        부산지역 학령전 아동의 식이섬유섭취 상태평가

        To assess the dietary fiber intake of preschool children in Busan and to evaluate the relationship between of the intake of dietary fiber and nutrient intake. Nutrient intake using 24 hour recall, and total dietary fiber (TDF) intake based on tables of TDF of common Korean floods developed by the modified Prosky Method, were estimated for 176 preschool children. The mean daily intakes of TDF, and TDF after adjusting energy intake, were 10.20 g and 7.69 g/1,000 kcal, respectively. The mean daily intakes of TDF for children aged 1-3 and 4-6 years were 9.20 g and 11.08 g, respectively. The range of TDF intake was 1.86 to 22.16 g. The major sources of TDF were cereals (31.0%), vegetables (18.9%) and fruits (11.9%). The TDF intake showed positive correlations with nutrient adequacy ratios (NAR) of iron and Vitamin $B_1$, (p < 0.05, p < 0.05). The TDF intake per 1,000 kcal showed negative correlations with the NARs of protein, calcium, phosphate, iron, Vitamin A, vitamin $B_1$, Vitamin $B_2$, and niacin (p < 0.001, p < 0.001, p < 0.001, p < 0.05, p < 0.001, p < 0.001, p < 0.001, p < 0.001) and with the mean adequacy ratio (MAR, p < 0.001). When children were stratified into quartiles ($Q_1-Q_4$) on the basis of their fiber intake per 1,000 kcal, their NARs for calcium, phosphate, iron, Vitamin A, Vitamin $B_1, Vitamin $B_2$ and niacin (p < 0.05, p < 0.05, p < 0.001, p < 0.05, p < 0.05, p < 0.001, p < 0.001), and their MAR (p < 0.001) were significantly lower in the children with higher fiber intake per 1,000 kcal (the upper quartile). The NARs fur calcium (0.63), iron (0.60), Vitamin A (0.66), Vitamin $B_2$(0.74), niacin (0.64), Vitamin C (0.65) and the MAR (0.74) were lower than 0.75 in the children with fiber intakes of more than 9.25 g per 1,000 local (0,), the highest fiber intake per 1,000 kcal. Based on these results, the mean TDF intake of children was higher than the age (yr)+5g , the minimum recommended level for American children. Meals with a fiber intake of more than 9.25 g per 1,000 local ($Q_4$) could cause a decreased nutritional status for minerals and vitamins. The result of this study could contribute to the establishment of Recommended Dietary Allowances (RDA) for dietary fiber for Korean Preschool children.

      • Factors Related to Dietary Fiber Intake Among Sixth Grade Elementary School Children in Daejon City

        This study was conducted to investigate variables related to dietary fiber intake among sixth grade children in an elementary school in Daejon city. One hundred and forty-seven children completed a questionnaire for determining their socioeconomic background and their food habits. Anthropometric measurements were taken, and a 24-hour diet recall method was used to collect three-day food intakes. The socioeconomic status of the children's families belonged to the upper middle class; 53.0% of their fathers and 25.8% of their mothers had completed college or higher degrees. 27.9% of the mothers had jobs, including part-time jobs. Approximately 30% of the children skipped breakfast, 66.4% of the children preferred animal foods to plant foods, and 52.4% of the children preferred green vegetables to yellow or pale vegetables. Grilled meat dishes, such as Grilled beef rib with seasoning, Bulgogi, grilled pork belly and beef steaks, were the most popular types of food eaten outside home by the children. Daily dietary fiber intake was 14.5 g in boys and 14.5 g in girls, and these intakes are low compared to the standard guidelines. The average intakes of energy and protein of the children were 84.5% and 114.0% of the Korean Recommended Dietary Allowances (RDAs), respectively. Besides energy, riboflavin, iron and calcium intakes were below the RDAs, and especially calcium intake was only 50% of the RDAs. On the other hand, thiamin, niacin, ascorbic acid, protein and phosphorus intakes exceeded the Korean RDAs. Family income or the children's body mass index (BMI) was not directly related to dietary fiber intakes. However, higher dietary fiber intakes tended to be related to higher intakes of green vegetables and fruits. Children with higher dietary fiber intake tended to prefer plant foods to animal foods. Energy and most nutrients, except heme iron and retinol, showed positive relationships with dietary fiber intake. Especially potassium and plant origin protein and calcium were highly correlated with dietary fiber intakes(r>0.6). From these results, it is concluded that dietary fiber intakes of these sixth grade elementary school children were less than the standard reference and it is anticipated to decrease further in the future with increased incomes. Therefore, increased intakes of dietary fiber by elementary school children should be promoted through nutrition education, together with the development of cooking methods and recipes utilizing green vegetables and fruits.

