        녹차 추출물과 차잎 첨가에 따른 김치의 품질 특성 비교

        This study was conducted to investigate the kimchi quality of the addition of green tea extract and green tea leaf. Kimchi was examined for pH, titratable acidity, the changes in the number of microorganisms, color, sensory evaluation. The pH and titratable acidity of kimchi at the addition of 5%, 1% of green tea extract and green tea leaf were higher and lower than those of control kimchi. The number of total microorganism at 21 days were detected much more in the kimchi added green tea extract and green tea leaf than in control. The number of coliforms up to 7 days of fermentation were detected. And those at 14-21 days were not detected but those of 28 days were detected. The number of coliforms at 28 days were most lowest in the kimchi added green tea extract 3%. The number of lactic acid bacteria were detected more in the kimchi added green tea leaf. As a result of sensory evaluation during fermentation, the kimchi added green tea extract 5% was the highest score in carbonated taste, texture and overall quality. As the result of correlation between sensory characteristics and mechanical characteristics. it was found that sensory characteristics of sour taste is negatively related to the mechanical characteristics of L values, while it is positively related to the texture. The a values is negatively related to the sensory characteristics of overall quality. The b values is positively related to the sensory characteristics of sour taste.

        가정 호흡재활 프로그램 관련 연구 논문 분석

        Purpose: The purpose of this study was to analyze the trend of research on the use of home-based pulmonary rehabilitation. Method: Using Medline and CINAHL search engine, experiemental research, titled as 'home-based pulmonary rehabilitation' and 'chronic lung disease', statistics were collected. The total 29 experimental studies published between 1981 to 2000 were selected and analyzed according to the ATS guidelines. Result: 1) The study samples in research were mostly of men, whose lung function was moderate to severe. 2) The total period of the intervention program varied from 5 to 12 week. The program included excercise intervention and educational intervention. Psychosocial intervention was minimal. 3) The outcome of the home-based pulmonary rehabilitation had been measured mostly by physical aspects. Quality of life and cost were less frequently measured. 4) In terms of effectiveness of the home based pulmonary rehabilitation program, physiologic outcome, such as lung function and hematologic markers, there was more 'no effect' than 'positive effect', whereas there was more 'positive effect' in decreasing dyspnea, improving excercise capacity, and improving quality of life. Conclusion: Based on these findings, future research on home-based pulmonary rehabilitation should be emphasized and provide standardized protocol, including psychosocial intervention, and analyses on cost and quality of life.

      • 볼링운동이 중년여성의 요추, 대퇴골밀도 및 체력에 미치는 영향

        The purpose of this study is to investigate the effects of bowling exercise for bone density and physical fitness on women in her forties, This study selected middle-aged women were divide into bowling-exercise group and non-exercise group. The results are as follows. First, there was non any significant difference in bone density of lumber and femur(femoral neck, Ward's triangle, trochanteric region, Total) in terms of statistics, group. Second, there was not any significant difference in all physical strength items(the back strength, grip strength surjent jump, balance) in terms of statistics, Otherwise, bowling exercise group showed higher numerical value than non-exercise group. Third, there was statically riot any significant difference in all physical strength items(trunk flexion, stomach crunches, side step), Otherwise non-exercise group showed higher numerical value than bowling exercise group. The forth, significant correlation was found in bone density of lumber and femur, the maximum quantity of oxygen inhalation, back strength grip strength stomach crunches, side step, and balance. In conclusion bowling exercise are effective weight bearing exercise which can prevent and delay the vanishment of bone and promote physical strength. Furthermore, periodical bowling exercise shows that it could have positive effect against osteoporis prevention of postmenopausal women. Stretching and opposite movement will be effective before and after the exercise because it is asymmetric exercise, However, previous survey on materials including a female hormone, the intake of calcium and eating habits is required th analyze the measured for bone density and the study on quality and quantity of definite and quantitative exercise can be necessary.

