This study was undertaken to explore factors which might influence peelability of hard cooked eggs. Results obtained are as follows : 1. The ease of peelability of hard cooked eggs was increased by length of egg storage. 2. Egg storage temperature also influenced peelability of hard cooke eggs and greaer ease of peelability was most rapidly attained at storage temperatures above room temperature rather at 10∼13℃. 3. Egg storage temperature influenced pH of raw egg white and a pH rise above 8.7 was most rapidly attained at storage temperature above room temperature. 4. The addition of various salte to the cooking water was not effective in producing any change in the peelability of eggs and CaCl_2 addition made the peeling of hard cooked eggs more difficult. 5. The highest salt concentrations resulted in lowest cooked white pH's both storage intervals. 6. Sulfide discoloration of youk appeared most fequently with eggs having good peeling properties.

冷藏 肉鷄의 變敗에 關한 赤外分光 分析的 硏究 : 第一報

冷却 貯藏中 肉鷄의 피부표면으로부터 抽出되는 유기용매 抽出物이 貯藏時間이 경과함에 따라서 어떻게 變化하는가를 赤外分光分析을 통하여 조사하고 이러한 변화가 低溫性 腐敗細菌의 增殖狀態와는 상호 어떤 관계를 가지고 있나를 調査함으로써 冷却 貯藏中의 肉鷄의 變敗에 대한 이해를 넓히고자 실험하였던바 다음과 같은 結果를 얻었다. 1. 冷藏 肉鷄의 피부표면으로부터 抽出된 유기용매 (Ccl_4, Ether) 抽出物에 대한 I.R. Spectrum에 있어 6.1μ에 위치하는 peak의 높이는 貯藏時間이 경과함에 따라서 규칙적인 변화를 보여 주었다. 2. 抽出溶媒로서 Ether을 사용하였을 경우가 4염화탄소를 사용하였을 경우보다도 6.1μ에서 흡사되는 物質이 보다 더 효과적으로 추출되었다. 3. 6.1μ에 위치하는 peak의 貯藏時間에 따른 變化曲線과 冷藏 肉鷄의 피부표면에 生育하는 低溫性 腐敗細菌의 增殖曲線은 서로 잘 一致하였다. 4. 6.1μ에 흡수되는 物質이 어떤 化合物인지는 확인하지 못하였으나 第二報에서 더 硏究할 과제이다. The purpose of this study was to determine, by the use of infrared spectrophotometry, if and to what extent changes in solvent extrac table substa ces on th skin surface were detectable on chicken carcasses, and if these changes could be related to time in refrigerated storage or to facterial numbers as etermined by swab techniques, Results obtained are follows: 1. The 6.1μ peak height (as a percentage of the reference peak) exhibited a regular increase during refrigerated storage. 2. The magnitude of the change is greater in Ether than in carbon-tetra-chloride(ccl4), indicating the absorbing substanes are extracted more completely in Ether. 3. Peak, at 6.1μshows a pattern of change similar to that of counts of total aerobic bacteria on the skin. 4. The adsorbing substances at 6.1μ were not identified.

慢性精神分裂症에 對한 Reserpine과 Marplan의 倂用療法

The treatment of chronic schizophrenic patients is one of the most toilsome tasks in psychiatry. Recently combinations of tranquilizing drugs and antidepressants are being used with increasing frequency. We have studied the combination of reserpine and marplan in 20 male hospitalized chronic schizophrenic patients, age 22 to 60, admitted to our National Mental Hospital. Onset periods were from 2 years to 15 years. Reserpine was given orally 2㎎ daily for the first 5 days and 4.5㎎ daily from the 6th day through 35th day, Marplan was also given orally simultaneously, 30㎎ daily for the first 5 days and 40㎎ for second 30 days. Dosage of reserpine was lowered to 2㎎ when marked hypotension appeared. Marplan was not given after 3 p.m. in order to prevent insomnia. Results. In 9 patients favorable responses occurred and these patients began to participate in group activities for the first time. In 8 patients no any symptom-change found. 2 cases showed some unfavorable symptoms such as excitement or sexual and emotional instability. Side effects were generally mild and controllable. It is our impression that combined treatment is compatible and effective in some type of schizophrenic patients. Of course this kind of therapy, we believe, should be considered as adjuncts to build better interpersonal relationship for further milieu treatment or psychotherapy.