        일부 농어촌과 도시 청소년들의 영양소와 식이섬유 섭취실태

        Dietary fiber(DF) intake of teenagers was estimated and the major food sources of fiber were analyzed using three-day food records and data from 365 middle school students in urban, rural and fishing areas. Mean dwily DF intake of males was 9.2$\pm$3.9g in urban, 10.4$\pm$5.4g in rural, and 7.9$\pm$4.0g in fishing areas and the intake of female was 10.6$\pm$5.1g in urban, 10.6$\pm$5.2g in rural, and 7.7$\pm$3.3g in fishing areas. When related to energy intake, female consumed more DF(5.7$\pm$2.5g/1000㎉, 7.0$\pm$3.5g/1000㎉, 4.6$\pm$2.2g/1000㎉, in urban, and rural, fishing areas respectively) than males(4.2$\pm$1.3g/1000㎉, 4.6$\pm$1.5g/1000㎉, 4.4$\pm$2.0g/1000㎉ in urban, rural, fishing respectively). Mean crude fiber(CF) intake of males was 4.1$\pm$1.7g, 4.5$\pm$2.4g, 3.7$\pm$2.4g, and female's intake was 4.7$\pm$1.9g, 4.8$\pm$2.2g, 3.7$\pm$1.9g in urban, rural, and fishing areas respectively. The mean DF : CF ratio for the subjects was 2.2-2.6, indicating that the DF intake is 2-3 times that of CF intakes. The intakes of the two measures of fiber were highly correlated(r=0.7781) . The major food sources for DF were cereals, vegetables and fruits and the percentage contributions of the food groups to the DF intake were 27-37$\%$, 22-30$\%$, and 11.5-19.7$\%$ respectively. The present study indicates that the DF intake of teenagers is considerably lower than the recommended level and they need to consume more DF than that indicated by the present levels. The importance of nutrition education on health and dietary pattern should also be emphasized among teenagers.

