        재래흑염소의 형태적 특징 및 생육특성

        본 연구는 우리나라 고유 재래흑염소 유전자원인 당진계통, 장수계통 및 통영계통의 특성을 조사하였다. 재래흑염소 형태적 특징을 조사한 결과 장수계통과 통영계통의 모색은 전신 흑색을 나타내었으며 당진계통은 흑색 또는 흑갈색으로 긴 털의 특징이 뚜렷하게 나타났다. 일부 개체에서 이모색이 출현하였고 당진계통, 장수계통 및 통영계통 순으로 그 비율이 높게 조사되었다. 재래흑염소의 계통별 육염과 뿔의 유무를 조사한 결과 통영계통에서만 육염이 출현하지 않았으며 당진계통의 암염소와 숫염소에서 각각 1개체씩 무각의 특성을 보였다. 또한 귀의 길이와 꼬리의 길이는 암염소와 숫염소가 거의 비슷한 경향을 보였으나 뿔의 길이와 수염의 길이는 숫염소가 암염소에 비해 긴 것으로 조사되었다. 재래흑염소의 체중을 조사한 결과 생시체중은 평균 2 kg이며, 숫염소가 암염소 보다 조금 높은 경향을 보였으며 3개월령의 이유 시 체중은 모든 계통에서 숫염소가 암염소 보다 조금 높았으며 12개월령의 체중도 암염소가 계통별 16.5~19.3kg, 숫염소가 18.3~22.2 kg으로 높게 조사되었다. 재래흑염소의 체형을 조사한 결과 계통별 체장과 체고는 숫염소가 암염소보다 약간 컸으며, 흉폭과 흉위는 계통 및 성별간의 차이가 나타나지 않았다. 본 연구 결과는 재래종 염소와 교잡종 염소를 구분할 수 있는 기준 마련과 나아가 재래흑염소 개량을 위한 기초자료로 이용될 것이다. This study aims to provide basic data for investigating the phenotypic traits and growth characteristics of Korean native black goats. The Jangsu and Tongyoung strains were shown to have black hair, while the Dangjin strain was shown to have black or dark brown long hair. Only the Tongyeong strain was found to have no wattle and one goat each from the females and males of the Dangjin strain was found to have no horns. The lengths of the ears and tails were similar for the female and male goats, while the lengths of horns and beards were longer in the male goats. The birth weight was 2 kg on average, with that of male goats tending to be slightly heavier than that of the females. Weights at the weaning period were found to be slightly heavier for the males. Also, at 12 months, the weights of the male goats by strain were shown to be heavier than that of the females. The body length and depth by strain were found to be higher for the male goats, while no differences in the chest width and girth between the strains or gender were found. These findings are expected to be used as a basis for differentiating between native and crossbred Korean black goat strains and for improving Korean native black goats.

        Biometric identification of Black Bengal goat: unique iris pattern matching system vs deep learning approach

        Objective: Iris pattern recognition system is well developed and practiced in human, however, there is a scarcity of information on application of iris recognition system in animals at the field conditions where the major challenge is to capture a high-quality iris image from a constantly moving non-cooperative animal even when restrained properly. The aim of the study was to validate and identify Black Bengal goat biometrically to improve animal management in its traceability system. Methods: Forty-nine healthy, disease free, 3 months±6 days old female Black Bengal goats were randomly selected at the farmer’s field. Eye images were captured from the left eye of an individual goat at 3, 6, 9, and 12 months of age using a specialized camera made for human iris scanning. iGoat software was used for matching the same individual goats at 3, 6, 9, and 12 months of ages. Resnet152V2 deep learning algorithm was further applied on same image sets to predict matching percentages using only captured eye images without extracting their iris features. Results: The matching threshold computed within and between goats was 55%. The accuracies of template matching of goats at 3, 6, 9, and 12 months of ages were recorded as 81.63%, 90.24%, 44.44%, and 16.66%, respectively. As the accuracies of matching the goats at 9 and 12 months of ages were low and below the minimum threshold matching percentage, this process of iris pattern matching was not acceptable. The validation accuracies of resnet152V2 deep learning model were found 82.49%, 92.68%, 77.17%, and 87.76% for identification of goat at 3, 6, 9, and 12 months of ages, respectively after training the model. Conclusion: This study strongly supported that deep learning method using eye images could be used as a signature for biometric identification of an individual goat.

