황태덕장 고찰 = A Study of Hwangtae Deokjang

국문 초록 (Abstract)

전통적으로 한국인의 식생활에 지대한 영향을 미치고 있는 어류는 명태와 조기이다. 이 두 바닷물고기는 제사상에 자주 오르는 어종(魚種)인데, 조기는 서해안에서 나고 명태는 한류가 흐르는 겨울철에 동해안의 북쪽에서 주로 난다.
명태는 명칭이 50여 가지가 될 정도로 우리의 전통적 식문화에 끼친 영향이 지대하다. 다양하게 메뉴화하여 음식상에 오르고, 김장에도 신선하라고 넣고, 약용으로도 쓴다. 또 비늘이 없으나 비린내가 적다고 해서 제사용, 또는 늘 눈을 뜨고 살기에 지킴이로서의 수호용 등으로 널리 이용된다.
명태를 오래 보관하려면 동태, 북어, 황태로 만든다. 얼음에 얼리는 동태, 어촌에서 햇볕에 말리는 북어, 그리고 눈보라가 거세고 영하 15를 오르내리는 태백산맥의 덕장에서 4~5개월 간 얼었다 녹았다를 반복하면서 노란색을 띠며 몸집이 부풀어 오르는 황태로 변신시킨다.
동해안 어촌에서 내장이 제거된 명태가 춥고 눈보라치는 인제군 북면 용대리, 평창군 대관령면 횡계리 등에 위치한 황태덕장으로 옮겨져 덕대에서 얼었다 녹았다를 반복하면서 변신한 황태는 몸집이 검게 쪼그라든 북어와는 달리 몸집이 커지고 노란색을 띠기에 고급화된 브랜드로 인기가 높다. 따라서 관련지역의 이미지를 높이고 나아가 주민들의 소득증대에도 큰 몫을 한다.
이러한 황태와 명태를 홍보하기 위해 매년마다 고성에서는 〈명태축제〉를 열고, 인제의 용대리에서는 〈황태축제〉를 개최한다. 또 고성에서는 어촌민요인 〈명태잡이소리〉를 드라마하여 축제에 올림으로써 지역문화의 폭을 넓히고 있다.

다국어 초록 (Multilingual Abstract)

Traditionally, fish that have a great effect on Korean food life are Myungtae(Pollack) and Jogi(Yellow Corvina). These two oceanic fish are the species prepared frequently for Korean ancestral rites table. Jogi are obtained from the West Sea, and Myungtae are obtained from the East Sea where the cold current flows in winter.
Myungtae have about 50 different kinds of Korean names which shows that they truly have affected traditional Korean food life. They are cooked in various recipes for dining tables, used in Gimjang(Kimchi-making for the winter) for freshness, and used for medicinal purposes as well. Because of their weak fishy smell, they are also prepared for ancestral rites, or used for protection as a role of guard animals since they always stay with their eyes open.
For a long period storage of Myungtae, they are changed into Dongtae, Bugeo, and Hwangtae. Dongtae are frozen in ice, and Bugeo are dried in the sun in fishing villages. However Myungtae freeze and melt repeatedly for four to five months on Deokdae at Deokjang in the Taebaek Mountains where the snowstorm is fierce and the temperature rises and falls to 15 degrees below zero and eventually turns Myungtae into Hwangtae which are yellow and well risen. Eviscerated Myungtae are moved from fishing villages in East Coast to Hwangtae Deokjang which are located at Yongdae-ri in Inje and Hoenggye-ri in Pyeongchang that are cold. Unlike black shrunken Bugeo, big yellow high-quality Hwangtae are more popular. Therefore, Hwangtae raise the image of the related areas and increase the income of the local people.
To promote these Hwangtae and Myungtae, Myungtae Festival is held in Gosung, and Hwangtae Festvival is held in Yongdae-ri in Inge annually. Also, local people in Gosung, make Myungtae Jabi Sori into a performance and perform it in the festival every year.
