      다국어 초록 (Multilingual Abstract)

      Perilla leaf (Perilla frutesceus var. japonica HARA) from Chubu region were extracted with water and 70% ethanol and investigated on its GABA(γ-amino butyric acid) and antioxidant activity.
      GABA content of Perilla leaf were 23.37±3.22∼199.39±16.28 mg/100g. Perilla leaf in winter was higher than that of summer. GABA content of Perilla leaf in October and November were the highest 199.39 mg/100g, 130.70 mg/100g.
      Total polyphenol content of Perilla leaf was 23.37 mg/mL∼80.04 mg/mL in water extracts, which were the highest 80.04 mg/mL collected Perilla leaf in August. and was 44.48 mg/mL∼201.15 mg/mL in ethanol extracts, which was the highest collection in July by 201.15 mg/mL. Polyphenol content was higher March, July and August harvested Perilla leaf. Water extract was higher than the ethanol extracts.
      Superoxide dismutase like activity were 0.91∼18.71% for water extracts and were 6.38∼23.17% for ethanol extraction. perilla leaf harvested in August, respectively were as high as 18.71% and 23.78%. Collected in August to 23.78% in 70% ethanol extract was the highest. Superoxide dismutase like activity was higher in 70% ehtanol extract than water extract .
      Electron donating activity of perilla leaf, the water extract was 46.46∼59.63 %, perilla leaf collected in June was the most 59.63%. the 70% ethanol extract was 59.32∼78.78 %, perilla leaf collected in June and August were the most 77.68% and 77.78%. Electron donating activity was higher in 70% ehtanol extract than water extract.
      Flavonoid content in Perilla leaf was 13.04∼73.15 mg/mL in water extracts, which was the highest 73.15 mg/mL collected Perilla leaf in August, and was 22.77∼165.66 mg/mL. the highest 165.66 mg/mL collected Perilla leaf in August. Winter had a higher than Summer collected Perilla leaf.
      Nirite scavenging ability at pH 4.2 were 5.00∼39.80% for water extract, perilla leaf collected in February showed the highest scavenging ability and the were 5.00∼39.80% for water extract, perilla leaf collected in February showed the highest scavenging ability. Nirite scavenging ability was higher in 70% ehtanol extract than water extract, was higher in winter than summer collected Perilla leaf.
