      • 하루 콩단백질 25g 섭취를 위한 메뉴작성 및 영양성분 분석

        The purpose of this study was to develop menus for daily intake of 25g soybean protein and to analyse nutrients of these foods. Analytical values were compared to the theoretical one using the food composition table and recommended dietary allowances for Koreans (7th revision). The results are as follows. 1. Soybean curd residue stew, Soybean curd, Kimchi saute, and hard boiled soybean and lotus root were selected for the menu for January, of which the content of soy bean protein(SBP) was 33.1g, soybean stew, soybean curd and soybean sprout saute, and Italian deep fried soybean curd were for February, of which the content of SBP was 35.0g. The content of SBP in soybean paste soup with soybean curd, fried soybean curd and fried soybean curd roll, the menu for March, was 24.9g. That of April were soybean curd gratin with soymilk, soybean curd and ham with garlic dressing and the content of SBP was 26.3g. That of May were soybean porridge, soybean flour cake with honey (Dasik), soybean sprout soup and the content of SBP was 26.7g. That of June were soymilk, pan-fried soybean curd, steamed soybean curd with chicken and the content of SBP was 28.4g. That of July were noodle with soymilk, mapatofu, soybean curd salad and the content of SBP was 24.7g. That of August were soybean sprout with mustard dressing, Tossed green pepper with raw soybean flour, Tofu and Kimchi stew, soybean curd steak and the content of SBP was 26.2g. That of September were Chinese cabbage soup with raw soybean flour, sweet and sour tofu and the content of SBP was 23.2g. That of Oct. were Fermented soybean stew, soybean pan cake and the content of SBP was 24.3g. That of November were not-pressed soybean curd casserole, pan-fried mashed soybean curd with egg, stir frying deep-fried soybean curd with vegetables and the content of SBP was 22.4g. That of December were soybean curd and mushroom casserole, fried soybean curd and vegetables, hard boiled soybean curd and the content of SBP was 28.9g. 2. The ratio of the analytical value over theoretical value (A/B%) of one serving in kcal, carbohydrate, protein, fat, ash and dietary fiber were 57.7~107.7%, 42.9~131.9%, 79.2~118.3%, 54.5~100%, 40.7~80.8% and 42.1~113.2%, respectively. 3. The ratio of A/B% of one serving in Ca, K, Na, P and Fe were 44.1~93.6%, 59.0~153.1%, 53.1~117.7% 64.6%~138.8 and 33.8~77.3%, respectively. That in Fe was the lowest among minerals. 4. The ratio of analytical value over Korean R.D.A(A/C%) in Ca was relatively higher (22.0~85.9%) than that in kcal(18~63%). 5. The ratio of A/C% in Fe was 25.1~64.3% and lower than that in Ca and protein in general.

      • 당뇨캠프에 참석한 당뇨병환아의 자기간호수행에 관한 조사연구

        The purpose of this study was to identify the degrees of performing self-care activities, knowledge about juvenile diabetes mellitus and symptom experience, and to investigate the performance of self-care activities by general characteristics, knowledge, symptom experience. The ultimate aim was to provide a basic data in developing nursing intervention for the children with diabetes mellitus. The subjects of this study were 42 juvenile diabetic children aged between 8 and 18 who had participated in a diabetes mellitus camp for diabetic children from July 7 to 10,1990. The subjects filled out questionnaires with knowledge about diabetes mellitus, symptom experience of diabetes mellitus, performance of self-care activities during the last 2 days of the camp. Four nursing students who had experienced with nursing care of diabetic children explained the content of the questionnaires ot the subjects. The results were as follows: 1. Mean score of performing self-care activities was 52.95, that of self-care about diet 15.68, that of self-care about blood glucose control 25.69, and that of self-care about general care 11.59. That is, 75.6% of the subjects performed self-care activities, 62.7% self-care about diet, 85.6% self-care about blood glucose control, and 77.3% self-care about general care. 2. Fifteen subjects (65.7%)scored 12 to 14, 10(23.8%) scored 10 to 11,and 7(16.7%) scored 7 to 9 in the total of 14 questions of the knowledge of diabetes mellitus. Mean score of it was 0.79 on a 0-1 point scale. 3. Of the subjects, 22 (52,4%) experienced 4 to 6 symptoms, 14 subjects 1 to 3 symptoms, and the rest 7 to 9 symptoms. Twenty-five subjects (59.5%) had no complication of diabetes mellitus, while 9(21.4%) experienced 1 complication. 4. Mean score of performing self-care about diet in diabetic children aged between 8 and 12 was significantly higher than that of those aged between 13 and 18 (P=0.0026). 5. Mean score of performing self-care about diet in primary school children was significantly greater than that of high school adolescents(P=0.003). 6. There was no significant difference in performing self-care activities, self-care activities about diet, blood glucose control, and general care by gender, religion, duration of illness, experience of hospitalization, number of participation of diabetes mellitus camp, and family history of diabetes mellitus. 7. No significant difference was observed in performing self-care activities and self-care activities about diet, blood glucose control and general care by the level of knowledge about diabetes mellitus. 8. There was no significant difference in performing self-care activities, self-care activities about diet, blood glucose control, and general care by the degree of symptom experience. These results suggest that the age is an important variable in self-care activities of diabetic children. Nursing intervention might be essential to reinforce the self-care activities for high school adolescents and to maintain the self-care activities for primary school children. And the content of existing diabetes mellitus camp program may be revised or added by the age in order to promote the practice of self-care activities of diabetic children.

