The effects of tannin-contained food on lipid components in serum and liver tissue of rats was stuided. Six groups of experimental diet : such as basal diet, peroxidized oil diet, control diet(corn oils heated for 18hour at 180℃), tannic acid added peroxidized oil diet, persimmon leaf added peroxidized diet, chestnut endoderm added peroxidized oil diet, and green tea added peroxidized oil diet were fed ad libitum to the 4 weeks white male rats of sprague-dawley strain. The results obtained were summerized as follos.
1. HDL-cholesterol levels of all experimental diet groups was higher than that of the control group and especially chestnut endoderm added diet group was significantly higher than that of control group, and DL,LDL-cholesterol/HDL-cholesterol ra-tio was all experimental diet groups were significantly lower(p<0.01) than that of the control group.
2. The activities of glutamic oxaloacetic transaminase(GOT) and glutamic pyruvic
transaminase(GPT) in serum of all experimental diet groups except basal diet group were lower than that of control group.
3. Triglyceride level in serum of green tea added ddiet group was significantly(p<0.05) lower than that of control group.
4. Lipid peroxide in serum of all experimental diet group was significantly(p<0.01, p<0.05) lower than that of control group.
5. As for the histopathological change, change of liver tissue in persimmon leaf added diet group. chestnut endoderm added diet group, green tea added diet group, and tannic acid added diet group were significantly necrotic hepatic cells appearance de-crease as comparing with control group.
