Free amino acids and mineral contents anayses of roasted Maegmundong (Liriope platyphylla)
extracts were evaluated with the anti-oxidative and anti-diabetes activities. Major free amino acids
of the extracts were proline, asparagine, alanine and methionine. The most abundant mineral of the
extracts was potassium. There was no significant difference between 50% and 100% ethanol extract
within DPPH radical scavenging activity, although the flavonoids were found more in the 100%
ethanol extract than in the 50% ethanol extract. The higher anti-α-glucosidase activity was
observed in ethanol extract below 1 mg/mL when compared with the acabose control, inhibitor of α
-glucosidase.