        Sea tangle (Laminaria japonica) supplementation on meat quality of Korean native black goat

        The supplementation effects of sea tangle powders were determined for the meat quality in Korean native black goats. A total 90 castrated male black goats at 3-month age were divided into 3 dietary treatment groups: control (basal diet + mineral block), T1 (0.3% sea tangle feeding with the basal diet), T2 (0.9% sea tangle feeding with the basal diet). At 9-months feeding, 10 goats per treatment group were slaughtered, and the longissimus dorsi muscle samples were vacuum-packed, and subsequently analyzed for physicochemical evaluations. Analysis revealed decrease in the shear force and TBARS values of meat in the sea tangle dietary groups (p < 0.05). The T2 group exhibited increased levels of unsaturated fatty acids such as C16:1, C18:1, C18:2, and C20:4 (p < 0.05). The content of free amino acids with desirable taste such as aspartic acid, glutamic acid, glycine, histidine, and serine were higher in T2, whereas alanine content was higher in both sea tangle dietary groups, as compared to control (p < 0.05). These data indicate that feeding dietary sea tangle as an alternative mineral source results in an improvement in the physicochemical profiles of goat meat.

        Feeding Black Bengal Goat under Intensive Management : Milk Feeding in Pre-weaned Kids

        Despite higher fecundity, Black Bengal goat generally has lower milk production, which is often insufficient for their multiple kids. However, milk requirement of Black Bengal kids is poorly defined. Present trial was thus designed to determine the requirement and intake of milk of pre-weaned Black Bengal kids in relation to their growth rate age and sex. Thirty, one month old Black Bengal kids of either sex divided into two groups were allocated to two groups, suckling alone (T1) or suckling along with teat-bottle feeding of milk (T2). Ten kids were allocated for the T1 and 20 kids were allocated for the T2. Digestibility of milk was also determined in T2 animals. Average daily consumption of milk, milk energy and milk N were 773 and 722 g, 1,170 and 1,093 kJ/kg $W^{0.75}/d$ and 1,552 and 1,462 mg N/kg $W^{0.75}/d$, respectively. During 9 weeks trial period, male kids had significantly higher live weight (4.32 vs. 4.20 kg; p<0.01) and intake of milk (773 vs. 722 g/d; p<0.05), energy (117 vs. 1,093 kJ/kg $W^{0.75}$/d; p<0.01) and N (1,552 vs.1,462 mg/k $W^{0.75}/d$; p<0.01) than the female. Milk consumption and the corresponding milk energy and milk N intake increased linearly up to 5th week of the trial, which, then decreased quadratically up to 9th week i.e., up to the weaning. Overall milk DM intake during this period was 2.58% (range 1.5-3.0%) of live weight or about 36 g/kg $W^{0.75}/d$ (range 29-45 g/kg $W^{0.75}/d$). Pre-weaned Black Bengal kids of about 4.5 kg weight, growing at the rate of 60 g weight daily requires at least 750 g milk daily. Daily live weight gain, estimated as the regression between the live weights over time, was 60 g ($r^2$=0.99) and 55 g ($r^2$=0.99), respectively, for the male and female kids. Efficiency of milk energy utilization for weight gain ranged from 0.67 to 0.84 (mean 0.81) for the male kid and 0.75 to 0.91 (mean 0.82) for the female kids. Efficiency of milk protein utilization for weight gain ranged from 0.46 to 0.70 (mean 0.61) for the male kid and 0.51 to 0.81 (mean 0.64) for the female kids. Additional teat-bottle feeding of suckling kids had no significant effect on their growth rate (54vs. 57 g/d). Average digestibility of milk DM, OM and N was 98.85, 98.99 and 98.69%, respectively and they were slightly (p>0.05) higher in the male than the female kids. Results suggest that the requirement of energy and protein and their utilization efficiency in Black Bengal kids is not different from that of the other breeds of goat.

        In vitro maturation and fertilization of prepubertal and pubertal black Bengal goat oocytes

