        가을무 품종별 깍두기 무 절임 특성

        가을무 품종별 깍두기 무의 절임 특성을 알아보기 위해, 절임 염수의 소금 농도(10, 15 또는 20%)를 달리하여 절임염수를 제조한 후 2×2×2 cm로 절단한 5품종(‘태백’, ‘백자’, ‘관동’, ‘백광’ 및 ‘백봉’)의 가을무를 2배의 절임 염수에 넣어 15℃에서 절이면서 절임 중 깍두기 무의 염도, 중량, 수분함량, 가용성 고형물 함량, pH 및 조직감 특성(TPA)을 알아보았다. 5품종의 깍두기 무 모두 절임 염수의 염도가 높을수록, 절임 시간이 경과될수록 염도, 가용성 고형물 함량은 증가하였으며, 중량 및 수분함량은 감소하는 경향을 나타내었고, Texture Analyser에 의한 TPA값중 경도 및 파쇄성은 감소하는 경향을 나타내었다. 깍두기 무의 소금 농도가 3%에 달할 때까지의 절임 염수의 소금 농도에 따른 최적 절임 시간은 10% 절임 염수에서는 ‘태백’이 5시간, ‘백자’는 4시간, ‘관동’및 ‘백봉’은 3시간, ‘백광’은 2시간이 적당하였으며, 15% 절임염수에서는 ‘태백’이 2시간, ‘백자’, ‘관동’, ‘백봉’ 및 ‘백광’은 1시간이 적당하였다. 절이는 동안 중량 감소율은 ‘백광’ 및 ‘백봉’이 가장 컸고, ‘태백’이 가장 작았다. 절이는 동안 pH감소 정도가 큰 품종은 ‘백광’이었고, pH 변화가 거의 없는 품종은 ‘백자’이었다. ‘태백’과 ‘백자’는 수분함량이 적고 가용성 고형물 함량이 많았으며 경도가 높았으며 ‘백광’은 수분함량이 많고 가용성 고형물 함량이 적었고 경도가 낮았으며, ‘관동’과 ‘백봉’은 ‘백자’과 ‘백광’의 중간 정도의 특성을 나타내었다. Characteristics (salt concentration, weight loss, soluble solid content, moisture content, pH, textural properties) of kakdugi radish cube (kakdugi radish, 2×2×2 cm) were evaluated during salting. Five different radish cultivars harvested in autumn were immersed into 10, 15 or 20% brine solution (radish : brine soluton=1 : 2) at 15℃ for 5 hrs. The time required to reach the optimum salt concentration (3.0%) was different among cultivars; in the 10% brine solution, 5 hr for ‘Taeback’, 4 hr for ‘Bakja’, 3 hr for ‘Kwandong’ and ‘Bakbong’, 2 hr for ‘Bagkwang’. Generally, it was observed that it took shorter salting time at higher concentration of brine solution. While the highest value of weight loss of kakdugi radish cubes was observed with ‘Bagkwang’, the lowest, ‘Taeback’. There was a decrease of pH of kakdugi radish during salting; while ‘Bakja’ shows little change in pH, ‘Bagkwang’ shows large decrease of pH. Hardness and fracturability decreased during salting; the highest value of hardness was observed with ‘Taeback’, the lowest, ‘Bagkwang’. ‘Taeback’ has the lowest moisture content, the highest soluble solid content and hardness, ‘Bagkwang’ has the highest moisture content, the lowest soluble solid content and hardness. There was a similarity of characteristics of kakdugi radish cube between two cultivars, ‘Taeback’ and ‘Bakja’, as well as ‘Bagkwang’, and those of ‘Kwandong’ and ‘Bakbong’ were between two types of cultivars.

      • 二面交雜에 의한 무(Raphanus sativus l.)의 收量 形質들에 대한 量的遺傳 分析

        Eight parents and a set of 28 diallel crosses were employed to investigate heterosis, combining ability and inheritance of yield characters in radish(Raphanus sativus L.). Using model 1 of Griffing's method 2, heterosis and combining abilities of above characters were estimated. With Jinks and Hayman's method, genetic variance component analysis were performed. The results obtained are summarized as follows. 1.Heterosis was highest for root weight(156.0%). Characters such as leaf weight (55.5%), root length(45.9%), root diameter of middle portion(39.2%), root diameter of lower portion(37.3%) and root diameter of upper portion(32.3%) showed positive heterosis, while T/R ratio(-41.9%) showed negative heterosis. 2.In the analysis of combining ability, mean squares of GCA and SCA were highly significant for the all characters investigated, except leaf length character. 3.The significant positive GCA effects for root length, root weight, number of leaves and root shape index were shown in Tokinashi and Minowase. Yonghyeon and Jungkukcheongpi showed the significant positive GCA effects for root diameter, root weight and leaf length. However, Jinjudaepyeong and Wulsanjaerae showed a negative GCA effect for root length and root weight and, especially Taimayhua showed a negative GCA effect for all characters investigated. 4.The combinations of Tokinashi x Taimayhua, Tokinashi x Wulsanjaerae and Jinjudaepyeong x Minowase indicated the significant positive SCA effects for root length, root diameter and leaf weight. 5.In the degree of dominance, root length, root diameter, T/R ratio, number of leaves and root shape index demonstrated partial dominance, while leaf length showed overdominance. 6.Dominance effects of genes were greater than additive ones for root length, root diameter and leaf weight. Number of leaves, T/R ratio and root shape index expressed larger additive effects. But root weight and leaf length showed overdominance. 7.Heritabilities in broad sense(h2B) were very high for all characters investigated. Heritabilities in narrow sense (h2N) were highs for root length, number of leaves and root shape index, but low for leaf length.

      • Self-incompatibility detetion in Chinese cabbage(Brassica campestris ssp. pekinensis) through in vitro pollination technique

        Experiments were conducted to study the applicability of in vitro pollination technique combined with aniline blue staining and observation under fluorscence microscope in detecting serf-in-compatibility in Chinese cabbage, Brassica campestris ssp. pekinensis. This experiment also aimed to select the stable self-incompatible plants from inbred lines these incompatibility reaction had not been previously studied. A summary of the results are as follows. 1. Self-incompatible lines, E-7 and B-8, showed few or no normally growing pollen tubes in both selfing and sibmatings without exception, while all interline pollinations showed a lot of pollen tubes growing in the style. 2. In a wide range of flower age, most selfings and sibmatings of the self-compatible N-4 revealed a lot of pollen tubes penetrating into the style although about 10% discrepant cases were observed. 3. Eighteen inbred plants could be classified into three groups based on the observed number of pollen tubes; stable self-incompatible, intermediate, and self-compatible ones. A group of 5 plants with stable self-incompatible behavior were selected as the source of self-incompatible lines for use in the hybrid breeding program.

      • Genetics of Resistance to Turnip Mosaic Virus un Chinses Cabbage : Brassica campestris ssp.pekinensis

        Experiments were conducted to study the reations of several tropical inbred lines to all isolated TuMV strains, to evaluate the resistance to the TuMV strain C-5 in resistant and susceptible parental stacks and their Fl's, and to elucidate the mode of inheritance of resistance to the TuMV strain C-5. The progenies of B73O showed different levels of resistance to TuMV strain C-5 ; highly resistant resistant and moderately resistant Resistance to TuMV strain C-5 was partially dominant The results obtained from visual rating and from ELISA test showed same patterns for C-1 and C-2 strains, but in C-3 strain there were differences between visual rating and ELISA test.
