        프로바이오틱스를 이용한 발효 깻잎 아이스크림의 품질특성

        본 연구는 Lactobacillus acidophilus KCTC 3164 균주에 의해 발효된 깻잎 발효 추출물(5%, 10%, 15%, 및 20% w/v)을 기능성 첨가제로 사용하여 깻잎 발효물이 첨가된 아이스크림을 제조함이 목적이다. 깻잎 발효물이 첨가된 아이스크림의 물리·화학적 특성(색상, 점도, pH, 총 산도, 녹는 속도, 오버런) 및 항산화 활성을 평가하였다. 깻잎 발효물 첨가량이 증가할수록 아이스크림의 색상에 영향을 주었으며, 아이스크림의 녹는 속도도 증가하였다. 이에 반해 점도는 점차적으로 감소하는 경향을 나타내었다. 깻잎 발효물 첨가량이 높을수록 오버런은 점진적으로 증가하였고, pH는 유의하게 감소하였으며, 총 산도는 증가하였다. 깻잎 발효물이 첨가된 아이스크림의 DPPH 라디컬 소거능과 총 폴리페놀 함량은 깻잎 발효물 첨가량이 많아질수록 유의적으로 증가하는 것으로 나타났다. 본 연구결과 10% 깻잎발효추출물을 함유한 아이스크림 실험군이 높은 오버런, 낮은 녹는 속도, 원하는 점도, 높은 DPPH 라디컬 소거능과 총 폴리페놀 함량을 보여 기능성 아이스크림으로의 잠재력이 있는 것을 알 수 있었다. The purpose of this study is to manufacture ice cream with perilla leaves fermented extract(5%, 10%, 15%, and 20% w/v) fermented by Lactobacillus acidophilus KCTC 3164 strain as functional additives. The physical and chemical properties(color, viscosity, pH, total acidity, melting rate, overrun) and antioxidant activity of ice cream with perilla leaves fermented extract were evaluated. The addition of perilla leaves fermented extract affected the color of the ice cream, and the melting rate increased with increasing addition of perilla leaves fermented extract. In contrast, viscosity showed a gradual decrease. Overrun increased gradually with higher levels of perilla leaves fermented extract, while pH decreased significantly, and total acidity increased. The DPPH radical scavenging activity and total polyphenol content of ice cream with perilla leaves fermented extract significantly increased with higher concentrations of fermented perilla leaves extract. The results of this study indicate that the ice cream sample with 10% fermented perilla leaves extract has a potential as a functional ice cream since it exhibited high overrun, a low melting rate, the desired viscosity, and high DPPH radical scavenging activity and total polyphenol content

        클라이언트의 동적 버퍼 제어 신호에 의한 서버의 프레임 생략 전송 정책

        Most policies of VOD services are mainly studied about server system, and make no touch on clients buffer stabilization which is the basis of guaranteeing playback quality and playing without cut off. In this paper, we proposed a skipping frame transfer policy that can sending dynamic buffer control signal to server in accordance with clients buffer state of starvation or overrun, and server transfers a skipped frame to client after receive the control signal. And through a simulation, we show the suggested policy is more efficiency on playback quality by buffer stabilization which is by preventing loss and miss for receiving frame due to grow worse client buffer state. VOD 서비스의 대부분 정책들은 주로 서버 시스템에 대해 연구되고 있고, 단절감 없는 재생과 재생질 보증의 근간이 되는 클라이언트의 버퍼 안정화 문제에 대해서는 언급되지 않고 있다. 본 논문에서는 클라이언트의 버퍼 상태가 스타베이션 또는 오버런인 경우 서버에 동적인 제어신호를 발하고, 서버에서는 수신된 제어 요구 신호에 따라 프레임을 생략하여 전송하는 정책을 제안한다. 그리고 시뮬레이션을 통하여 제안 정책이 클라이언트의 버퍼 상태 악화로 인한 프레임의 미수신 및 손실을 방지하여 클라이언트의 버퍼를 안정화시켜 재생질 보증에 더 효율적임을 보인다.

        Overrun in ice cream, it is the % increase in volume of ice cream greater than the amount of mix used to produce that ice cream, because injection of air bubbles during freezing due to ice formation and the spread of defined volume. 40-50% of the case is a suitable overrun for frozen yogurt. The organization is determined by the size of ice particles, the size of bubble and its distribution and the size of the particles not frozen in the frozen yogurt. The experimental results of characteristics of the overrun were summarized by changes in environmental factors in the process of producing frozen yogurt, such as temperatures and mixing rate of producing materials and air.

        In this paper, we propose client buffer stabilizing algorithm which guarantees synchronization and media continuity against variability of media data and network load in the distributed multimedia environments. The proposed algorithm stabilizes the client buffer by transfering control information messages, which includes the control volume and the control time of media stream calculated on the basis of the current status of a client, to a multimedia server. The client predicts the receiver's resources and network status along with a pre-determined period, and generates control messages whenever overruns or starvations are expected to occur. The values of control messages are calculated by the status of client, the media stream transfer mechanism of multimedia server, and the status of the network. The characteristics of the proposed algorithm are proventing the low quality of media streams when it is dropped excessively and stabilizing the multimedia system when the variability of network loads is high.

        학습제어를 이용한 지게차 자동변속기 상향 변속품질 개선

        Recently, automatic transmissions caused a good improvement in the shift quality of a forklift. An advanced shift control algorithm, which was based on TCU firmware, was applied with embedded control technology and microcontrollers. In the clutch-to-clutch shifting, one friction element is released and the other friction element is activated. During this process, if the release and application timings are not synchronized, an overrun or tie-up occurs and ultimately leads to a shift shock. The TCU, which measures only the speed of the forklift, inevitably applies the open-loop shift control. In this situation, the speed ratio does not change during the clutch fill. The torque phase occurs until the clutch is disengaged. In this study, an offline shift logic of the learning control was proposed. It induced a synchronous shift when the learning control progressed. During this process, the reference current trajectory of the release clutch was corrected and applied to the next upshift. We considered the results of the overrun/tie-up characteristics of the upshift performed immediately before. The vehicle test proved that the deviation in shift quality, which was caused by the difference in the mechanical characteristics of the clutch, could be improved by the learning control.

        Recently, automatic transmissions realize good shift quality by implementing advanced shift control algorithms in TCU firmware using embedded control technology with microcontrollers. In clutch-to-clutch shifting in which one friction element is released and the other friction element is activated, if the release and apply timings are not synchronized, shift shock occurs due to overrun or tie-up. The TCU, which measures only the speeds, inevitably applies the open-loop shift control because the speed ratio does not change during the clutch fill and torque phase until the clutch is disengaged. In this study, an offline shift logic of learning control is proposed. It induces synchronous shifting as learning progresses by correcting the reference current trajectory of the release clutch applied to the next upshift based on the results of the overrun/tie-up characteristics of the upshift performed immediately before. The vehicle test proved that the shift quality deviation caused by the difference in the mechanical characteristics of the clutch can be improved by the learning control.
