This experiment was performed to certain a standard on quality evaluation from safflower seeds. Length, width, hundred seed weight, germination ratio, antioxidative activity and content of phenolic compounds with varieties of safflower seeds from Eusan and Choungsu were investigated. The length and width of safflower seeds from Eusan and Choungsu were constant, but there were changes in both hundred seed weight and germination ratio during the ripening period. While the germination ratio of variety from Eusan peaked at 20 days after flowering seeds (98%), the germination ratio of variety from Choungsu peaked between 20 days after flowering seeds and 30 days after flowering seeds (79-80%). The antioxidative activity of varieties from Eusan and Choungsu peaked between 20 days after flowering seeds and 30 days after flowering seeds. The polyphenol compounds consisted of N-(p-coumaroyl) serotonin (CS), N-feruloylserotonin (FS), N-(p-coumaroyl) serot-onin-5-O-b-D-glucoside (CSG), N-feruloylserotonin-5-O-b-D-glucoside (FSG) and acacetin-7-O-b-D-glucuronide (AG). The content of CS and FS peaked at 20 days after flowering seeds of variety from Eusan while content of CS and FS of variety from Choungsu continuously increased until 30 days after flowering seeds during the ripening period. The FSG and AG slowly increased in the varieties of safflower seeds. In particular, considering continuously increasing the content of CSG from Eusan and Choungsu until 30 days after flowering seeds, it will be a great standard to compare the content of CSG for the quality evaluation of flowering seeds during the ripening period.
