This study was conducted to investigate the effect of cocoon silk fibroin hydrolyzate(CSFH) on shelf-life extension of kimchi. CSFH was added in kimchi in the concentration of 0.3%(w/w), 0.6% and 0.9%. Kimchi with CSFH showed higher pH and lower titratable acidity than control and it was supposed that the growth of lactic acid bacteria was inhibited by CSFH. In model system, for complex lactic acid bacteria, CSFH showes antimicrobial activity.

In order to reduce the obesity incidence, the development of sugarless, low calorie foods and ingredients are required, so normally quality substantially sugarless or fat free food composition comprising a flavoring amount of a low calorie sweeteners such as sugar alcohol, oligosaccharide and natural high sweeteners including stevia, aspartam, sucralose for food processing because of the malady of livelihood habit cause by the obesity. In as much as common sugar is high in calories and its sweetening effect can be obtained with relatively low calorie artificial sweeteners such as stevia, aspartame many products have been offered which are sugar-free, the sweetening effect being obtained with and artificial sweetener.

Foot and mouth disease (FMD) is a highly contagions disease of cloven-hoofed animals and occurs in many non-European countries, in particular in huge parts of Asia including Turkey, in most countries of Africa and in parts of South America. The extreme contagiousness of the disease requires comprehensive to control an outbreak, causing high economic losses. The outbreak of FMD, which affects livestock including cattle, swine,sheep,goats,deer and other animals as a highly communicable disease that affects. The agency issued a statement noting that FMD disease does not spread to humans. The disease and meat from infected animals are news reports that more than 3.400.000 livestock have been ordered slaughtered so far across the country.

Every government rallies with the private sector to support its traditional cuisines. In Korea, the effort to globalize traditional dishes began with the governments official declaration of "Hansik Globalization" in 2008. Now the mission of globalizing hansik has emerged as one of the most valuable propositions in creating a new value-added rural economy, sharing growth with the tourism industry. The global food industry is reported to be bigger that of the information technology industry by 5.6 times and the automobile industry by 2.5 times as of 2008. And considering that hansik is almost unknown outside of Korea, the potential for growth is huge.

Cocoon silk fibroin hydrolyzate(CSFH)를 이용하여 김치의 저장성 연장 시험을 실시하였다. CSFH를 김치 중량에 대하여 0.3%(w/w), 0.6%, 0.9%의 농도로 첨가하여 제조한 김치는 무첨가한 대조구에 비하여 pH가 높게 나타났으며 산도는 낮게 나타나 김치의 숙성 지연 효과가 있음을 알 수 있었다. CSFH를 첨가한 김치의 경우 젖산균의 수가 무첨가 처리구에 비하여 약간 감소된 경향을 나타내어 젖산균의 생육을 억제하는 효과가 있음을 알 수 있었다. 김치를 첨가한 model system 조건에서 CSFH를 첨가하여 젖산균의 성장을 측정하였을 때 CSFH를 첨가한 처리구의 젖산균 성장 억제 효과가 확실히 나타났다. 따라서 CSFH는 김치 숙성에 관여하고 있는 젖산균의 성장을 억제하여 김치 숙성 지연 효과가 있을 것이라고 사료되었다.
