신계통 무핵포도의 MA 저장시 포장재가 호흡, 영양성분 및 저장성에 미치는 영향

grapes, `AK8609` and black ones, ‘KB0120’ were as follows. The O2 content within the packaging material was kept at 17.0% in 30㎛LDPE treatment for both ‘AK8609’ and ‘KB0120’. The thicker the MA packaging material, the lower the amount of O2 and CO2 content within the packaging material increased as the LDPE packaging thickness decreased. There were no noticeable difference in soluble solid content, titratable acid, and ascorbic acid content among packaging treatments. However, titratable acid sharply decreased after 30 days of storage. Weight loss appeared differently between species and decreased as the thickness of the packaging material increased. In case of abnormal fruit, the blue grapes, `AK8609` showed striking difference at 30th day of storage, while the black ones at 60th day of storage as a basis of 20%. Sensory evaluation result Additional key word : Respiration, abnormal fruit, weight loss, soluble solid content, titratable acid showed that the blue grapes, ‘AK8609’ kept their quality up to 30 days while black ones, ‘KB0120’ 60 days. There was somewhat different effect in the 70㎛LDPE treatment and more noticeable effect between species.
무핵포도의 장기저장 시 MAP 내 목탄지 병용처리가 신선도 유지에 미치는 영향

수확시기가 상이한 무핵포도의 중생종(``수정``)과 만생종(``어사랑``)을 저장기간 중 목탄지를 병용한 MA 장기저 장했을 때 호흡특성, 품질변화 및 신선도 유지 효과를 연구한 결과는 다음과 같다. 저장기간 중에 무처리 보다는 목탄지 처리구에서 O2함량은 높았고, CO2함량은 높게 유 지된 반면, 목탄지의 백탄의 농도간 차이는 유사하였다. 그러나 에틸렌 함량은 목탄지 처리구에서 흡착효과가 확 실하게 낮게 유지되었고, 에틸렌 발생은 품종간 차이가 심해서 중생종인 ``수정`` 보다 만생종인 ``어사랑``이 현저하 게 낮았다. SSC, 적정산 및 ascorbic acid 함량은 처리간에 차이는 없었다. 중량감소율은 무처리구 보다는 목탄지 처 리구에서 많았지만, 품질변화에는 영향을 미치지 못했다. 비정상과율은 무처리보다는 목탄지 처리구에서 현저하게 낮았고, ``어사랑``보다 ``수정``에서 많이 발생했다. 관능평가 는 ``어사랑``에서는 처리간 차이는 없었지만, ``수정``에서는 무처리구에서 저장 15일부터 현저하게 감소하여 저장 30 일 이후에는 상품성을 상실하였다. 곰팡이발생은 무처리 구 보다는 목탄지 처리구에서 10일 정도 늦었고, 목탄지 처리구에서 매우 적었다. The research has been carried regarding the effect of a combined modified atmosphere packaging with charcoal paper aon the respiration characteristics, the quality change, and the freshness of the treated seedless mid- and late-season cultivar during the storage time. Both O2 and CO2 content in charcoal paper treatments were higher than those of non-treatment. However, there were no noticeable difference in different white coal concentration treatments. Ethylene content of charcoal paper treatment showed certainly low, and mid-season cultivar, ``Soojung`` and late-season cultivar, ``Asarang`` significantly low. There were no noticeable difference in SSC, titratable acidity, and weight loss among various treatments. Weight loss of non-treatment showed more significant than that of charcoal paper treatment, however there were no significant quality change. Sensory evaluation in ``Asarang`` showed no noticeable difference among various treatments, but ``Soojung`` in non-treatment showed a significant low marketability from 15th day of storage and lost its marketability completely after 30th day. The abnormal fruit ratio of charcoal paper treatment were much lower than that of non-treatment. Fungi development of charcoal paper treatment occurred scarcely, if any, usually 10 days later than non-treatment.
