      Improved conditions for the growth of the fungus Gongronella butleri in solid substrate fermentation resulted in a higher yield of extractable chitosan. Fermentation on sweet potato pieces with variable moisture content appeared to be optimal at 80% moisture, within the ranges tested. The yield was independent of the inoculum size, inlet airflow rate and inlet air humidity. Fermentation on 80% moisture solid state and at optimal temperature of 29 oC resulted in 70 percent more mycelium per kg of solid substrate as well as 40 percent more chitosan per g mycelium, as compared with fermentation under conditions of 53% moisture content and 26 oC. The chitosan yield of 4.6 g per kg solid substrate is a promising basis for economic production.
