        카무트 분말을 첨가한 꽈배기의 품질특성 및 항산화활성

        Purpose: This study examined the quality characteristics and antioxidant effects of twisted breadsticks according to their Kamut powder (KP) content. Methods: KP was added in the ratios of 0%, 15%, 30%, 50%, 75%, and 100% to make twisted breadsticks. The pH, chromaticity, water content, ash, crude protein, crude fat, selenium, 2,2-azino-bis-3-ethylbenzothiazoline-6-sulphonic acid (ABTS), 2,2-diphenyl-1-picrylhydrazyl (DPPH) radical scavenging activity and the texture of the breadsticks were investigated, and a sensory evaluation was carried out. Results: As the amount of KP added increased, the pH and moisture content tended to decrease, and the overall color of the twisted breadsticks darkened, and its red and yellow colors increased. The content of ash and crude protein increased as the KP content increased, and that of crude fat decreased. As the KP content increased, selenium, ABTS, and DPPH radical scavenging activity, which are indicators used to measure antioxidant activity, also increased. The textural properties, namely hardness, gumminess, and chewability, increased as the amount of KP added increased, but springiness decreased. The sensory evaluation revealed that in terms of appearance, flavor, taste, texture, and overall acceptability, it would be most appropriate to add 30% or 50% of KP. Conclusion: These results suggest that adding 50% KP while making twisted breadsticks could be optimal for improving the functionality and quality characteristics.

        전처리 방법에 따른 간장절임 더덕(Codonopsis lanceolate)의 품질변화

        Purpose: In this study, sliced deodeok(Codonopsis lanceolate) was pickled in soy sauce seasoning after 72 hours of pretreatment according to the sugar type. This study aimed to improve the sensory characteristics during the storage of the Deodeok. Methods: The hardness, soluble solids content, salinity, viable cell count, coliform bacterial count, color value, and sensory characteristics of Deodeok soy sauce pickles were measured depending on various sugaring methods. Results: In the case of pickling soy sauce, the salinity of all treatments was 1.2∼1.7%, which is expected to be used as a low salt pickled product. Among them, xylitol treated group (1.2%) showed the lowest salinity value. Microorganisms such as viable cell and coliforms did not proliferate for 5 weeks at 37℃, and color maintenance was also better than the other treatments. In the evaluation of the sensory characteristics, the pretreatment with xylitol was higher appearance, color, flavor, taste, and chewiness than the other sugar alcohol- treatment groups. In addition, it could be stored for up to five weeks at 37℃; the expiration date may be up to five months. Conclusion: Pretreatment with xylitol minimized the change in quality compared to other sugar alcohols, and appears to be an effective method for maintaining quality until five weeks of storage.

        Retroperitoneal Bronchogenic Cyst Presenting Paraadrenal Tumor Incidentally Detected by 18F-FDG PET/CT

        A follow-up 18F-fluorodeoxyglucose (18F-FDG)PET/CT scan of a 57-year-old asymptomatic male who hadundergone total thyroidectomy for thyroid cancer revealed a5.0 × 4.0-cm, well-defined, ovoid-shaped mass around the leftadrenal gland without definite FDG uptake. On the adrenal CTscan, the left paraadrenal tumor showed high attenuation onthe precontrast scan without enhancement. The averageHounsfield unit (HU) was 58.1 on the precontrast scan and58.4 on the postcontrast scan. The patient underwent laparoscopicadrenalectomy for resection of the left paraadrenaltumor. The final histopathologic examination revealed a bronchogeniccyst. Although retroperitoneal bronchogenic cystsare rare, they should be considered in the differential diagnosisof retroperitoneal cystic tumors. The preoperative diagnosis isdifficult, but a contrast-enhanced CT scan or 18F-FDG PET/CT scan may be useful for differentiating hyperattenuatedcysts from other soft tissue masses.

      • 모델용액으로서의 대두가공품의 이취성분들과 싸이클로덱스트린간의 결합

        대두제품에서 생성되는 이취원인 휘발성 성분들과 CD로 이루어진 모델 용액을 이용하여 CD와 결합하도록 유도한 후 결합정도를 전자코를 이용하여 분석 비교하였다. 분석한 결과 hexanal이 다른 성분들에 비하여 가장 많이 결합되는 것으로 나타났고 이어서 pentanal, 1-octen-3-ol, vandaldehyde, heptanal, hexanol 순으로 나타났다. 이 중 대표 성분인 hexanal을 대상으로 CD 농도에 따른 결합 정도를 분석한 결과 농도가 높아질수록 CD와의 결합은 증가되는 것으로 나타나 1, 3, 5% β-CD 첨가시 각각 37, 72, 86%의 hexanal과 결합하여 CD를 이용한 이취 감소 효과가 예상되었다. Binding of cyclodextrin(CD) with off-flavor compounds in soy products which associated with beany flavor such as hexanal, vandaldehyde, pentanal, nonanal, hexanol, heptanal and 1-octen-3-ol was investigated in a model solution using electronic nose. The obtained data from electronic nose was used for principal component analysis (PCA). Hexanal is the most effective compound with CD among seven off-flavor compounds. As CD concentration increased, hexanal concentration of headspace in cell was diminished. When hexanal was added to 1% β-CD, 37% of hexanal was decreased due to binding with CD. Also, addition of 5% β-CD yielded 86% reduction in hexanal concentration of headspace.