        Oocytes retrieval, in vitro maturation (IVM) and fertilization (IVF) efficiency are inevitable steps towards in vitro production of embryos. In the present study, these parameters were investigated in the ovaries of prepubertal (n = 31) and pubertal (n = 61) black Bengal goats obtained from a slaughterhouse. Nuclear maturation was evaluated upon aspiration and following IVM in TCM-199 (Earle’s salt with L-glutamine and sodium bicarbonate) for 27 h at 39oC under 5% CO2 in humidified air. The oocytes retrieval and efficiency (mean ± SD) per prepubertal and pubertal goats were 5.2 ± 0.6 and 6.8 ± 0.6, and 77.3 ± 0.1% and 80.5 ± 0.6%, respectively. Anaphase I - telophase I stages differed significantly (7.3 ± 0.8 vs. 2.6 ± 0.2, p < 0.05) between the two groups of goats. After IVM, the percentages of metaphase II were significantly higher (66.3 vs. 60.3, p < 0.05) in pubertal goats than in their prepubertal counterparts. The percentages of normal in vitro fertilization (IVF) in Fert-Tyrode’s albumin lactate pyruvate of pubertal goat oocytes did not differ between Percoll and swim-up sperm separation methods (36.7 ± 0.9% vs. 32.7 ± 1.3%, p > 0.05). Furthermore, sperm capacitation by heparin alone or in combination with ionomycin did not lead to a significant increase in the normal fertilization rate (34.8 ± 1.7 vs. 32.2 ± 1.5%, respectively) in the oocytes of pubertal goats. In conclusion, the ovaries of pubertal black Bengal goats obtained from the slaughterhouse could be used for in vitro embryo production. However, further optimization of the IVM and IVF techniques are necessary for satisfactory in vitro embryo production.

        Changes in Goat productivity and Economical Efficiency at Feeding Systems by Castrated Growing Korean Native Goat(Capra hircus coreanae)

        This study was conducted to determine grazing intensity of growing Korean native goats(Capra hircus coreanae) on mountainous pasture. It was carried out to obtain basic information for improvement of mountainous pasture management and establishing feeding system of Korean native goat. A total of 20 goats were grouped by feeding systems [A mountainous pasture grazing group (Concentrated feed of 1.5% body weight, treatment 1, T1, n=10) and a barn feeding group (TMR, treatment 2, T2), n=10] to conduct study from April to September. The average forage productivity of the mountain pasture was $500.9{\pm}61.41kg/ha$. The average dry matter intake in T1 was 0.64 and the calculated grazing intensity was 21 head/ha. In productivity, when the two treatments(T1, T2) were compared, the dry matter intake was about two to three times the difference. The average daily gain per day during the experiment was 63.3 in the mountain pasture and 120 g in barn feeding. When grazing, considering mountainous pasture productivity it is necessary to increase the productivity through proper feeding. The feed costs of black goats raised by grazing on the grassland in the same period showed an average 75% reduction compared to barn feeding. As a result of this study, it can be expected that a considerable reduction of feed costs can be expected in the breeding of Korean native black goat using the mountain pasture.

        흑염소 추출액 제품에서 품질 지표의 도출에 관한 연구

        흑염소 추출액 제품의 품질특성을 조사하고 품질지표를 도출하기 위하여 흑염소 추출액의 성분배합비, 제조공정, 일반성분 등을 조사하였다. 부위별 흑염소 육은 단백질 함량이 20.2∼21.6%이었고 지방함량은 1.9∼3.3% 사이였다. 제품의 성분 배합 비율은 흑염소 원료육 30∼40%, 한약재 및 기타 부재료 5∼20%, 정제수 40∼60%이었다. 흑염소 추출액의 조단백질 함량은 3.5∼6.1%로, 흑염소 원료육 함량과 높은 상관관계(r=0.88, p<0.001)를 보인 반면, 빠르고 쉽게 측정 할 수 있는 가용성 고형분 함량은 한약재 등 부원료의 함량과 높은 상관관계 (r=0.87, p<0.001)를 보였다. 두종류의 유통품에서 10^1∼10^2 cfu/ml의 세균이 검출되어 최종제품의 가압멸균 공정이 필요함을 나타내었다 To assess the quality characteristics of black-goat meat extracts and to develop their quality index, the ingredient ratio, manufacturing process and general composition of black-goat meat extracts were investigated. A partial meat of black-goat had high protein content (20.2∼21.6%) and low lipid content (1.9∼3.3%). The crude protein contents, 3.5∼6.1%, of black-goat meat extracts had a high correlation (r=0.88, p<0.01) with black-goat meat content and the soluble solid content had a high correlation (r=0.87, p<0.01) with the subsidiary material content. Two commercial products had total bacteria of 10^1∼10^2 cfu/ml, showing the necessity of pressure sterilization of final process.

