      • Kim,Seong-soo : Possiblity of Low Salting Process in Gae-Woo Jeot(Salted and Fermented Gastrophoda) and Changes in Fatty Acid Composition during Fermntation 低鹽化 可能性 檢討 및 熱成중 脂肪酸 組成의 變化

        To establish the way of processing of Gae-Woo jeot which used abalone intestine that has not been systematically used compare to its characteristic taste and fame as main ingredient and to develop as a local tourist good, the change of constituents the quality of salted fish products suring Gae-Woo jeot fermentation were examined. The results are as follows. 1. In the organoleptic test, Gae-Woo jeot which fermented through 65 days were dominant and the group of 105 salkt concentration were better than that of 20%. It was the best of 10% salted products to add small abalone. Both law salted(10%) and high salted (20%) Gae-Woo jeot were similar in general constityents, nutrients and texture. 2. Compositions of highly unsaturated acid were farely high to 45.6% and 46.1% in small abalone added froup and top sheel added group respectively. during 3 months fermentation low decreasing rate of 3~4% was shown. EPA(eicosapentaenoic acid) was approximately 7~8% and DHA(docosahexaenoic acid) was extremely low to be less than 0.3%. 3. In the changes General composition and pH, pH was within range of 4~5.5, 9~12% in protein, 3~5% in total sugar, 0.5~1% in lipid and approximately 1% in ash. 4. Gae-Woo jeot can be made with 10% low salting method, and 10% group gets all the better for taste, small abalone adding is recommended. 5. When low salt fermented fish of 10% is processed, it is highly recommended to put sorbitol, ethyl alcohol, lactic acid or other humectant for better taste and longer storage and good quality food additives must be developed for tourist and presently applied mil ordering transportation must be sought.

      • 트레드밀 운동시 흡기근 테이핑이 폐활량에 미치는 영향

        이 연구는 트레드밀 운동과 키네시오 테이핑의 효과에 따른 폐활량의 변화를 알아보기 위해 26명의 비흡연자가 참가하였으며 키네시오 테이핑을 적용하지 않은 그룹과 키네시오 테이핑을 적용한 두 그룹으로 무작위로 배정하고 각 군들을 주 3회 6주간의 트레드밀 훈련을 실시하였다. 실험 전과 후, 스파이로미터를 사용하여 키네시오 테이핑의 적용 따른 폐활량 변화 효과를 측정하였다. 이 연구의 결과를 종합해보면 키네시오 테이핑을 적용 그룹에서 적용하지 않은 그룹에 비해 FVC, FEV1에서 유의한 증가를 보였다. 이러한 결과는 건강한 성인에서 키네시오 테이핑을 적용한 경우 키네시오 테이핑을 적용하지 않고 트레드밀 운동을 한 경우보다 폐활량의 향상에 효과적이라고 생각되어진다. The purpose of this study was to investigate the variation of vital capacity(VC) according to the effects of kinesio taping with treadmill exercise. Twenty-six non-smokers were participated in this research and these subjects were randomly assigned into two groups. To measure the VC variation effects of kinesio taping, spirometer was used. The collected data were analyzed statistically by using a paired Mauchly test and repeated measure ANOVA. The results of this study were as follows; A group: treadmill with kinesio taping B group: treadmill without kinesio taping. Between A and B, there were significant differences. In the case of A group, there was 11.66% increase of VC, during 3 weeks experiment(p<.01). In the case of B group, there were significant differences, 3.35% increase of VC, during 3 weeks taping intervention(p<.01). After 6 weeks experiment, the improvement of VC shown a significant difference with intergroup (p<.05). From this result, it was revealed that treadmill exercise with kinesio taping was effective to improve VC to healthy adult than treadmill exercise without kinesio taping.

      • 패류의 동결에 관한 연구 : 1. 소라의 동결

        To obtain the basic data for utilizing topshell, the changes of quality as pH, drip, free water content, water holding capacity, texture and color difference in shelled and frozen products during storage was studied. It was noticed that the pH of all frozen products (-10℃ and -35℃) were not changed markedly. Thaw exudate(drip) and free water content were increased as the storing period prolonged. The content of thaw exudate was risen slightly while free water content for all frozen products was increased notably marked 2.5 times in comparison with raw ones after 3 months storage. The water holding capacity for all frozen products were fell down steadily, it showed down 10% level at final stage of storage on the base of raw materials. It was revealed that the hardness and toughness were leveled up until the time of 2 months storage and then decreased moderately. There was not a significant change in elasticities and the degree of cohesiveness droped for all frozen storing periods. The color differences, expressed as L value mere reduced, the values of a and b were not changed markedly while the values of ΔE was increased as the frozen peried was extended.

