시판 음료, 유제품, 당류 및 조미료의 타우린 함량

국문 초록 (Abstract)

한국인 상용식품의 타우린 함량에 대한 데이타베이스를 구축하기 위하여 시판 음료, 주류, 우유 및 유제품, 당류와 조미료 제품 총 83종에 대하여 ion-exchange chromatography에 입각한 아미노산 전용 분석기를 사 용하여 타우린 함량을 분석하였다. 시판되는 과일 및 야채 함유 음료, 탄산음료, 커피 및 홍차 캔음료 또는 전통 캔음료에는 타우린이 함유되어 있지 않거나, 종류에 따라 0.10~1.43㎎/100g wt의 타우린이 발견되었고 커피 및 각종 차 분말에는 0.50~4.02㎎/100g wt의 타우린이 검출되었다. 대부분의 증류주에서는 타우린이 발견되지 않았으나, 맥주, 포도주 및 막걸리 등과 같은 발효주의 경우 0.53~2.29㎎/100g wt의 타우린이 함유되어 있었다. 일반우유에는 1.05~1.40㎎/100g wt의 타우린이, 그리고 타우린이 첨가된 신생아용 조제분유에는 17.3~25.4㎎/100g wt의 타우린이 함유되어 있었다. 캔디와 설탕을 포함한 대부분의 당류제품에는 타우린이 발견되지 않았으나 초콜렛제품에는 2.13~2.18㎎/100g wt의 타우린이 검출되었다. 한국 전통장류에는 타우린이 함유되어 있지 않은 반면, 카레 분말에서 조미료 중에서 가장 높은 함량의 타우린(16.9㎎/100g wt)이 발견되었다.

다국어 초록 (Multilingual Abstract)

Taurine contents in alcoholic and non-alcoholic beverages, milk and milk products, sugars and condiments were determined for 83 food items commonly used by Koreans. Taurine concentrations of food samples were analyzed by using an automated amino acid analyzer(Biochrom 20, Pharmacia LKB) based on ion-exchange chromatography. Taurine was not detected in most carbonated beverages, but found in a variety of fruit and vegetable beverages(canned) in the range of 0.13~1.43mg taurine/100g wt, and in instant coffee or tea beverages(canned) in the range of 0.10~0.41mg taurine/100g wt. The traditional Korean turbid rice wine(takju) sample contained the highest level of taurine (2.29㎎/100g wt) among alcoholic beverages tested, which was followed by wine(0.59~0.88㎎ taurine/100g wt) and beer(0.53~0.73㎎ taurine/100g wt). Ordinary milk samples contained 1.05~1.40 ㎎ taurine/100g wt, and a variety of taurine-supplemented infant formulas manufactured by Korean companies included 17.3~25.4㎎ taurine/100g wt. Taurine was not detected in most sugars and sweetners except a couple of chocolate samples(2.13~2.18㎎ taurine/100g wt). Exceptionally high level of taurine was found in a curry powder sample(16.9㎎ taurine/100g wt), while the rest of commonly used condiments contained less than 2.90㎎ taurine/100g wt.