        청소년의 라이프스타일과 개인주의 집단주의에 따른 선호감성 분석

        The purpose of the study was to investigate the lifestyle and individualism/collectivism of adolescents nowadays and the relationship to preferred sensation. We collected 1386 middle and high school students' data which have the answers about lifestyle, individualism/collectivism, self-esteem, school location, family members and other socio-statistical variables. The results are followings; The types of adolescents' lifestyle composed of 5 clusters, which are Pursuit of hedonic (18.9%), Adventure materialism (19.9%), Depending and pursuit of entertainment (21.4%), Internet & study (22.5%), and Strong will - economic (17.3%). Distribution of individualism/collectivism is even, and Egoist (29.8%) which belong to vertical individualism is the biggest portion. Adolescent's lifestyle has relationship to the external factors, such as school location and family income, while individualism/collectivism does rather to adolescent's own nature, such as gender and grade. Their lifestyle than their individualism/ collectivism is connected with their preferred sensation more.

      • 大學生의 커뮤니케이션패턴과 政治行爲

        The Purpose of this research is to investigate the role of communication in the political behavior of college students in Korea. The relationships between the communication patterns of college students, and their political knowledge, political orientation and political activities were examined. 700 samples were randomly selected among the students of seven colleges; four universities in Seoul area and three in rural areas. It was found that: 1. All communication media affected the political behavior of college students. 2. The direction of the influence was mostly negative to the orientation toward the subjects. 3. Especially, the irregular communication media(Dae Ja Bo. printed matters, and rumor) strongly affected the political orientation and the political activities of college students. It is suggested that the activation of the existing media with more freedom of press are necessary to minimize the unhealthy impact of the irregular communication media upon the large number of audience.

        인천지역 대학생에 의한 대학급식소의 급식서비스에 대한 품질 평가

        This study was conducted to investigate the quality assessment of performance of the university foodservice. Self administered questionnaires were collected from 305 students living in Incheon. Statistical data analysis was completed using a SPSS v. 10.0 program. The results were summarized as follows: 61.4% of male students and 48.1% of female students responded to have lunch regularly. Only 23.4% of male students and 14.1% of female students used the university foodservice daily. Reasons for the irregularity of lunch were responded as "lecture", "eating when I want" and "appointment with friends", etc. The quantity, temperature, nutritional value, appearance, hygiene, taste and freshness of foods and price of menus were evaluated as appropriate but using seasonal foods, number of side-dishes, etc. as unsatisfactory. Service speed, cloth hygiene, neatness and kindness of employee were evaluated as appropriate. For the facilities of foodservice, counter location, menu board and lighting facilities were evaluated as appropriate but heating facilities, disponsition of tables and chairs of dining hall were as unsatisfactory. Sanitation of floors and walls of dining hall, restroom and utensils, etc. was evaluated as low.

      • 노인의 식습관과 건강상태에 관한 연구 : 부산시 남ㆍ녀 노인을 중심으로 the Elderly Man and Woman in Pusan

        This study was undertaken to investigate the relationship between the food habits and the health status. For this purpose, data were collected from deep interviews with 124 the elderly women and men, age 65 or greater in Pusan, Korea. For the data analysis, percentages, frequencies and means were calculated in order to describe the data. t-test, ANOVA, χ²-test were used. As a result of the data anylsis, the following results were obtained : 1. The age about the object person of research was the most numerous in 79% at 65-74 years old, in 70.9% with any their children, most elderly women and men were without job, regular excercise, regular health check and regular income. 2. The average man's weight was 61.89±6.33kg, woman's weight was 52.75±4.42kg, the average man's height was 166.47±7.92cm, woman's height was 154.96±6.02cm. 3. Both of the elderly men and women had regular meals at breakfast, lunch and supper. The most delicious meal was supper. The style of food intake was vegetables or mixed with vegetables and meats. Eventhough the participating at eating out with family was low, having meals with family at home usually. The problem of food habits was too much salty. 4. Eventhough both of the elderly men and women had eating some snacks between meals, they didn't have any nutritious reasons. Usually their child supplied it and in case of spouse, only the elderly women had the charge. 5. The elderly men were higher than the elderly women in case of smoking and drinking. 6. The elderly men wee better score than the elderly women with food habits. 7. Most of the elderly men and women had any chronic illness. 8. The elderly men were higher score with most areas except respiratory organs, the elderly women were score than the elderly men in the state of health. 9. The relationship between the elderly men and women showed a meaningful difference, fatigue showed a symptom as physical health, and nervousness showed a symptom as mental health with having poor food habits. The chronic illness also connected with poor food habits.

      • 위암환자에서 BrdU에 의하여 유도되는 Fragile sites의 발현

        The expression frequency of BrdU-induced fragile sites was examined in stomach cancer patients to determine whether this parameter could be used as a marker of genetic susceptibility in at-risk individuals. G banding performed to detect fragile sites. No difference was found in expression frequency between the stomach cancer patients and a group of normal individuals(p=0.7). This indicates that the expression frequency of BrdU-induced fragile sites is not a suitable marker for assessing genetic susceptibility in stomach cancer patient.

      • NITROFURYL ACRYL AMIDE의 添加와 保存形態가 豆腐의 汚染度에 미치는 影響

        Bean-curd is usually sold in the state of immersing water and is apt to be spoiled due to the acting fungi. In order to prevent the bean-curd from spoilage, nitrofuryl acryl amide was added to the immersing water, and various types of preserving method was studied. The results acryl amide treated was able to prolong 2 hours from the spoilage as compared with non-treated. 1. Nitrofuryl acryl amide treated was able to prolong 2 hours from the spoilage as compared with non-treated. 2. When immersed in the circulating pure tab water alone, it was able to prolong 2hours rom the spoilage. 3. NaCIO solution did not show any effect on the prolongation form the spoliage.
