Ginseng (Panax ginseng C.A. Meyar) has been traditionally used as an expensive medicine in oriental countries. Ginseng saponin isolated from the root of Panax ginseng have been regarded as the main effective components responsible for the various biological activities including anti-inflammatory activity, anti-oxidant activities and anti-tumor effects. These pharmacological actions, it is thought that ginsenoside should be metabolized by human intestinal bacteria after they are swallowed. But absorption ability is different in an person because human intestinal bacteria is different in a person. The purpose of this study was to develop a new preparation process of ginseng using easily absorbable and high concentration of ginsenoside Rg3, Rh1, Rh2, a special component in red ginseng. The ginseng treated with several treatment conditions of various microorganism and acids.
In the result of microorganism, the conversion rate of ginsenoside Rg3 was the highest when ginseng powder treated with Aspergillus niger HLP5.
In the result of acid treatment, the conversion rate of ginsenoside Rg3 was the highest when ginseng powder treated with 1% acetic acid boiled for 2hr.
