    As the national economy grows and national income increases, the consumption of livestock products, the cost of meat consumption, and the size of the livestock market are increasing, but they are facing a crisis of increasing self-sufficiency and competition with imported products. In order to respond to this situation, there is an urgent need to study the livestock product supply and demand system and the estimation of consumption by country of origin. Existing studies on the livestock market have been focused on the production area and wholesale price, the number of slaughtered heads, carcass weight, and meat production rate. This may reduce the accuracy of the analysis due to price asymmetry and inaccurate consumption. Therefore, the supply and demand system was analyzed by fat content (high fat, low fat) by improving the accuracy of analysis and reflecting consumption trends using retail price and consumer purchase weight. As a result of analyzing the average annual growth rate by country of origin and fat content using the agricultural food consumer panel survey data of the Rural Development Administration, the purchase price and purchase weight of imported and other beef were high. And it was found that the purchase price in the low-fat area and the purchase weight in the high-fat area increased the most. In the case of pork, the purchase price and purchase weight of domestic low-fat and high-fat parts showed a high increase, indicating that preference for domestic pork continues to appear. In particular, the purchase price and purchase weight of the low-fat portion were the highest, indicating that the consumption market for the low-fat portion is gradually expanding. In the midst of changing market demand, as a result of analyzing the demand system for beef and pork by country of origin through LA/AIDS analysis, it was found that there is a substitution relationship between domestic production and imports and others, while there is a complementary relationship in pork. In detail through analysis by country of origin and fat content, it was analyzed that the low-fat portion of domestic beef showed a substitution relationship with high-fat domestic beef, imported and other low-fat beef. In addition, it was analyzed that domestic beef high-fat had a substitution relationship with imported and other low-fat beef, imported and other high-fat pork, and imported and other low-fat beef had a substitution relationship with imports and other high-fat pork. Through this study by country of origin and fat content, it was possible to confirm the substitution relationship by fat content of beef and pork, which could not be confirmed in previous studies. Looking at the results of the LA/AIDS analysis in terms of demand change, it was found that the low-fat parts of beef and pork are relatively affected by the price increase. In addition, price elasticity was found to be higher than that of previous studies using production regions and wholesale prices, suggesting that consumers respond more sensitively to price changes. In order to investigate future changes in consumer demand, the estimated consumption of beef and pork using the seasonal ARIMA model was compared with the 2020 per capita consumption of beef and pork of the Korea Rural Economic Institute. As a result, it was analyzed that the estimated consumption of beef and pork accounted for about 91% and about 89% of the available consumption of the Korea Rural Economic Research Institute. It is judged that consumption has increased due to an increase in quality-oriented consumers, an increase in the culinary population, and an increase in products related to instant cooking. In addition, future consumption of beef and pork is analyzed to increase or decrease differently according to fat content, indicating the need for research by country of origin and fat content. It is judged that the accuracy of the analysis can be improved if the consumption amount due to lunch and eating out is taken into consideration.