        어린이집 급식에 대한 식품 기호도 및 만족도 조사 연구

        This study was conducted to investigate mean height, weight, food preference and satisfaction of 231 children in preschool in four different regions(Susung-ku, Jung-ku, Nam-ku, Dalseo-ku) of Taegu. Mean height of the children was increased by priority of Jung-ku, Dalseo-ku, Susung-ku and Nam-ku, and mean weight was of Jung-ku, Susung-ku, Dalseo-ku and Nam-ku. In food preference, boiled rice had the highest score of cooked rices in all of the different regions, jajangmyun had the highest score of noodles in Susung-ku, Jung-ku and Dalseo-ku. Cake had the hightest score of breads in Susung-ku and had significantly difference all the kind of other regions. Songpyun had the highest score of rice cakes in all four regions. Jangjorimhad the highest score of jorim foods in all four regions, but anchovy and green pepper jorim had the lowest. Toasted lavor and steamed chicken had the highest of toasted foods and steamed foods, respectively. Salads had the highest of muchimryu, cooked potherbs and salads in all regions but kimchi and jangachi had low scores. Sujungkua had the lowest scores of beverages in all regions, but chocolate had the highest scores of cookies. In food intake satisfaction according to the regions, regularity, variety, hygiene, amount, and quantity of meal had the highest in dalseo-ku. Food temperature was highest in susung-ku. There was a direct correlation between type of housing and satisfaction in diversity of foods.

        향신료를 첨가한 육포의 이화학적·관능적 품질 특성

        The purpose of this study was to investigate the characteristics of beef jerky with prepared various spices. The spices added included green tea, rosemary, clove, thyme, and parsley. According to the analysis of general ingredients, the moisture content was higher in the spice-added samples than in the control jerky, and the crude protein content was higher in green tea- and parsley-added samples. According to the mineral analysis, the most prevalent mineral was Na, followed by K, P, Mg, and Ca, with the contents of Mn and Cu being the least prevalent. Ca and Fe contents werehigher in green tea-added jerky than in samples prepared with other spices. High levels of leucine and lysine were seen amongst different essential amino acids. Total amino acids were within the control jerky containing the most abundant essential amino acids, followed by green tea- and parsley-added jerky. Measurements of texture, hardness and springiness in the spice-added samples appeared to be higher than in the control. Bitterness was higher in clove-addedsamples than in samples prepared with other spices. The evaluation of sensory properties showed that color is higher in green tea-, rosemary- and clove-added samples and that taste was best in green tea-added jerky, followed by parsley-added jerky. Overall quality was high in green tea-and parsley-added samples.

