limitations. Finally, we sugest a direction for domestic activation in the future.

        바슐라르의 흙(terre)의 상상력과 교육의 의미

        인간과 세계에 함께 존재하는 자연은 늘 변함없이 그 공간에 존재함에도 불구하고, 자연을 사유하는 인간의 의식에 따라 그 가치가 시대마다 변화하였다. 기술 문명의 발달로 이룩된 시각이미지의 과잉은 눈에 보이는 아름다움만을 제한적으로 인식하게 함으로써, 실재적 자연으로부터 인간을 분리하였다. 20세기 프랑스 철학자 가스통 바슐라르는 자연과 인간의 관계가 균형을 이루어 함께 공존하는 삶에 대해 강조한다. 그에게 자연은 상상을 위한 원초적인 공간이며, 모든 에너지의 근원이 되는 공간이다. 그는 자연의 대표적인 물질인 물, 불, 공기, 흙의 사원소를 중심으로 그의 상상력 이론의 토대를 마련한다. 흙은 자연적 원소 중 인간의 삶을 영위해 나가는 기반이 되는 물질이며 공간이다. 흙의 상상력은 내면에 숨겨져 있는 뿌리의 원형과 만나게 하는 상상력이며, 자연과의 교감 속에서 우리의 존재를 자각하고 각성하게 만드는 상상력이다. 즉 겉으로 보여지는 표면화된 속성에서 탈피하여 보이지 않는 내면을 조망하게 함으로써 눈에 보이는 아름다움을 넘어선 승화와 초월에 이르게 해주며, 자연이 주는 느림의 시간성 속에서 내밀의 휴식을 통해 느끼는 생명력과 자기 회복으로 개인의 실존뿐만 아니라 자연과 함께 공존하는 삶에 대해 통찰하게 만들어 준다. Although nature has always coexisted with humans, its value in human consciousness has changed over time. The excess of visual images achieved by technological civilization separated humans from real nature by limiting their recognition to visible beauty. The 20th-century French philosopher Gaston Bachelard emphasizes a life in which nature and humans coexist in balance. For him, nature is a primal space for imagination and a space that is the source of all energy. Emphasizing the four elements of matter, he lays the foundation for his theory of imagination, centered on the natural elements of water, fire, air, and earth (soil). Earth is a material, and space is the basis for human life among the natural elements. The imagination of earth is the imagination that allows us to meet the prototype of the root hidden inside, and it is he imagination that awakens, and in turn awakens our existence in communion with nature. In particular, it leads to sublimation and transcendence beyond visible beauty by viewing the invisible. In addition, it gives insight into not only the existence of the individual but also life coexisting with nature through the vitality and self-recovery from inner rest in the slow temporality of nature.

        토지 과세평가의 불형평성 원인에 관한 실증분석

        Studies on the equity of assessment can be divided into those related to testing only the existence of its inequity through ratio analysis or regression analysis and those related to investigating the cause for it. But most of them are at the level of confirming only the presence or absence of the existence of inequity, and studies for elucidating its cause have poorly been conducted. Therefore, this study attempted to elicit policy implications necessary to provide the clue for unfair taxation by making clear the cause for assessment inequity through empirical analysis. For this purpose, analysis was conducted for data on sales prices applied to the sale comparison method at the time of assessing the publicly announced price of reference land in 2014 and on the publicly announced individual land price of Jan 1, 2014 corresponding to it. In the analytical method, this study attempted to investigate the analytic method, the setting of variables, analysis results and the like through an investigation of previous studies relating to the assessment inequity. And based on the results of investigation, it attempted to set dependent variables(the assessment ratio, PRD) and independent variables(variables related to inequity) and then to conduct regression analysis. Results of analysis showed that as a rise in land price became large, as the percentage of the elderly population was high and as the fiscal self-reliance ratio was high, the assessment ratio was low. And it was found that variables such as a rate of rise in land price, the rate of land transaction, and the assessment ratio had a significant effect on the PRD indicator.

        G. Bachelard의 “일상적 공간”의 교육적 의미: 이미지와 상상력을 중심으로

        The everyday space is composed in the rhythm of daily life repeated. So it is easy to be valued as a space of trivial and insignificant boredom. However, everyday space is where we have all of our experiences and traces of life. It is a place where we can give an opportunity to know our existence and to think about the meaning of real life. Bachelard thought of everyday space as a vibrant dynamic image space and a space of infinite imagination. For him the everyday space is a space of intimity that contains the archetype of his life and a space of remembrance that contains the aesthetic experience of admiration. It is also a meaningful space that opens the opportunity to sense the inner resonance through natural, archetype traces that are not destroyed. The thought of everyday space makes attention to the inherent value, human value, not the external value of space. In today s situation, in which the external value is emphasized by the domination of the visualized image, Bachelard s thought of everyday space can provide an opportunity to examine the mental image and the internal image. It also suggests a need to reconsider the importance of everyday space.
