The proximate component, lipid and fatty acid composition of spent hen(16 months old), female and male broiler(6 weeks old) were compared.
Moisture content of spent hen and broiler meat did not significantly with the breed and part of the body. No difference were found in the crude protein content between the breed, while breast muscle was much higher than those of thigh muscle. The crude fat content of spent hen muscle was much lower than those of broiler muscle regardless of parts of the body. Total, neutral and phospholipid content of spent hen thign muscle were higher than those of breast meat. The prominent fatty acid in neutral lipid were palmitic, oleic and linoleic acid and run up to 75.50∼86.45%, regardless of breed, sex and part of body. Ratio of arachidic acid, arachidonic acid in neutral, phospho and glycolipid of the spent hen muscle were higher than those of broiler, regardless of sex and part. Saturated fatty acid percentage of neutral lipid in spent he muscle were lower than those of broiler, regardless of sex and part. The percentage of saturated fatty acid in neutral lipid were 34.22%, 41.80% and 41.46% in spent hen, female and male broiler breast muscle, and 21.39%, 22.16% and 23.62% in those thigh muscle, respectively.
