항생물질 Nisin 을 생산하는 Lactococcus lactis 7962 의 특성 = A Study on the Characteristics of Lactococcus lactis 7962 Producing the Antibiotic , Nisin

국문 초록 (Abstract)

이 연구는 nisin을 생성하는 Lactococcus lactis 7962 및 Lac^-, Nis^-變異株의 생화학적인 특성을 연구하기 위하여 수행되었다.
실험균주의 배양액은 8배 희석농도까지는 지표균에 대하여 생장 억제환을 나타내었으나 그 이상의 희석농도에서는 억제환이 관찰되지 않았다.
소화효소인 trypsin은 Lactococcus lactis 7962가 생산하는 생장억제 물질을 불활성화시키지 못하였다.
Lac^-, Nis^- 變異株는 lactose를 발효시키지 못하였고 sucrose를 매우 느리게 발효시키는 특성을 나타내었다.
Lac^-, Nis^- 變異株는 당대사능이 매우 낮은것으로 조사되었다.

다국어 초록 (Multilingual Abstract)

This experiment was carried out to study the biochemical properties of Lactococcus lactis 7962 and its mutant(Lac^-, Nis^-). The medium of test strain was shown the inhibition zone against indicator strain (Lactococcus lactis subsp. cremoris CH-14) up to the diluted concentration of 8 fold, however the inhibition zone was not observed its over diluted concentration.
The antimicrobial agent(Nisin) produced from Lactococcus lactis 7962 was not inactivated by digestion of trypsin. The mutant(Lac^-, Nis^-) did very slowly ferment sucrose and was observed very lower ability of carbohydrate fermentation.
