This study have identified anti-oxidant functionality of sesame sprout, and to produce high-quality sesame sprout, anti-oxidant activity was assessed after being cultivated in light condition and dark condition, respectively, three days, six days and nine days.
The activity of DDPH, ABTS radical scavenging activity have increased as concentration-dependent, and in 200㎍/ml concentration, the DDPH light condition was 30.82%, 20.25%, 24.56%, dark condition was 16.67%, 16.67%, 24.56%, and in 50㎍/ml concentration, the ABTS light condition was 27.27%, 23.86%, 22.56%, dark condition was 14.60%, 25.64%, 27.10%, so when cultivated for 3 days under light condition, it was about 2 times higher than that cultivated for 3 days in dark condition.
Total phenol contents were highest at 8355.56mgGAE/100g when grown for 6 days under light conditions, but it did not show difference in contents regardless of light condition and number of days of cultivation.
Total flavonoid content was highest at 7058mgRUE/100g when cultivated for 3 days under light conditions, but when it was cultivated for 9 days, it did not show difference in contents regardless of light condition.
To sum up, the antioxidant activity was the highest when cultivated for 3 days under the light condition, but in order to use it as a sprout, the length of the shoot is inadequate to 1 cm, so after 6 dais of cultivation, when the antioxidant activity was measured after it was greened for 1,2,3 days and grown, the DPPH and ABTS showed higher activity and the phenol content was about 1.4 times higher than 3 days after 6 days of cultivation.
The Flavonoid content was more excellent when cultivated for 3 days in light condition, but it did not show much difference as it was 6562mgRUE/100g, which was cultivated for 6 days and was recorded for 1 day. Therefore, to produce high-quality sesame sprout, it is judged to be better to release after greening process after growing the length in dark condition, and it is considered additional nutritional studies should be done to use sesame seeds as sprouts vegetables.