        충북지역 중학생의 식이섬유 섭취 실태 및 식품섭취빈도조사지 개발

        본 연구는 충북 도내에 거주하는 남녀 중학생 282명을 대상으로 24시간회상법을 이용하여 식이섬유 섭취 수준을 조사하고 식이섬유 주요급원식품을 알아보았다. 또한 식품섭취빈도조사를 이용하여 조사방법 간의 식이섬유 섭취수준을 비교, 분석하고 식이섬유섭취수준의 타당도를 검증하고자 하였다. 본 연구의 결과를 요약하면 다음과 같다. 조사대상자의 성별에 따른 열량 및 영양소 섭취량은 에너지필요추정량과 비교할 때 남학생은 75.4%, 여학생은 93.8%였다. 단백질은 평균필요량의 남녀 각각 85.8% 및 102.6%의 섭취수준을 보이며 남학생의 경우 다소 부족한 결과를 나타내었다. 한국인 영양섭취기준의 평균필요량이 남녀학생 모두 낮은 섭취량을 보인 영양소는 칼슘, 철분 및 엽산 순이다. 전반적으로 남녀학생 모두 영양소의 섭취수준이 낮은 것으로 나타났다. 24시간회상법에 의한 남학생의 1일 평균 식이섬유 섭취량은 17.6±5.3 g(54.8%), 여학생은 16.5±4.8 g(68.8%)으로 나타났으며 남녀학생 모두 충분섭취량에 매우 부족한 상태로 남녀학생의 유의적인 차이는 없었다. 식이섬유의 주요 급원식품 중 두 방법 간의 공통적인 섭취순위를 보인 식품은 1위 백미, 2위 배추김치이며 채소류와 곡류로부터 총 식이섬유의 68.44%의 섭취를 보였고 주요급원식품군별로 분류하면 채소류, 곡류와 그 제품, 과일류, 두류, 해조류 순이었다. 24시간회상법과 식품섭취빈도조사법 간의 Pearson 상관계수는 0.71로 높게 나타났으며, 유의적인 상관성(p<0.05)을 보였다. 백미가 0.82로 가장 높은 상관성을 보였고, 19종의 식품품목이 상관관계에서 유의성을 보였다. 식이섬유 섭취량의 Pearson 상관계수가 낮고 유의성이 없는 식품을 제외한 후 섭취량을 보정한 결과 상관성이 0.78로 높게 나타났고 유의적인 상관성(p<0.01)을 보였다. 두 방법에 의해 산출된 섭취수준에 따라 각각 4등급으로 분류하였을 때 보정 후 낮은 등급이 일치할 확률이 90.2%에서 92.4%로 높아졌고 평균 식이섬유의 Kappa값은 0.54에서 0.59로 높아졌다. 따라서 본 연구에서 개발된 식품섭취빈도 조사지는 비교적 높은 타당성을 보였으므로 조사지의 수정보완을 통해 청소년의 식이섬유섭취상태 파악에 유용하리라 생각된다. 또한 섭취량 보정을 통해 선정된 식품품목 19종을 기초로 하여 학생들의 학교급식메뉴와 기호도를 조사하고 급식과 연계하여 식품 품목을 증가시키기 위한 과정이 선행되어야 할 것이다. 따라서 식품섭취조사지의 개발과 적극적인 활용방안을 위해서는 지속적인 연구가 필요하리라 사료된다. This study aimed to offer groundwork for grasp and evaluation of nutritional status and dietary fiber intake through 24-hr recall method among middle school students in Chungbuk area. In addition, this study attempted to develop food frequency questionnaire (FFQ) for dietary fiber intake. Average calorie intake per person a day was 2035.6 kcal for boys, and 1876.7 kcal for girls which were 75.4% and 93.8% of estimated energy requirement (EER), respectively. Percent estimated average requirements (%EAR) of calcium, iron and folate were the lowest showing 34.3%, 54.2%, 67.5% for boys and 36.6%, 59.2%, 64.4% for girls, respectively. Average dietary fiber intake per day was 17.6±5.3 g for boys and 16.5±4.8 g for girls which indicate 54.8% and 68.8% of adequate intake (AI), respectively. The main food sources of dietary fiber were polished rice and kimchi. The main food source groups were vegetables, cereals and their products were fruits, seaweeds in the order named, indicating 68.44% total dietary fiber intake from vegetables and cereals. From preliminary 39 food items, 19 food items were selected to derive the correlation coefficient of each food item between 24-hr recall and FFQ method. Correlation coefficient was increased from 0.71 to 0.78 with significant level of p<0.01 after adjustment of FFQ from 39 items to 19 items set. Percentage of classifying subjects into the same levels by food frequency questionnaire and 24-hr recall based on joints classification quartile Kappa value was evaluated. Agreement was highest in the second lowest group showing percentage to correspond rose from 90.2% to 92.4% and Kappa value of 0.54 to 0.59. Consequently, FFQ developed in this study would be useful for estimating the groups which show low intake.

        수분 섭취의 증가가 닭의 고온 스트레스 완화에 미치는 효과

        Chickens subjected to heat stress decrease their heat production by consuming less feed. The lowered feed intake naturally brings about decreased production performance of chicken. The only exception to this is the increased survivability. Birds drink less when they eat less. In hot enviror-mental temperature, chicken need more water for increased heat loss through evaporation an increased urine excretion. Thus, the increased water intake may alleviate the heat stress of chicken. Various electrolytes supplementation to feed or drinking water can alleviate the heat stress of chicken by their effect of increasing water intake. Lasalocid, an ionophorous coccidiostat, was found to have the effect of increasing water consumption of chicken, thereby improving the lowered production performance of heat-stressed chicken. Finally, dietary fiber could be another possible element which can exert beneficial effects on heat-stressed chicken.

