In order to establish suitable drying and storage condition, two step hot air drying, microwave oven drying, freeze drying and microwave drying after hot air drying were carried out and the shelf-life, browning rate and pyruvate content changes of dried onion flake packaged with LDPE, OPP/PE, PET/Al/PE packaging meterials were investigated during storage:
The results were as follows:
1. The freeze drying method showed excellent effect in the pyruvate contents, rehydration rate and browning color formation of the dried onion flake during drying process.
2. For the packaging materials of the dried onion flake PET/Al/PE was superior, OPP/PE was considerably good but LDPE was not suitable in consideration of pyruvate contents and browning color development.
3. The shelf-life of LDPE, OPP/PE and PET/Al/PE packaging were 30 days, 89days and 416days respectively.
Therefore, PET/Al/PE was considered the most suitable packaging materials for dried onion flake.
