한국 선불교의 식재료와 선어(禪語)로서의 염장(鹽醬) 이해: 원감국사 충지의 시문을 중심으로

염장(鹽醬)은 고대부터 현재에 이르기까지 한국의 기저 음식으로 밥, 국, 반찬으로 구성된 한국 식사구조에서 빠질 수 없는 음식물이다. 본고는 삼국 시대에서 조선 시대에 이르는 불교사찰과 일반사회의 식재료로서의 염장의 내용을 개괄하고 고려 시대 원감국사 충지(圓鑑國師 冲止)의 시문을 통해 불교 수행자로서 산중 음식 생활에서의 염장의 모습과 선어(禪語)로서 염장이 선불교의 수행과 깨달음에서 어떠한 상징과 의미로 사용되었는지를 고찰하였다. 이 연구에서 통일신라 시대 불교사원의 장독대인 장고(醬庫), 고려 시대 태안 마도선의 동식물, 음식유물은 해당 시기 음식문화를 밝히는 핵심자료로 기능하였으며 각 시기 문헌 자료와 더불어 상호보완적으로 당시의 음식실태에 객관성을 부여하는 기능을 하였다. 산중사찰 수행자의 염장 생활과 선어(禪語)와 선지(禪旨)로서의 염장고찰은 원감국사의 시문을 통해 평상심시도(平常心是道)와 화두로 정착하는 모습을 고찰하였다. This paper aims at investigating the Salt and Jang as foodstuff and Seon Word in Korean Seon Buddhism. Salt and Jang are essential food for Korean food life and the position and function of Salt and Jang in the dynasty era is considered as more significant than modern society. Seon literation mentions the word of Salt and Jang as foodstuff and Seon Word but more significantly as the latter. This paper investigates from the function of Salt and Jang as foodstuff to the symbol word of Seon Buddhism. In the paper, main text is the poem of national Seon master, Wongam and he mention the Salt and Jang as daily foodstuff and Seon Word. He practices Seon and states the highest level of Seon’s enlightenment. This is exposed in his poems stating daily life like dringing tea or sleeping whenever he wishes. Salt and Jang Hwadu(話頭) is finally invented due to the signicance as the function of the Mindfulness Meditation which is originated from Chinese Seon master Mazudaoyi(馬祖道一).
A Reconsideration of Koryŏ Meat-eating Culture

This paper aims to reconsider Koryŏ meat-eating culture. In the field of Korean culinary culture studies, scholars argue that Koryŏ meat-eating culture was underdeveloped or restricted due to Buddhism on three basic grounds: 1) prohibitions of hunting, fishing, butchery, and meat eating; 2) references to the aversion to killing and poor skill at butchery in the Gaoli tujing; and 3) the supposed resurrection of meat-eating culture under Yuan rule. First, Koryŏ records reveal that a minority of Koryŏ prohibitions were rooted in Buddhist thought, while the majority were rooted in rituals and principles of Confucian governance from the Book of Rites and “Monthly Ordinances.” Second, the aversion to killing and poor skill at butchery described in the Gaoli tujing reflect a compromise between the desires for meat and to avoid the responsibility of taking a life. Finally, the Koryŏ ruling class ate both livestock and game and the common people made a living through hunting and fishing and paid taxes through deer and fish prior to Yuan rule. In Koryŏ society, despite Buddhist faiths, hunting, butchery, and meat eating were universally practiced and accepted. It thus appears that Koryŏ society did not internalize and socially stratify the Buddhist prohibition of meat eating to the degree apparent in Indian and Japanese societies.

불교음식이 산문을 넘어 한국 음식문화의 한 축으로 대중성을 획득하게 된 것은 조계종과 개별사찰 그리고 비구니 스님들의 그 동안의 활동에 기인한다고 할 수 있다. 이들의 활동을 통해 불교음식은 일반음식과 더불어 한국 음식문화의 중요한 요소로 자리 잡았다고 할 수 있을 것이다. 그러나 불교음식활동에 있어 중요한 내용적 축으로 결합하여 기능해야 할 음식에 대한 불교문헌적 인식의 구축에는 한계가 있었음도 또한 사실이다. 요리 등 실물음식활동과 더불어 불교음식활동이 포괄해야 할 중요한 문화는 불교 음식명상이다. 그러나 현재까지 음식명상은 뚜렷하게 불교음식활동의 일부로 자리잡지 못하고 있다. 본고에서는 실제 활용 가능한 음식명상수행으로 음식두타행과 음식염처수행을 다루었다. 일년 이상 지속되고 있는 현재의 코로나 상황과 관련하여 음식에 초점을 맞추어 역사 속에서 한국 불교교단은 이러한 재난의 시기에 어떻게 대사회적, 불교적 책임을 다하였는가를 고려시대 자료들을 통해 살펴 보면서 현재 코로나사태에 대한 불교교단의 역할을 살펴보았다. This paper aims at investigating the achievement, limitation and the aim of the Buddhist Monastic Cuisine which has been performed since 1990’s. The culture of the Buddhist Monastic Cuisine has been spreaded by the Jogye Order, especially in the field of dining out sector but it does not embrace the knowledge and value which are based on Buddhist literature. Another task which should be included in the perfomance of Buddhist Monastic Cuisine is to practise the Buddhist Food Meditations such as Buddhist Food Dhuta Practice and Eating Mindfulness Meditation. Lastly, the Covid-19 pandemic demands the practical effort related to food supply by the Jogye Order to help the destitute classes as the Korye Buddhist Orders did when pandemic broke out.