        식이섬유 D/B 구축과 2001 국민건강 영양조사 식이섬유 섭취량 재평가 : 20세 이상 성인을 대상으로

        본 연구에서는 3,149가지의 식이섬유 DB를 새로이 구축하고, 이 자료와 2001년 국민건강 · 영양조사 자료 중 24시간 회상법에 의한 식품섭취조사 결과를 활용하여 20세 이상 한국인의 식이섬유 섭취량을 성별, 연령별, 지역별로 구분하여 섭취열량 1,000 ㎉당 식이섬유섭취량과 일 일 총 식이섬유 섭취량을 AI와 비교평가 하였다. 또한 새로 구축한 식이섬유 D/B에서 구분한 식품군을 이용하여 식이섬유 섭취 기여식품군을 조사하였으며, 연구결과를 요약 하면 다음과 같다. 1) 전체 대상자의 1,000 ㎉당 평균 식이섬유 섭취량은 12.24 g/1,000 ㎉이고, 남성은 11.47 g/1,000 ㎉, 여성은 12.88 g/1,000 ㎉로, 남성은 AI에 마달되었고, 여성은 AI보다 많았다. 일일 식이섬유 총 섭취량은 전체 23.58g 남성 25.04g 여성 22.36g으로 유의적으로 남성이 여성보다 많았다. 2) 연령별로 영양섭취 기준을 판정한 결과 섭취열량 1,000 ㎉당 식이섬유 섭취량은 남성은 50~64세 (12.45 g/1,000 ㎉), 65~74세 (13.27 g/l,000 ㎉)에서만 AI보다 많이 섭취하고 있었고, 여성은 20~29세 (11.20 g/1,000 ㎉)에서만 AI보다 적게 섭취하였다. 1인 1일 식이섬유 총 섭취량은 여성 30~49세 (23.18 g/day). 50~64세 (24.27 g/day)를 제외하고는 모든 그룹에서 AI보다 적은 양을 섭취하고 있었다. 3) 지역을 대도시, 중소도시, 읍면지역으로 나누어 식이섬유 섭취를 평가한 결과 읍면지역>중소도시>대도시 순으로 섭취하고 있었으며, 1,000 ㎉당 식이섬유 섭취량은 대도시에서 AI보다 적게 섭취하고 있으면서 각 지역 간에 유의적인 차이를 보였으나, 1일 총 식이섬유 섭취량으로 비교 사에는 유의적인 차이를 보이지 않았다. 4) 20세 이상 전체 대상자의 식이섬유 기여식품군은 채 소류 (40.98%)>곡류 (19.86%)>과열류 (14.98%) 순으로 이 세 가지 군이 전체의 75% 이상을 차지하고 있었다. 성별, 연령별, 지역별 평균 섭취량으로 비교 시 50~64세, 65~74세 여성만 채소류>과열류>곡류 순으로 섭취하고 있었으며, 그 외 모든 군에서는 채소류>곡류>과일류 순으로 산출되었다. 식이섬유 섭취에 기여하는 상위 10대 단일 식품은 배추김치, 백미, 단감, 고춧가루, 무청, 귤, 두부, 배, 사과, 대두였으며 계절적 요인을 받는 과일과 무청을 제외한 나머지 식품에서 전체 식이섬유의 30% 이상을 섭취하고 있었다. The present study estimates intake levels of dietary fiber (DF) in Korean adults aged 20 and over, using a newly established dietary fiber database for 3,149 food items, as well as 24-hour recall method data from the 2001 Korean National Health and Nutrition Survey Dietary fiber intake and food group; are analyzed by gender, age, and region. The average dietary fiber intake, per capita of Korea was estimated to be 12.24 g/1,000 ㎉ or 23.58 g/day. Calorie-based dietary fiber intake for 20-49 year-old-Korean males, 20-29 year-old females, and the adults who resided in metropolitan areas was under the Adequate Intake for DF, 12 g/1,000 ㎉ Further, the dietary fiber intake after adjusting energy intake in people over 75 year-old was estimated to be 75% of AI. Vegetables, cereals and fruits were three major sources of DF for Korean, making up approximately 75% of DF. Regarding the subjects of this study, major sources of dietary fiber were Kimchi and well-polished rice, which supplied 13.98% and 9.16% of total dietary fiber intake, respectively. The result of this study could contribute to the establishment of DRIs for dietary fiber, after adjust-ing energy intake for Korean aged 75 years and over. The beneficial health effects of DF and the necessity of nutritional education in this area should be continuously emphasized concerning 20-29 year-old people and metropolitan adults.         김해지역 초등학교 6학년생들의 영양소와 식이섬유 섭취 상태 평가

