The composition of water and saccharides of Acacia honey, Bush honey, Chestnut honey which were collected in Goesangun, Chungbuk were estimated.
Water contents of the above sample honeys which were determined by using the wedmore method were found to be 26.5% in Acacia honey, 23.8% in Chestnut honey and 22.8% Bush honey respectively.
The amounts of glucose and Fructose in the same samples which were determined by using the combination of Allihn method and polarimetry method were found to be 34.8%, 37% and 39.4% in glucose, 38.2%, 37% and 31.6% in Fructose in order of Acacia, Bush and Chestnut honeys.
It showed that Acacia honey had the value of 1.1(>1.0) in the ration of fructose to glucose. Therefore Acacra honey seems to be very much favorable taste in the three honeys.
