      This study is written about an operating scheme to make logistics on the restaurant industry efficient. A past process in Korean restaurant industry was so complex and out of date that it took too much lead-time to deal with order-to-delivery and difficult to keep up freshness of foods because of the frequent exposure to the normal temperature. Moreover it took much cost from complexity total process. To improve those things first of all I searched developed cases of similar companies outside and tried to find the present state of the food service industry including the company "A". Based on the data we drew up 3 plans. Going through the list all we was carrying out Infra modeling, center process modeling, information system modeling. The results of plans are same with next. We can expect the effect making dates of inventory lower throughout expanding Cross-docking system , cutting delivery cost and saving lead time throughout the infra modeling, taking efficiency of operation throughout the process modeling, increasing the customer satisfaction throughout the operation system modeling, enlarging the economy of scale and having the flexibility of stock throughout a way adding the function to C.K.