        To evaluate the in-vivo effects of mitomycin-C-polyglycolic acid composite(MMC-PGA) the disk: shaped composite were implanted into the peritoneal cavity of the Sprague-Dawley rats. The pathologic changes were examined at various time points up to 12 weeks. Initially the soft tissue around the inserted disks showed capillary congestion at 3 days. Inflammatory infiltrates with foreign body giant cells appeared from the 2nd week and reached peak response at 6-8 weeks. These reaction diminished prominently at 12 weeks. No specific pathologic change was found in the liver, the kidneys, and the heart. The above results suggest that the MMC-PGA composite can serve as a new device for intraperitoneal chemotherapy of various types of cancers.

      • 저염농도의 자리발효식품의 가공에 관한 연구

        This study was carried out to obtain the basic data on salted and fermented damsel fish(Jari-Jeot), one of the important traditional marine foods in Cheju-Do. and also to seek salt lowering method for the development of a new local tourist food. The results are as follows : The best organoleptic results were obtained after 60 days' fermentation for 25.0, 12.5 and 10% of salt-added group, and around 45 days for 7.5 and 5% of salt-added group. In raw fish ingredient IMP was abundant which marked 17.7 μmole/g while in fermented fish hypoxanthine was predominant but ATP and ADP were not detected after 30 days' fermentation. Sixteen kinds of free amino acids were detected and identified in Jari-Jeot instead of 17 kinds of those in raw sample. The abundant amino acids in Jari-Jeot after 60 days' fermentation were lysine. alanine, glutamic acid, glycine and leucine, and those were consisted of approximately 60% of the total free amino acids. During fermentation the content of TMAO was decreased gradually and no TMAO was detected after 75 days' fermentation while that of TMA was increased during fermentation up to 45 days' and decreased afterwards. The fatty acid of low-salt Jari-Jeot was composed of 31.9% of saturated acids, 13.2% of monoenoic acids and 54. 9% of of polyenoic acids. While the content of EPA in polyenoic acids was 1.9%, that of DHA was 23.0%. In order to lower salt concentaration of fermented damsel fish, additon of Pediococcus halophilus culture as a starter together with 10-12.596 of salt, 4-5% of KCI, and 2% of glucose gave as good quality as traditionally made Jari-Jeot.

      • 貝類의 冷凍에 關한 硏究 : 4. 오분자기의 凍結貯藏溫度에 따른 品質의 變化 4. Quality Changes of Abalone, Haliotis diversicolor japonica, by the Freezing Storage Temperatare

        오분자기를 보다 效果的으로 利用하기 위한 基礎資料를 얻기 위하여 오분자기를 脫殼, 凍結한 후 凍結貯藏中의 品質의 變化를 實驗하였다. 凍結貯藏中 pH는 거의 變化가 없었고 drip量 조금씩 增加하였으며 揮發性鹽基窒素도 조금씩 增加하였으나 -35℃의 경우 3個月까지는 좋은 鮮度를 維持하였다. 保水力은 점차 減少하여 貯藏 3個月후에는 -10℃에서 貯藏한 경우가 10%, -35℃는 약 7%까지 減少하였다. hardness는 -10℃와 -35℃ 다 같이 1個月까지 增加하다가 以後 급격하게 減少하였으며 toughness는 계속 減少하였다. cohesiveness는 -10℃의 경우 큰 變化가 없었으나 -35℃의 경우는 2個月에 급격히 減少하였으며 elasticity는 -10℃와 -35℃의 경우 모두 큰 變化가 없었다. 色調의 變化에서 a값은 큰 變化가 없었으나 L값은 계속 減少하였고 b값과 ΔE값은 계속 增加하였다. 組織學的 觀察의 結果 貯藏溫度가 높은 것일수록 氷結晶의 成長과 근속끼리의 응집이 현저함이 確認되어졌다. To obtain the basic data for utilizing abalone, Haliotis diversicolor japonica more effectively the quality changes as pH, drip, water holding capacity (WHC), texture, color difference and histological observation in shelled and frozen products during storage were carried out. It was noticed that the pH of frozen products (-10℃ and -35℃) were not changed markedly, thaw exudate (drip) and volatile basic nitrogen (VBN) were slightly increased as the storing period prolonged but fairly good freshness was maintained until 3 months in the storage of -35℃. The water holding capacity for all frozen products were steadily decreased to show 10% and 7% down at -10℃ and -35℃ respectively with 3 months storage on the base of raw materials. With all frozen products it was observed that hardness was increased up until the 1 month storage period and then suddenly dropped while toughness was decreased steadily. NO significant changes in cohesiveness with the -10℃ storage were observed but with -35℃, it was dropped rapidly after 2 months storage while elasticity was not changed markedly for all frozen products. The color difference expressed as a value was not changed markedly while the L value was decreased steadily. The b and ΔE value were increased continually as the frozen period was extended. It was confirmed that both the growth of ice crystal and aggregates of muscle bundle were prominent at the higher storage temperature in histological observation.

