호텔의 조직커뮤니케이션에 관한 연구 -Critical Incident Technique을 중심으로- = The Study On The Food And Beverage Of Organization Communication in the Hotel -Focused on the Critical Incident Technique Dept-

국문 초록 (Abstract)

본 연구의 목적은 호텔의 식음료, 조리 부문 종사원들간 조직계층에서 야기 될 수 있는 커뮤니케이션의 복잡한 관계를 이해하고, 중요사건기법(CIT)연구방법을 적용하여 세부적인 사건을 수집, 분석하여 실질적인 경영방안을 제시하는데 있다. 이러한 연구의 목적을 달성하기 위해 본 연구는 문헌연구방법과 실증적 방법으로 질적, 면접방법을 병행하였다. 즉, 국내·외 관련자료와 문헌의 이론적 고찰에 의한 종합적인 분석과 검토 후 CIT 질적 연구방법을 적용하여 설문지를 구성, 자료를 수집하고 이를 토대로 실증적 연구를 실시하였다. 인간위주의 경영을 하는 호텔기업에서 식음료·조리조직내의 원활한 의사소통은 영업의 흐름과 이익창출이라는 목표에 지대한 영향을 끼치고 있으며, 본 연구에서 시도된 호텔기업의 조직내 커뮤니케이션에 질적연구인 중요사건기법(CIT)를 적용하여 얻어진 세부적인 이론을 체계적으로 시스템화하여 실질적으로 활용할 수 있을 것이라 기대된다.

The purpose of this research is to understand the complicated corelation between the communication which can be found in departments such as food and beverages. In addition, this research is to implicate Critical Incident Technique, so that we can collect data from specific cases, the well done communication between the departments influences the goal with high income. The CIT which is used in this research for studying the communication withing the departments of hotels. With the result from implication of CIT the specific case studies can be categorized systematically and can be applied for the actual uses. This research was designed to be done quantity based work as well as in CIT, the quality based work, and in ordered procedures. analyze them, and find the best possible solutions.
