        대중음식중 중금속 함량

        대중음식의 오염정도를 알아보기 위해 서울지역이 대중음식점에서 주로 이용되는 11종의 음식을 21개 지역 49개 식당에서 1인분씩 구득하여 7종의 중금속함량을 원자흡광광도계로 측정한 결과는 다음과 같다.<br/> ㆍ 대중음식 한그릇당 중금속 평균함량은 납 131.8㎍, 카드뮴 18.4㎍, 크롬 135.5㎍, 구리 804.9㎍, 철 7430.6㎍, 아연 2807.4㎍, 망간 841.6㎍이었다.<br/> ㆍ 대중음식으로부터 1일 1인 중금속 총섭취량은 FAO/WHO의 허용량보다 모두 낮은 수준이었다. This study was performed to assess the contamination levels of the heavy metals (Pb, Cd, Cr, Cu, Fe, Zn and Mn) for common restaurant meals in Seoul area.<br/> The samples were seolong-tang, galbi-tang, yeukge-jang, kalguksoo, doenjang-chige, bibim-bab, bibim-nangmyon, bulgogi, chazang-myon, yanggobchang and zumuluk, which were sepe-rated draind residues from fluids.<br/> The heavy metal contents were determined by atomic absorption spectrophotometer.<br/> The results obtained were as follows :<br/> ㆍ The total amount of heavy metals per meals were 131.8㎍ lead, 18.4㎍ cadmium, 135.5㎍ chromium, 804.9㎍ copper, 7430.6㎍ iron, 2807.4㎍ zinc, and 841.6㎍ manganese.<br/> ㆍ Intake levels per daily through common restaurant meals were lower than the daily intake limit established by FAO/WHO.

        Acrylamide, difficult to analyze by GC and GC/MS due to the polarity and low volatility, was analyzed by LC/ESI/MS in the study. Acrylamide its (molecular weight 71amu) showed m/z=72 (M+H)+ and high peak intensity at 22V in SIR mode. The mass spectrum ratios of acrylamide for qualitative identification had m/z=72 in precursor ion and m/z=55 in products ion, respectively. Those ratios at 30V in SIR mode ranged from 1: 1.4 to 1:1.17 despite various acrylamide concentrations. The ion intensity ratios of acrylamide (m/z=72, [M+H]+) to acrylamide isotopes (m/z=73, [M+H]+) ranged from 100 : 3.57 to 100 : 3.92. The results verified theoretical mass spectrum ratio that was 100:3.82. The linearity of standard calibration curve was y = 520.584x + 1815.26 with r²=0.99. In quality assurance and quality control, the recovery rate ranged from 81.64 percent to 90.97 percent and relative standard deviation was less than 10% with 5 repeated injections at individual standard calibration solutions. The method was applied to analyze acrylamide in food at grocery stores. Snacks made of potatoes showed the highest acrylamide concentration followed by products made of French fries, wheat, and com.

        시판 생약의 진균 분포에 관한 연구 (2)

        11 Market herbal drugs, registerated to K.P. 111 were studied for classification of fungi and aflatoxin-productivity. Aspergillus spp. were identified by method of Raper and Fennell, Penicillium by method of Raper and Thom, Imperfect fungi by method of Barnett and Hunter. Aflatoxin-productivity was analyzed by method of Shotwell. The results were as follows; (1) Initially contaminated fungi were Aspergillus group(63.52%) and Penicillium (22.55%) and the other fungi were contaminated somewhat. Victics Rotundifoliae Fructus and Schizandrae Fructus were the herbal drugs from which fungi were isolated most frequently. Phelloptori Radix was found to be only slightly isolated and was not isolated with Aspergillus and Penicillium. (2) Among Aspergillus group were isolated from herbal drugs, the most frequent fungi were A. fumigatus and A. flavus, and A. nigar was frequently isolated. (3) In the productivity of aflatoxin from 3 strains of A. parasiticus were isolated from 3 herbal drugs and 20 strains of A. flavus were isolated from g herbal drugs, none was produced aflatoxin.