      • 新梢頂端培養에 의한 대추나무(Zizyphus jujuba Miller)의 callus로부터 植物體 再分化

        Organogenesis from callus induced from shoot tip in vitro cultured was examined with using different strength of MS medium containing various concentration of different plant growth regulators alone and its combination in jujube (Zizyphus jujuba Miller). Callus induction was favorable in the treatment of concentration of 2,4-D 1.0, 0.3mg/1 adding on MS medium. Favorable shoot proliferation from callus subcultured on medium for shooting appeared in the treatment of 0.5mg/1 BAP alone adding on 1/2 MS medium. For rooting induction 1/2 MS medium supplemented with the combination of 0.5 or 1.5mg/1 IBA and 0.1, 1.0mg/1 BAP was most effective but 1/2 MS medium containing IBA alone had little effect. In the end, Search out a role of India Ink as a new paradigm in 21 century. It is dominant view that a possibility of modern art is not found in a scientific rationalism or technical reliance but mental heritage of East cultural area, moreover, it is obvious that an anti-occidental rationalism can found. in the Eastern spiritual culture. If inner world of india ink, related to the trend of Eastern spirit, for example, meditative characters, introspection etc, interfered by the confucianism, a literary man doctrine as past period. It will be feeble absolutely. A way of expression with india ink is always intended to abstractional thinking but idea of past period is not constant merit permanently, furthermore, from a Art point of views, depend on private decision and potential ability. Consequently, it is necessary that succession and reconsideration about traditions must be repeated constantly.

      • 급성 SO_2중독이 임신흰쥐 및 태자간에 미치는 영향에 관한 조직화학적 연구

        The purpose of present study was to clarify the effect of sulfur dioxide exposure on enzymatic activities of the liver in pregnant and fetal rats by histochemical method. Female pregnant rats (Sprague-Dawley strain) were used in this study. The animals were exposed to 50ppm SO_2 in gas. chamber for 5 minutes, 15 minutes, 30 minutes and 60 minutes and were sacrificed on 17 days, 19 days and full term of gestation period and fetal liver were taken. The changes of enzymatic activities of cytochrome oxidase, acid phosphatase, alkaline phosphatase and lactate dehydrogenase were observed by histochemical stainings. Significant data have been summarized as follows; 1. In the pregnant rat, 19th fetal rat and full term fetal rat, the enzymatic activities of cytochrome oxidase and lactate dehydrogenase of SO_2 exposure group decreased in comparison with the control group. 2. In the pregnant rat, 19th fetal rat and full term fetal rat, the enzymatic activities of acid phosphatase of SO_2 exposure group increased in comparison with the control group. But alkaline phosphatase has showed a no significant changes in comparison with the control group. 3. In the 17th fetal rat, the changes of enzymatic activities of cytochrome oxidase and lactate dehydrogenase of SO_2 exposed liver showed a mild positive activity as it was in the control group. However, acid phosphatase activities has showed a negative activity in the both group. 4. The enzymatic activities of cytochrome oxidase, acid phosphatase, alkaline phosphatase and lactate dehydrogenase of SO_2 exposed liver showed a significant changes in the pregnant rat in comparison with the fetal rat.
