국문 초록 (Abstract)

당류를 친수기로 한 슈크로오스 라우레이트에 대한 수용액계에서의 유동성을 농도에 따라 조사하였다. 미셀 영역에서 액정영역에 이르기까지 계면활성제의 농도를 변화시키면서 온도 55℃에서 측정하였다. 1∼3wt%농도까지는 전단속도에 따라 정상상태에서의 겉보기 점도는 멱급수적으로 감소하였다. 5wt% 이상의 농도에서 유동곡선은 50∼100s^(－1)의 전단속도 전후에서 겉보기 점도의 변곡점이 나타났고 겉보기 점도를 캐로우 모델(Carreau model)에 적용하였다. 편광학적 방법에 의해 미셀영역, 미셀영역 내 액정상의 분산, 그리고 액정영역을 확인하였다. 미셀 영역은 약 20wt% 농도 범위였다. 또한 20∼50wt% 농도에서는 등방성 미셀에서 헥사고날형 액정영역까지의 혼합 분산영역임을 알았고, 약 55∼65wt% 농도에서는 라멜라 액정상이 형성되어 있음을 확인하였다. 변형스위프 실험에 의해 20wt% 농도까지 선형점탄성을 나타내었으며 그 이상의 농도에서는 비선형적 점탄성을 나타내었다.

Flow behavior for aqueous solution of sucrose laurate was investigated at given concentrations. Ranging from micellar region up to the occurrence of liquid crystal phase with the variation of concentration were measured at given 55℃. As a result, systems from 1wt% up to 3wt% sucrose laurate exhibited a power law decrease in the steady-state apparent viscosity with shear rate. Flow curves also showed bent at about 50∼100s^(－1) shear rate above 5wt% concentration, so that the apparent viscosity fitted the Carreau model. Existence of three composition ranges is confirmed by polarized microscopy. As surfactant concentration rises, an increasingly hard micellar structure extended up to 20wt% concentration, and there showed some hexagonal liquid crystal dispersion in an isotropic micellar solution between about 20wt% and 50wt% system Oily-streaks structure in liquid crystal was formed at 55∼65wt% sucrose laurate. From the sweep measurement, linear viscoelastic properties were exhibited up to 20wt% concentration, and there showed nonlinear viscoelastic curves above 20wt%.