        Effect of Supplemental Selenomethionine on Growth Performance and Serum Antioxidant Status in Taihang Black Goats

        An experiment was conducted to evaluate the effect of different levels of supplemental selenomethionine (Se-Met) on growth performance and serum antioxidant status in Taihang Black goats. Fifty 16-week-old goats with an average body weight of 12.5${\pm}$0.5 kg were randomly assigned to five treatments fed a basal diet (0.049 mg Se/kg DM) supplemented with 0 (control), 0.10, 0.30, 0.50 and 1.00 mg of Se/kg DM (form Se-Met) for 80 days. Average daily gain and feed efficiency were higher (p<0.05) in the groups supplemented with 0.30 to 0.50 mg Se/kg DM compared with the control group. However, Se-Met supplementation had no influence on average daily feed intake (p>0.05). Se-Met supplementation significantly increased (p<0.01) the activity of glutathione peroxidase enzymes (GSH-Px) and superoxide dismutase (SOD) in serum. The group supplemented with 0.50 mg Se/kg DM had the highest activity of GSH-Px compared with other groups (p<0.05). Serum SOD activity was higher (p<0.05) in goats supplemented with both 0.30 and 0.50 mg Se/kg DM than in control goats and goats supplemented with 1.00 mg Se/kg DM. Serum glutathione-S-transferase (GST) activity and malondialdehyde (MDA) concentration were significantly decreased (p<0.05) in goats supplemented with 0.30, 0.50 and 1.00 mg Se/kg DM compared with control values. These results indicated that Se-Met supplementation markedly improved the antioxidant status in goats. Blood Se concentration increased linearly (p<0.001) and quadratically (p<0.001) as the level of supplemental Se-Met increased. The concentration of Se in the control diet (0.049 mg Se/kg DM) did not satisfy the Se requirement in goats as indicated by reduced growth rate, feed efficiency, activities of GSH-Px and SOD in serum, and blood Se concentrations. In conclusion, it is recommended that 0.30 to 0.50 mg of Se/kg DM from Se-Met (total diet Se of 0.349 to 0.549 mg/kg DM) be supplied in the diet of Taihang Black goats to enhance growth performance and improve antioxidant status.

        흑염소불고기의 조리법의 표준화에 관한 연구

        The present research was designed to collect recipe of set up a standard recipe and analyze the nutrients of broiled black goat meat (a kind of native local foods in Busan and south province). The results of the study are summarized as follows. The recipe for goat(lamb) meat was recorded in Sanlimkyounggae and Jungbosanlimkyounggae between 1715 and 1827. The goat meat was explained as food for health, rejuvenation and recuperation Since late 1800, it has been utilized for such use. The flavor of broiled black goat meat is influenced by seasonings, fruit juice, heating treatment and cooker. And it also could be affected by the method of slaughter and the sex of the goat. There are lot of element in seasoning. Red pepper paste, garlic and ginger holdback the bad smell and make the taste better. Onion help to retain the water and improve the flavor. Starch syrup, sugar and sesame oil make the meat smoother, glossier and more tasty. The meat is usually roasted on grill over charcoal. It helps to remove or suppress the bad smell and make the taste better. Softness and scent of the meat depend largely on the way to butcher. Female goat meat tastes smoother and smells better. Fruit juice also improve the softness of the meat. Energy per 100g of the `broiled black goat meat' is 170㎉. There are protein (23g), fat(2.4g), Ca(159㎎), Fe(1.1㎎) and so on. Amino acid is mainly comprised of essential amino acid such as cystine, lysine, leucine, and arginine. Fatty acid consists primarily of unsaturated fatty acid like oleic acid, linoleic acid.

        Effects of Intensive Alfalfa Feeding on Meat Quality and Fatty Acid Profile of Korean Native Black Goats

        The aim of this study was to determine meat quality characteristics and fatty acid composition of Korean native black goats (KNBG) finished on intensive feeding of alfalfa (ALF) and conventional feeding of commercial concentrate pellets (CCP) with lowenergy common grasses. Ten KNBG (12 months old) were divided into two groups and subjected to either ALF or CCP treatments. The goats were slaughtered after 6 months of feeding with experimental diets to investigate meat quality characteristics and fatty acid compositions of longissimus lumborum muscle. There were no significant differences in proximate chemical composition, collagen, or myoglobin content between ALF and CCP groups of goats. Meat color, water-holding capacity, or tenderness was not significantly different between the two groups either. However, proportions of monounsaturated fatty acids and polyunsaturated fatty acids were significantly (p<0.05) different between the two groups. The proportion of oleic acid was significantly (p<0.05) higher in ALF goat whereas proportion of linoleic and arachidonic acids were significantly (p<0.05) higher in CCP goat. Results suggest that KNBG finished with intensive feeding of alfalfa could produce goat meat with desirable fatty acids for human diets.
