In the last Chosun Dynasty, all receptions including food for Japanese envoys were provided in the Japanese residence, or Waegwan(Japanese Residence). Among other things, food was composed of ordinary and banquet cuisines, which were massive in size. At every Waegwan, there was a separate group of workforce in charge of food and banquet to prepare the reception for Japanese, which shows that the government made extensive efforts, both personal and material, for the reception of Japanese.
Compared to the early Chosun Dynasty, ordinary cuisine became more diversified in types and volume, which indicates that preferences of Japanese envoys were taken into consideration. Also, a variety of seafood was included in the banquet cuisine, and shark, which was a specialty of Busan, in particular, was used as an ingredient. In addition, Joongbaerae ceremony was added as one of the ceremonies for the banquet, which helped the Japanese lunch box culture practiced even at the royal court of Chosun through the Busan Waegwan. In general, food used in this reception, unlike Japanese cuisine, Chosun's specialty food such as the four-footed animal meat and po, slices of dried meat seasoned with spices were served, together with snacks of Chosun, while in some cases, Japanese tastes were taken into consideration as well. Since the ordinary cuisine was mostly procured via Jo-si(a market in the morning) of Waegwans, they were different from the banquet cuisine to some degree.
