본 연구는 쇠고기의 단기 저장 중 이화학 분석을 통하여 가정에서 쇠고기 저장 시 냉동 저장 조건을 탐색해보았다. 쇠고기의 지방 산패 정도를 나타내는 TBA가에서는 −5℃ 저장군이 −20℃ 저장군과 유사한 경향을 보였으며, 쇠고기의 단백질 신선도를 나타내는 VBN 함량과 일반세균수도 −5℃ 저장군과 −20℃ 저장군이 유사한 추세를 보이며 증가하였다. 적색도와 전단력에서는 −5℃ 저장군이 −20℃ 저장군보다 −1℃ 저장군과 흡사한 경향을 보였다. 이에 대해 식품의 유통기한에 대한 식품의약품안전처의 고시(2014)에 따르면 식육의 설정실험 지표는 TBA가, 휘발성염기질소, 세균수, 대장균수이므로 본 실험의 TBA가와 VBN 함량, 일반세균 수 항목에서 −5℃에서의 저장이 −20℃ 저장과 유사한 결과를 나타낸 점에 의의가 있다. 이상의 연구결과를 종합해 볼 때, 쇠고기의 단기 저장 시 −5℃에서의 저장은 −20℃에서의 저장과 유사한 측면을 보이며 약 52일간 저장이 가능할 것으로 예측되어 쇠고기의 단기 저장 시 신선도 유지에 효율적이라고 생각된다. 추후 온도 조절뿐만 아니라 가정용 냉장고의 습도, 쇠고기의 포장 방법, 저장 시 용량 등 여러 인자들의 조절로 가정 내 쇠고기의 냉동 저장에 대한 연구가 필요할 것으로 보인다. This study was conducted to investigate changes in pH, volatile basic nitrogen (VBN), thiobarbituric acid (TBA), a* (redness), shearing force, and microbial content (total plate count; TPC) in beef during freezing storage at −1, −5, and −20℃ for 21 days. TPC as an effective quality indicator was used to identify the decay point by regression analysis. The pH, TBA values, and TPC significantly increased with storage at all tested temperatures (p<0.05). VBN significantly increased and shearing force significantly decreased with storage at −1 and −5℃ (p<0.05). TPC showed significant correlation with temperature at −1℃ (R²=0.891), −5℃ (R2=0.856), and −20℃ (R²=0.444). The decay points at −1, −5, and −20℃, were 27, 52, and 84 days, respectively. The results suggest that a freezing temperature of −5℃ is effective for short-term storage of beef.

<P><B>Abstract</B></P> <P>Bisphenol A [BPA, 2,2-bis-(4-hydroxyphenyl)propane] is one of the most prevalent synthetic environmental estrogens; as an endocrine disruptor, it is associated with endocrine-related cancers including breast, ovarian, and prostate. However, the mechanisms by which BPA contributes to carcinogenesis are unclear. This study aims to clarify its toxic effects on mitotic cells and investigate the molecular mechanism. In vitro effects of BPA on mitotic progression were examined by performing experiments on HeLa cells. Proteins involved in mitotic processes were detected by Western blot, live cell imaging, and immunofluorescence staining. The results showed that BPA increased chromosomal instability by perturbing mitotic processes such as bipolar spindle formation and spindle microtubule attachment to the kinetochore. BPA prolonged mitotic progression by disturbing spindle attachment and concomitant activating spindle assembly checkpoint (SAC). Mechanistically, BPA interfered proper localization of HURP to the proximal ends of spindle microtubules, Kif2a to the minus ends of spindle microtubules, and TPX2 on the mitotic spindle. This mislocalization of microtubule associated proteins (MAPs) is postulated to lead to spindle attachment failure. Furthermore, BPA caused multipolar spindle by inducing centriole overduplication and premature disengagement. Although BPA acts as an estrogen receptor (ER) agonist, mitotic defects caused by BPA occurred in an ER-independent manner. Our findings indicate that BPA may stimulate carcinogenesis not only by acting as an endocrine disruptor but also by increasing chromosomal instability during mitosis.</P> <P><B>Highlights</B></P> <P> <UL> <LI> Bisphenol A interferes attachment of spindle microtubules to kinetochores during mitosis. </LI> <LI> Bisphenol A perturbs localization of MAPs including HURP and TPX2. </LI> <LI> Bisphenol A causes multipolar spindle by inducing centriole overduplication and premature disengagement. </LI> <LI> Bisphenol A promotes tumorigenesis by increasing chromosome instability. </LI> </UL> </P>

<P>A new highly selective colorimetric chemosensor <B>1</B> (<I>E</I>)-9-(((2-hydroxy-5-nitrophenyl)imino)methyl)-2,3,6,7-tetrahydro-1<I>H</I>,5<I>H</I>-pyrido[3,2,1-<I>ij</I>]quinolin-8-ol for CN<SUP>−</SUP> was developed. Receptor <B>1</B> showed exclusive response toward cyanide by a color change in aqueous solution. However, in aprotic solvents and methanol, the unique selectivity of <B>1</B> for CN<SUP>−</SUP> disappeared, and its nonselective color change was observed for other anions. This phenomenon could be possibly explained by the combination of the basicity and the hydrogen bonding ability of the anions. The objective of this study was to draw the evaluation items in which everyone could easily express the aroma and taste of yakju. In the results of applying the 3-step Delphi technique to a total of 20 trained experts in traditional liquors and analyzing the validity and reliability of opinions through Kendall’s W-Test, components were classified into three general areas such as aroma, odor, and palate. Aroma was categorized into ten upper items such as fruit, plant, grain, flower, dairy product, medicinal herbs, nuts, spice, fermentation, and sweetness. Odor was grouped into a single upper item like off-odor, while the palate area was sorted into two upper items such as taste and mouthfeel. A total of 89 kinds of detailed items expressing each upper item were drawn. This study could be a foundation for moving the subject to the world stage by objectively and efficiently expressing the taste and aroma of Korean yakju to the foreigners, consumers, and industry that produces traditional liquors, using the items for evaluating the taste and aroma of traditional liquors drawn in this study.

Objective: Delaying embryo transfer (ET) enables us to select among the embryos available for transfer and is associated with positive effects on implantation and pregnancy outcomes. However, the optimal day for ET of human cleavage-stage embryos remains controversial. Methods: A retrospective study of 3,124 in vitro fertilization/intracytoplasmic sperm injection cycles (2,440 patients) was conducted. We compared the effects of day 2 and 3 ET on rates of implantation and pregnancy outcomes between young maternal age (YMA; < 38 years old, n = 2,295) and old maternal age (OMA; ${\geq}38years\;old$, n = 829) patient groups. Results: The YMA and OMA groups did not differ in terms of patient characteristics except for the proportion of unexplained factor infertility, which was significantly greater in the OMA group, and the proportion of arrested embryos, which was significantly greater in the YMA group. However, the biochemical pregnancy, clinical pregnancy, ongoing pregnancy, abortion, and implantation rates per cycle were not significantly different between day 2 and 3 ET in the YMA group or the OMA group. Conclusion: We suggest that offering patients the opportunity to decide which day would be suitable for ET could be part of a patient-friendly protocol that takes into consideration an infertile woman's circumstances and work schedule by allowing ET to be performed on day 2 instead of the traditional transfer on day 3.
