    Vitamin B functions as a coenzyme, activating multiple enzymes in different metabolic pathways, thereby supporting energy production and efficient metabolism. Since the body cannot synthesize sufficient amounts of vitamin B, it is crucial that it be obtained from the diet. We analyzed the content of vitamin B-complex (thiamine, riboflavin, nicotinamide, pyridoxine, and folic acid) and vitamin C (ascorbic acid) in 34 mungbean genotypes with diverse origins using ultra-high-performance liquid chromatography. We also measured the antioxidant capacity and tyrosinase inhibitory activity of mungbean sprouts. Our research findings indicate that all 34 genotypes of mungbeans contain vitamins. Interestingly, the content and composition of vitamins B (B1, B2, B3, B6, and B9) and C in mungbean sprouts vary significantly across different genotypes. We provide valuable information about the vitamin content and composition in mungbean sprouts. These results can be instrumental in enhancing the nutritional profile of mungbeans through further investigations, including genetic engineering or molecular breeding. Ultimately, these findings suggest that mungbeans can contribute to a well-balanced diet.
