This present study was conducted to determine the effects of smokehouse relative humidity difference on quality characteristics including color, pH, residual nitrite, phenol deposition, TBA value and product yield of hams. The results obtained were summarized as follows: 1. 98 % relative humidity resulted in the highest cured color in outside of ham(pigment conversion). 2. The obejective color showed the significant difference in outside of ham(p$lt;0.05). 3. There were no significant difference among treatments in pH, residual nitrite, and TBA values. 4. 70 % relative humidity resulted in the highest phenol deposition and 50 % relative humidity showed the lowest phenol deposition. 5. High relative humidity in smokehouse tends to have high product yield.

This study carried out to investigated the effects of pH, phosphate and fat level on the theological properties and heat stability of pork muscle homogenate. l. The increase in pH increased the apparent viscosity of the pork muscle homogenates, while hardness and cooking loss decreased. Maximum hardness occurred at approximately pH 5.0 ; hardness declined slightly as the pH increased. 2. Addition of sodium tripolyphosphate to the salted homogenate causes a significant decreases in the apparent viscosity and cooking loss(p $lt;0.05). 3. The apparent viscosity increased when the fat level increased from 20 to 50%, whereas. the hardness decreased with an increasing fat content.

In order to clarify the mechanism of Ca² action on the contracture, which was the contracture induced by 40mM/l K-Tyrode's solution was studied in the rabbit stomach antrum. The experiments were performed in Trisbuffered Tyrode's solution which 100% O₂ and kept at 35℃. The results obtained were as follows: 1) Rabbit antrum developed contracture rapidly, which was composed of an initial rapid phasic component and a tonic component when exposed to 40mM/l K-Tyrode's solution. 2) Verapamil suppressed the tonic component of K-contracture with a dose dependent manner, and blocked maximally at the concentration of 5 of 5×10 M/l, but recovered by addition of extra calcium ion, and the degree of recovery was reached to only 18% at the concentration of 16m/l Ca². 3) The amplitude of tonic component was increased in the parallel with increase in extracellular Ca², whereas the tension of tonic component was maximally accelerated at the concentration of 2mM/l Ca², But above 4mM/l Ca² the developed tension slowly decreased. 4) The tonic component of contracture increased dose-dependently by a stepwise increase of ouabain concentration. 5) The results of this experiment suggest that the tonic component of K-contracture in the rabbit stomach antrum is the direct result of the influx of extra Ca².