        Benign Thyroid and Neck Lesions Mimicking Malignancy with False Positive Findings on Positron Emission Tomography-Computed Tomography

        The increasing use of positron emission tomography-computed tomography (PET/CT) has led to the frequent detection of incidental thyroid and neck lesions with increased 18F-deoxyglucose (FDG) uptake. Although lesions with increased FDG uptake are commonly assumed to be malignant, benign lesions may also exhibit increased uptake. The purpose of this pictorial essay is to demonstrate that benign thyroid and neck lesions can produce false-positive findings on PET/CT, and to identify various difficulties in interpretation. It is crucial to be aware that differentiating between benign and malignant lesions is difficult in a considerable proportion of cases, when relying only on PET/CT findings. Correlation of PET/CT findings with additional imaging modalities is essential to avoid misdiagnosis.

      • 전자코를 이용한 대두유의 산패도 판별

        대두유를 160, 190, 220℃에서 가열하면서 3시간 또는 4시간 간격으로 시료를 취하여 6개의 metal oxide sensor로 구성된 전자코와 2세대 전자코인 GC-SAW를 바탕으로 한 전자코를 사용하여 분석하였다. 주성분 분석결과 가열처리시간과 온도가 증가할수록 제1 주성분 값이 감소하는 것을 볼 수 있었다. 즉, 초기의 열처리를 하지 않은 신선한 대두유와 가열처리된 대두유를 구분할 수 있었다. 특히 190℃와 220℃의 높은 온도에서는 3시간 내지 4시간이면 대두유의 산패가 많이 진행됨을 알 수 있었다. 또한 GC-SAW를 바탕으로 한 전자코를 이용한 결과도 가열온도와 시간이 증가할수록 peak의 수와 면적이 증가함으로써 열처리시간에 따른 패턴 변화를 확인할 수 있었다. 이것으로 대두유의 가열처리에 따른 산패취의 변화를 측정하기 위한 간단한 방법으로 사람의 코처럼 미묘하고 복잡한 향기와 냄새성분을 감지할 수 있는 전자코로 평가할 수 있음을 확인하였다. The discrimination of the heated soybean oil was investigated by using electronic nose. Volatile components from these products were discriminated by six metal oxide sensors. Principal component analysis showed the differences between non-heated soybean oil and heated soybean oil. The first principal component score in soybean oil was reduced from +0.369 score to -0.242 score as the heating time increased. As heating temperature increased, the ratio of resistance decreased, indicating that rancidity of soybean oil increased at high heating temperature. As an alternative, electronic nose based on GC with SAW(surface acoustic wave) sensor was used for discrimination of heated soybean oil. High resolution olfactory imaging, called VaporPrint^(TM), was shown to be particularly useful for evaluating oil quality in its entirety. The result of electronic nose showed significant changes in volatile profiles from soybean oil. Also, peak numbers and areas increased as high heating time and temperature. Analysis using electronic nose with pattern recognition was rapid and simple. And this technique could be an efficient method to predict shelf-life and evaluate quality in food.

      • 경정맥공에 발생한 판상 수막종의 증례보고 및 감별진단의 영상소견 비교

        Primary meningioma of jugular foramen is extremely rare, while paraganglioma or nerve sheath tumor are relatively common in jugular foramen. We reported a case of primary meningioma of jugular foramen. A 79-year-old female who had left tinnitus and hearing loss for three month came to the department of otorhinolaryngology. Temporal bone computed tomography scan showed sclerotic change and slightly irregular margins of left jugular foramen with relatively preservation of bony architecture. Temporal bone magnetic resonance image showed well defined homogeneous enhancing mass in left jugular foramen with extension to carotid space on gadolinium enhanced T1 weighted image. Prominent dural tail was also noted. On T2 weighted image, this mass showed intermediated signal intensity with no vascular signal voids. Meningioma was confirmed by pathology. In this article, we describe a case of primary en plaque meningioma of jugular foramen and review image findings of differential diagnosis.