      • 성격 5요인에 기초한 잠재적 성격특성 유형과 동물상징 성격유형(ASPT) 간의 관계

        본 연구의 목적은 성격 5요인에 기초한 대학생의 잠재적 성격특성 유형을 확인하고 성격특성에 따라 동물상징 성격유형(ASPT)과 어떠한 차이가 있는지 살펴보는 데 있다. 이를 위해 수도권 대학교에 재학 중인 대학생 360명을 대상으로 연구를 진행하였으며, 수집된 자료는 SPSS 25 프로그램으로 분석을 실시하였다. 잠재프로파일분석 결과 대학생의 성격특성은 신경성, 외향성, 개방성, 우호성, 성실성의 다중 속성에 의해 (1) 낮은 수준의 적응적 성격 집단(신경성 상, 나머지 성격 요인 하) (2) 중간 수준의 적응적 성격 집단(성격 요인 중) (3) 높은 수준의 적응적 성격 집단(신경성 하, 나머지 성격 요인 상) 세 개 유형으로 구분하는 것이 적합한 것으로 나타났다. 이 세 집단은 성격 5요인에 있어 유의한 차이가 나타났는데, 낮은 수준의 적응적 성격 집단에서는 ASPT 성격유형 중 경계/방어가 가장 높게 나타났으며, 수용/화목이 가장 낮게 나타났다. 중간 수준의 적응적 성격 집단에서는 적응/수동이 가장 높았으며, 자유/산만이 가장 낮은 것으로 나타났다. 높은 수준의 적응적 성격 집단에서는 이상/비현실이 가장 높았으며, 목표/성취, 자유/산만, 관찰/분석이 가장 낮게 나타났다. 본 연구 결과는 성격 5요인과 동물상징 성격유형(ASPT) 간의 관계를 통해 대학생의 성격특성을 다각도로 이해하고 상담 및 교육현장에서 효율적으로 사용할 수 있는 기초자료를 제공한다는 점에서 의의가 있다. The purpose of this study was to check the latent personality trait types of college students based on big five personality factors and examine differences according to the personality traits from animal symbol preference indicators (ASPT). For this purpose, this study employed data of 360 students enrolled in universities in the capital area and conducted an analysis of the collected data, using SPSS 25. As a result of the latent profile analysis, it turned out that it would be appropriate to classify the college students’ personality traits into (1) a low-level adaptive personality group (high in neuroticism and low in all the other personality factors); (2) a medium-level adaptive personality group (medium in personality factors); and (3) a high-level adaptive personality group (low in neuroticism and high in all the other personality factors) according to multiple attributes, including neuroticism, extraversion, openness to experience, agreeableness, and conscientiousness. There were significant differences in the big five personality factors among the three groups. In the low-level adaptive personality group, the alert/defense type was the highest while the acceptance/harmony type was the lowest. In the medium-level adaptive personality group, the adaptation/passivity type was the highest while the liberty/excursiveness type was the lowest. In the high-level adaptive personality group, the ideal/unreal type was the highest while goal/achievement, freedom/excursiveness, and observation/analysis types were the lowest. The results of this study have significance in that this study provided the baseline data for understanding college students’ personality traits through the relationship between the big five personality factors and animal symbol preference indicators (ASPT) from multiple angles and using them efficiently in the counseling and education field.

        한국산 재래종 담배잎에서 정제한 Polyphenol Oxidase의 성상에 관한 연구

        Purification of polyphenol oxidase(PPO) from Korean native tobacco variety leaves was carried out through the procedure of acetone preciptation, ammonium sulfate fractionation, and Sephadex G-150 gel filtration, resulting in a 84-fold increase in specific activity. The enzyme was stable in a range of pH 7.5 to 8.0 with an optimum of pH 7.5, The optimum temperature for the enzymic reaction was about 60°. It was thermostable with a half-life equal to 20 min at 70°. Km values for (+)-catechin and pyrogallol were 1.6×10^(-3) and 0.5×10^(-3) M, respectively. It possesses high catecholase activity but little or no cresolase activity. Lineweaver-Burk analysis of inhibition data revealed that the inhibition of (+)-catechin oxidation by potassium cyanide, 4-nitrocatechol, cystein and 2-mercaptoethanol was competitive with Ki values of 1.1×10<sup>-6</sup>, 1.8×10<sup>-6</sup>, 8.9×10<sup>-6</sup> and 1.3×10^(-5) M, respectively.

        In this paper, a real-time monitoring system is developed to monitor trace heavy metals, such as mercury, cadmium, lead, copper, zinc, arsenic, and chromium ions, in the water environment. It is based on Anodic stripping voltammetry (ASV) by using Boron-doped diamond (BDD) electrodes which is developed. The proposed system can measure multiple trace metals using ASV the one of the electrochemical analysis technique. For the exact analysis the system has own pre-tratment system, it works for removing interference of organic compounds and composes UV and electrolysis. This system adopts zone fluidic injection system which can minimize maintenance cost, configure system simply and also extend various system. The multiple trace metals system is remotely monitored and controlled and has self diagnosis function. Finally, the system is using real time monitoring at an work place and when the pollution accident is occurred, it makes possible to take an action quickly.
