Among the food service industries, the bakery industry has become one of the most promising industries by constantly changing and developing along with social changes such as women's entry into society, improvement in income level, changes in lifestyle, and increase in nuclear families. The bakery industry started as a part of human's most basic dietary life, and has become a familiar culture that serves breakfast for many people who seek convenience with today's economic growth. It can be seen that such changes in life enable the bakery industry to become a promising industry leading the 21st century food culture.
Customers' desire for bakery specialty stores is gradually increasing, and customers have concerns when purchasing without brand awareness, and the awareness and preference felt within the brand has a positive influence on customers' purchases. In the case of a store specializing in bakery, the interior, product, product price, service, etc. will have a great influence on satisfying consumers' needs, and much effort is required to captivate consumers' psychology.
This study aims to empirically study the components of the physical environment of the Windows Bakery Cafe, which is growing as a popular industry in the food service industry, and then use the questionnaire method to determine the factors that affect customer satisfaction and revisit intention.
In this study, we look at previous studies related to Windows Bakery Cafe, study the relationship between customer satisfaction and revisit intention according to physical environmental factors of Windows Bakery Cafe, and present basic data of Windows Bakery Cafe.
For this study, consumers using window bakery cafes in Seoul and Gyeonggi were limited and studied. It was conducted for a total of 30 days from July 1 to July 30, 2023.
The results of this study are summarized as follows.
First, among the sub-factors that make up the physical environment of the Windows Bakery Cafe, it was confirmed that aesthetics, staff service, convenience, and cleanliness had a significant positive impact on customer satisfaction in the order. On the other hand, comfort was found to have no effect on customer satisfaction.
Second, among the sub-factors that make up the physical environment of Windows Bakery Cafe, it was confirmed that aesthetics, cleanliness, and staff service had a significant positive effect on revisit intentions in the order. On the other hand, it was found that convenience and pleasantness had no effect on revisit intention.
Third, it was confirmed that customer satisfaction factors had a significant positive effect on revisit intention.
The implications of the results of this study are as follows.
First, although there are previous studies related to the physical environment of the bakery cafe, there are few studies dealing with the characteristics of the physical environment of the window bakery cafe, so it is considered to have academic implications.
Second, as a result of measuring the physical environment, customer satisfaction, and revisit intention corresponding to the independent and dependent variables of this study, it is meaningful in that the validity and reliability of each questionnaire was secured. It suggests that it can be used as a measurement tool for each concept in the follow-up study of Windows Bakery Cafe.
Third, through the empirical analysis, the characteristics of the physical environment of the Windows Bakery Cafe and each factor were identified, and through the results of the empirical analysis, each factor that had a significant effect on customer satisfaction and revisit intention was found. As we know what factors satisfy consumers, we will need more attention and attention to the physical environment of the bakery cafe.
Fourth, consumers of Windows Bakery Cafe were found to have an effect on customer satisfaction in the order of aesthetics, staff service, convenience, and cleanliness. Therefore, window bakery managers and founders harmonize the exterior of the building, the interior decoration (walls, floors, colors), and overall fashionable facilities in consideration of aesthetics, that is, aesthetic factors, so that customers feel comfortable and create a unique impression. If planted, it is believed that customers will be satisfied and the intention to revisit will also increase.
Finally, the limitations of this study and future tasks are as follows.
First, in this study, it is difficult to generalize due to regional limitations by conducting a survey targeting visitors to Windows Bakery Cafe in Seoul and Gyeonggi, and it is judged that it cannot be an absolute figure because it is biased towards people in their 20s and 30s. Therefore, in future studies, it is necessary to select and investigate a wide sample group.
Second, in this study, the survey was conducted without dividing the survey period into weekdays and weekends. Due to the nature of bakery cafes, there is a difference in the number of customers visiting the cafe on weekdays and weekends, so it is highly likely that each factor of the physical environment, such as comfort, convenience, and cleanliness, will have a different effect on customer satisfaction. Therefore, in future research, it is necessary to conduct a survey by classifying specific days of the week, such as weekdays, weekends, and public holidays, where there are many customers' visits.
Third, in future studies, in addition to the physical environmental variables derived from this study, it is considered that more in-depth studies should be conducted by setting differentiated component items suitable for Windows Bakery Cafe.