        The aim of this study was to assess dietary fiber intake and the relationship between dietary fiber intake and nutrient intakes of elementary school students. Food consumption of 200 elementary school students (100 boys, 100 girls) in the 6th grade in Gimhae was assessed by 2-day estimated food records. Nutrient intakes were calculated using CAN-pro and total dietary fiber (TDF) intake using the TDF tables of the common Korean foods. The mean height and weight of the boys were 147.7 cm and 42.1 kg. The mean height and weight of the girls were 149.1 cm and 41.1 kg. The mean body mass index (BMI) of the boys (19.3 kg/m2 ) was significantly higher than that of the girls (18.4 kg/m2 , p < 0.05). Average daily intake of energy of the boys and girls was 1733 and 1778 kcal, respectively. Intakes of protein, P, and niacin of the boys and girls exceeded 110% of current RDA. Intakes of Fe, vitamin B1, and vitamin B2 of the boys were similar to RDA. Intake of vitamin B1 exceeded 110% of current RDA and intakes of Fe and vitamin A were similar to RDA among the girls. Ca intake of the boys and girls was 74.2% and 60.1% of RDA, respectively. Vitamin C intake of the boys and girls were 63.6% and 71.7% of RDA, respectively. Intakes of fat, Ca, P, and vitamin B2 of the boys were significantly higher than the girls. Intakes of Fe and vitamin A of the boys were significantly lower than the girls. Average daily intakes of TDF of the boys and girls were 11.2 g and 11.1 g, respectively. TDF intake of the children at the 6th grade of elementary school was about 70% of “age (yr) + 5 g”, a recommended level for American children. Major food groups to supply dietary fiber were vegetables, grains, and seasonings among the boys and girls. Major sources of dietary fiber were Kimchi, rice, and red pepper powder which supplied 17.85%. 15.71%, and 5.18% of TDF among the boys and 18.02%, 16.22%, and 6.58% among the girls. Daily fiber intake showed significant positive correlations with intakes of grains, vegetables, fruits, legumes, and seasonings among the boys and girls. Daily fiber intake showed significant positive correlations with intakes of energy, carbohydrates, protein, lipids, Ca, P, vitamin A, vitamin B1, vitamin B2, niacin, and vitamin C among both the boys and girls. From the results of this study we could conclude that it is recommended to increase dietary fiber intake in elementary school students at upper level.         20세 이상 한국 성안의 식이섬유 섭취량과 식생활 관련 요인 분석 : 새 식이섬유 D/B를 이용한 2001년도 국민건강영양조사 결과의 재분석

        The present study assessed the relation of dietary fiber to food habits in Korean adults aged 20 and over, using a newly established dietary fiber, as well as the 2001 Korean National Health and Nutrition Survey. The per capita average dietary fiber intake of Koreans was estimated to be 12.25±5.23 g/1,000 ㎉. Calorie-based dietary fiber intakes for females was over the KDRl, but for males it was below the KDRI. The levels of total dietary fiber and energy corresponded with frequent snacking but calorie-based dietary fiber intake did not. The subjects who skipped meals, frequently ate out and consumed fried foods tended to have lower levels of calorie-based dietary fiber although the levels of energy and total dietary fiber corresponded with frequent eating-out and consumption of fried foods. The results of this study suggest that Koreans must make efforts to regularly have three meals a day, reduce the frequency of eating out and consume fewer fried foods in order to maintain the optimum intake levels of dietary fiber that protect against chronic diseases.         식이섬유용 식품섭취빈도조사지 개발 및 이를 이용한 충북지역 중학생의 식이섬유 섭취 실태

        In this study, the FFQ-50 questionnaire which composed of 50 food items frequently eaten as sources of dietary fiber, was developed and used to estimate the dietary fiber intake of middle school students in the Chungbuk province. According to the survey, the average daily intakes of dietary fiber for the boys and girls were $23.3{\pm}12.3$ g (93.2%) and $20.8{\pm}11.5$ g (104.0%), respectively, showing a significant difference between the gender. The proportions of boys and girls who did not reach to the sufficient dietary fiber intake were 66.2% and 53.9% respectively. The major sources of dietary fiber were grain foods and vegetables, which measured at 77.24%, followed by fruits, seaweeds, tofu and tofu products, potato and starch, and mushrooms. The cooked white rice contributed the highest (17.81%), followed by baechu-kimchi, cooked brown rice, ramyeon (instant noodle), tangerine, sesame leaf jangajji (pickled sesame leaf), topokki (spicy rice cake stir-fry), blanched and seasoned bean sprouts, bread, and radish kimchi. The study showed that the cooked white rice was the major source of dietary fiber in the boys' diet followed by baechu-kimchi, ramyeon, cooked brown rice, tangerine, bread, strawberry, blanched and seasoned bean sprouts, sesame leaf jangajji, radish kimchi. Girls were taking in dietary fiber mostly from boiled white rice followed by baechu-kimchi, boiled brown rice, tangerine, ramyeon, sesame leaf jangajji, topokki, blanched and seasoned bean sprouts, radish kimchi, and boiled barley.

      • Estimation of Dietary Fiber Intake in the Korean Population

        The intake levels of dietary fiber and crude fiber in Korea were estimated from the fiber content analyzed by AOAC method and Food factors based on national nutrition survey. Per capita daily intakes of dietary fiber and crude fiber were 25.9g and 5.2g in 1970's and 19.6g and 5.1g in 1980's, respectively, which showed 25% reduction in dietary fiber and no change in crude fiber during last ten years. The major sources of dietary fiber were cereals, vegetables, pulses, fruits, seaweeds, seasonings, and potatoes, in decreasing order. It is the time to present a proper guideline for dietary pattern along with vigetableoriented food habit since the fiber intake tends to decrease recently.
